Overall 9 (out of 10) I got Tasake Akita Sake Komachi 🍶😃. Delicious 😋❣️ The umami with a sense of transparency and a weak astringency that accentuates the taste. I got the impression of a lingering sense of transparency rather than a crisp cut 😋. Compared to yesterday's Tasake Yamahai, Yamahai has a sense of maturity and this Akita Sake Komachi has a sense of transparency. That's my impression! As expected of Tasake, both are very good 😋. Tasake has a complex taste and is cleverly assembled. I am inexperienced in sake, but I can't decipher the taste! I drank half of it to write my impressions again 😅 I drank it chilled. The aroma I felt was  -Aroma: Ginjo aroma  -A hint of astringency in the nose. According to the description by the brewery According to the description by the brewery, "a well-balanced sake with a good balance of umami and sweetness that even those who don't like Yamahai sake will be captivated by it." It's delicious 😂. It's delicious 😋❣️ The taste is different from what you would expect from the rich aroma, with umami and a woody astringency (an astringency that reminds you of a wooden barrel that has been used for many years) that spreads in your mouth. The aroma, umami, and this astringency are in total balance, and it is a classic without feeling classic 👍. It's a complex and difficult taste 😋. Different lots of the same brand have different descriptions, and this Yonotori was no different 😮. The third photo is the one we received this time and the fourth photo is the one we received in May this year! According to the description Aroma of wild fruits such as apricot and raspberry. It also has an earthy aroma of earth and soup stock. and "earthy aroma like earth and soup stock are also latent. Delicious 😋. I have never heard the expression "earthy aroma" before, but now that you mention it, I think I can feel a different kind of tangy taste behind the sweetness, which is not the tangy taste of rice 🤔. It is such a noble sake, mainly sweet but not only sweet 👍 I think it's a good idea to try it.  -Aroma: Ginjo aroma👍  -Aroma: Slight scent of wood vat and rice. Overall 9 (out of 10) I have enjoyed both No. 33 and No. 44 of Kudokigake in the past 😋, so I bought this No. 29 without hesitation when it caught my eye at the liquor store 😅. According to the description I want you to feel the subtle umami (pole). It is delicious 😋. I think I know what you mean by "delicate umami". It is not a rice flavor with no depth and no impurities as a result of 71% reduction, but a clear main flavor as a result of a large amount of reduction, while at the same time, it has a three-dimensional feeling with a sense of the original miscellaneous taste of rice in the back. Overall 9 (out of 10) Today is Sake Day (although our family has Sake Day almost every day.... 😅) While participating in Jay & Nobby's black bottle relay, we opened a bottle of this black-bottle type sake that we previously purchased from Daishinshu Sake Brewery😃. According to the description. "characterized by a gorgeous spread of ginkoku (gin aroma) and a full and soft vinous taste." Delicious 😋. As the description says, the main taste at first is the gininess. The taste is then faded out with the addition of a moderate acidity, leaving the fragrance intact 👍. It is refined and has a graceful impression without the cloying taste of rice. It was served chilled. The aroma I felt was  -Aroma: Ginjo aroma 👍  -Aroma: Ginjo aroma and some acidity. Overall 8 (out of 10) A new sake brewery founded in 2028 in Hanno City. (It seems they are not yet registered on the Sake-no-wa DB.) Mr. Wakabayashi, the representative of the brewery, is a disciple of Shinmasa Sake Brewery. I met him several times by chance at the sales outlets in the city and we became acquainted😅. Today, I happened to meet him again at the ticket gate of Hanno station where he was selling his products 😅. This time, we were served a newly made nigori! Overall 10 (out of 10) I bought it at a store that handles it because I enjoyed it so much when I drank it before. The feature is glutinous rice hot brewed in 4 steps🤔. According to the description It has the acidity from lactic acid fermentation, the umami of Hitogochi, and the clean taste of Yamae Nishiki, while pursuing a unique sweetness and exciting taste from the four-stage glutinous rice brewing. A different brand from before, but good ‼️😋. The beginning of the drink starts with a soft and fluffy rice sweetness and umami that shows the influence of the unique glutinous rice, and the aftertaste gives the impression of closing with a festival where all the rice flavors appear (but in a moderate way) 👍. It was served chilled. The aroma I felt was  -Aroma: Soft and fluffy aroma of rice 👍  -The aroma of the rice is still there, but there is a slight spiciness that passes through the nose. I had to teach the young people about good sake ❗️ and with a one-sided sense of mission, brought Tasake and Akabu no Amber 🍶. After the toast, Tasake is so good ❗️, AKABU is so good ❣️ I'm going to be addicted to sake ‼️, but the Tasake and Akabu are disappearing fast. I have no time to write an in-depth impression of them 😂. So I'll just end with an overall evaluation this time 😭. 😭 I think I probably conveyed how good the sake tastes 🤔.

We are weak against "limited ‼️" type words, so we bought it without a second thought😅. The sake is "a punchy 'matured dry' ginjo-shu made by aging the unfiltered raw sake at ice temperature. Easy to enjoy as a food sake. We are told that it is "easy to enjoy as a food sake". It's delicious, but not something we've ever experienced 😋. It is indeed dry, but I can't describe it well, but I got the impression that it has a grain-like taste all rolled into one. I wonder if this is called aging?
