Overall 7 (out of 10) I bought it at Watanabe Sake Brewery on June 1! I was weak against words like "limited edition ❗️" and "yeah, it's not bad 👍" from Pekho's tasting, so I bought it 😅. It is a dry sake 🍶. It is dry, but light, smooth and easy to drink! I got the feeling that the spiciness and the astringency behind it are well combined. I served it chilled. I felt the aroma of the sake.  -Aroma: Not much, but a slight ginjo aroma.  -Hinted aroma: Not much. I found some morning corn🌽 and matched it with the rest of last night's Kuroemon summer sake (it goes so well!). Today's main dish was sukiyaki. The Hourai, which is drier and crispier than when we tasted it due to the temperature, went well with the sweet and spicy sukiyaki, making for a delicious dinner 😍.

Overall 9 (out of 10) Purchased at Nakameguro Isego Honten This has nothing to do with sake, but it is located near our favorite ramen shop, Hyakumen Nakameguro 🍜. According to the website, "It has a refreshing taste with a crisp, clean acidity and a citrusy, fruity flavor. It's a nice blend of crisp, refreshing spiciness and the tangy taste of rice. It is not the sweet and tasty type that I like, but it strongly appeals to the clear dry taste. I got the impression that it is a clear and refreshing blend of spiciness and rice flavor alone. I think I'm going to like dry sake as well. ❤️ I had it chilled. The aroma I felt was  -Aroma: Cemedine type  -Aroma: Cemedine type aroma that goes into the nose. The party never stops and the bottle of Kusama was opened with a little leftover Tenryo from the day before yesterday and the leftover 400th from yesterday! It is a clear, crisp, dry sake. A little bit of umami of rice woven into the dryness! I got the impression that this kind of taste lasted from the beginning to the end. Overall 9 (out of 10) I bought this sake at Hida Jizake Kurahonten, a sake shop where the brewer came to talk about his brewing process. This sake is made by bottling new sake immediately after pressing and storing it in a snow cellar at ice temperature. Ice storage increases the umami and sweetness, and the roughness of new sake becomes soft and mild. My impression was that the taste was indeed soft and gentle, with a corner removed, dominated by umami and a moderate sweetness, and accented by a slight astringency at the end. That is the impression I got. I like this lineage 😋. Compared to yesterday's Kudoki-Ue, I gave it a 9 because it lacked depth and the impact of the rice flavor was weaker 😅I would have given it a 10 if I hadn't drunk Kudoki-Ue. It was served chilled. The aroma I felt was  -Aroma: Aroma of a modest ginjo 👍.  -The aroma is a bit astringent. According to the explanation on the label, "We want to make something addictive that can carve out a life with sake. The rice is made from Banshu Aizan rice, which accounts for 8.3% of the Aizan harvest and is classified as a special top grade rice. The impression is that this is the Junmai Daiginjo! The impression is pure, simple, clear, and yet deep. The pure, simple, clear, yet deep umami of the rice continues throughout the bottle. Overall 9 (out of 10) Found this at the "Sake Brewery" in the Seibu Food Hall B2 🤩. I was interested in it after reading Jay & Nobby's post, so I bought it without hesitation even though it was an Omachi. According to the description, "Clear and sharp mouthfeel, mellow aroma and clean acidity. The mild aroma complements a variety of dishes as a food sake, and you can easily drink two or three glasses for a long time. My impression is that the sweetness, moderate astringency, and spiciness are mixed together, and at the end, the astringency is released into the nose as an aroma, while the sweetness follows in parallel. Such was my impression 🍶. It is sweet, but light and not too heavy, so you can drink it while eating, and you can drink it for a long time. It was served chilled. I was impressed by the aroma.  -Aroma: A modest ginjo aroma 👍  -Aroma: A slight astringency that comes through to the nose. Overall 5 (out of 10) I visited Hirata Sake Brewery on June 1 and purchased this sake. It is made from 100% "Isehikari" rice, the only two rice plants that survived the typhoon that hit the Ise region in 1989. According to the description, "Fruity and refreshing minerality reminiscent of melon and yellow apples. It has a beautiful acidity that is mature and clears up nicely. Slender body and dry taste." It is described as having a "slender body and dry taste. My impression was that the slightly stronger fructose-like sweetness (juice-like) and slightly subdued astringency continued independently to the end. That was my impression. I had it chilled. The aroma I perceived was as follows.  -Aroma: A slight ginjo aroma  -A hint of astringency that passes through the nose. Overall 7 (out of 10) Even though it's Monday today, for some reason the sake is still going strong and I'm on my second bottle😅The second bottle is All Tokyo, which I purchased from Tokyo Port Brewery. This sake is brewed with Tokyo-grown rice using the original Tokyo yeast collected from bees in Hibiya Park. It is truly an All Tokyo sake with rice, water, and yeast all made in Tokyo. At the beginning, the taste is completely different from the Edo Kaijo (EDO/Yamada Nishiki) of the same series, which has a banana-like sweetness, but has a hard-edged astringency and a slight spiciness that lingers into the aftertaste. It was served chilled. The aroma I perceived was as follows.  -Aroma: A slight ginjo aroma and alcohol aroma  -Aroma: A slight scent of ginjo and alcohol. Yesterday's Edo Kaijo was a raw Omachi sake, but today's Edo Kaijo is, according to the description on their website, According to the description on the website, "Sake brewed with Yamadanishiki using Yedo yeast, one of the oldest sake yeasts isolated in the Meiji era. Overall 8 (out of 10) I had never had sake from Tokyo before, despite being in the Kanto area, so I visited Tokyo Minato Brewery in Minato-ku, central Tokyo (the nearest station is Tamachi) on June 8 and purchased a bottle. According to their website, Tokyo Minato Brewery is unique in that they brew sake using tap water. The rice used is Omachi. When you start drinking, you feel both the spiciness, which is not too strong, and the umami of the rice. In the aftertaste, the spiciness quickly fades away, leaving behind the umami flavor, and it closes with a slight astringency. That was my impression! I served it chilled. The aroma I felt was  -Aroma: Umami of rice and a trace of alcohol.  -Aroma: The deliciousness of the rice and a trace of alcohol. Umami! This is a sake called Since I was allowed to taste the sake, I decided that it should be served with sashimi, so I bought some yellowtail sashimi and went home! Overall 8 (out of 10) I visited Sugita Sake Brewery on 4/29 and purchased this sake! According to their website, the concept is "sake that is uniquely Japanese. It is exactly as the concept says, "Sake that is uniquely Japanese! Is this a recent trend? It is not the sweet and tasty type that I like, but a simple, clear and straight spiciness alone. There is no need for a lingering aftertaste. I feel such a manly taste. I can imagine a scene of a wild samurai enjoying it alone in a small tatami room. Hakugakusen Gokuso was the rice sake, but this Yuto is the man's sake! I give it a score of 8 because it is a matter of taste, but if you like dry, simple, and crisp sake, I give it a score of 10 without any complaints! I served it chilled. Overall 7 (out of 10) I had a glass of Ohmine Cup left over from a bottle of Hourai Mitsuwa Noen that was instantly available 😅. It had a score of 9 when I drank it before, but I guess my taste buds are getting more luxurious as I experience more and more delicious sake 😅. This sake is made from Koshihikari rice, which is the rice of Hida, and is brewed with such a loving Hida spirit that "as a sake brewer in Hida, I want you to enjoy Hida sake made from Koshihikari rice! This sake is brewed with such love for Hida! At the beginning, you will taste a strong sweetness with a hint of sugar, but to prevent it from becoming too sweet, there is a slight spiciness and astringency to tighten the taste. The aftertaste is also sweet with a slight spiciness and astringency. I love the taste of this line 😋. It would be perfect if the flavor of the rice could be brought out a little more 💯. I thought it might be somewhat dry, and at my husband's request for the first filleted pork cutlet in a long time, I had it with filleted pork cutlet and wonton casserole! Surprisingly, it has a subtle sweet aroma, a moderate sourness, and a tangy sharpness. It was quite ⭕️ with the hot filet mignon!

