Overall 9 (out of 10) I had to go to Nagano on 11/11, so I bought this sake on the recommendation of the owner of Zenkoujiya, a liquor store near Marusei Shuzo, where Seimasomune is brewed. We bought it as a gift for a couple who usually share vegetables from their farm with us, but we wanted to drink it too 😅 Of course, we also bought a bottle of Seimasamune😅. Overall 10 (out of 10) We had our first Tottori sake with the first new sake of the year😃. Pekho-san got it from a liquor store😃. According to the sake brewery's website. You can taste the juiciness of a whole fruit bite! The flavor profile is clear and the sake is great with miso and hot pot. It is also recommended to drink it on the rocks. Delicious 😋. A sweet and delicious sake that can cut through 👍. Similar impression to yesterday's Kuheiji, but whereas yesterday's Kuheiji was more astringent, this Chiyomusubi has a spicier taste and, as the description says, has a clearer outline of sweet, umami, and spiciness 😋👍. I served it chilled. The aroma I felt was  -Aroma: Ginjo aroma 👍  -Aroma: Slightly pungent aroma that passes through the nose. The sake I pulled out to celebrate is from Aichi prefecture where Pekho and I have our parents' home, Kuheiji🍶. It's delicious 😋. Cutting sweet-umami type👍 The main taste is sweet and umami, but it also has an astringent and spicy taste that is not so obvious but works well in the background so that it doesn't end there 👍👍. It has a light astringent taste with a touch of Yamahai. I can feel a certain rice flavor in the back of it. This impression lasts from the beginning to the end. They seem to be a sake brewery that tries all kinds of unusual things👍. The brewery uses glutinous rice and malic acid yeast in a four-stage brewing process, and the brewing water uses "Shinshu University Crystal", a highly functional crystal developed by Shinshu University (it sounds like a "superalloy", but I don't know what it is 😅). Rice" 😅 has already taken the leading role. And Nagano love, with all the ingredients made in Nagano Prefecture 👍. Delicious 😋. Sourness, spiciness, and astringency are the main flavors, but umami & sweetness are also well-practiced in the back, making it easy to drink 👍😋. I had it chilled. Overall 7 (out of 10) Reborn and Restarted Sake Brewery, brewing only Junmai-Ginjo all by themselves in Niigata! One of the breweries we like to support ❗️ 💪. It is dry! And with an alcohol content of 18%, it packs a punch 🤛. As a lover of sharp, sweet and tasty sake, I'm not a fan of it, but Pekho, who loves dry sake, gave it a score of 8-9 😃.