According to Imanishi Shuzo's website, they brew sake with the desire to express the history, culture, and climate (water and rice) produced there. You can strongly sense the flavor of the rice. Yet the sweetness is moderately restrained. The lingering taste is similar to that of yesterday's Hourai, with a slight astringency. However, the flavors are completely different and I am always surprised at the depth of sake that can produce so many characteristics with rice and water as the main ingredients. Hourai has a freshness, while today's Mimurosugi has a warmth. I had it chilled. The image of the aroma that I felt  -Aroma: Aroma of rice with umami flavor.  -Aroma: The taste is astringent, but the aroma is still slightly umami. This sake is made from Gifu rice called "Hidahomare"! It starts out with a crisp sweetness that is not sluggish, and as the sweetness gradually fades, the astringency comes into the picture and closes the bottle. It is delicious 😋. I had it chilled. Reservations are required for the sake brewery restaurant! Oyako-don (oyakodon) and dote-ni set menus made with koji, and parfaits and green tea tiramisu made with sake kasu for dessert💕Delicious! There was also a sake drinking contest! The water is hard water used in sake brewing, but miraculously mellow due to the lack of iron!

Aromatic and clean tasting sake. Since we were undecided on what to drink, we went with our family staples for now. Deep-fried gizzard, deep-fried tofu, grilled chicken without skewers, and freshly picked salad from the neighborhood!
