Aroma is like old-fashioned sake
Color is slightly yellowish.
The sweetness of rice spreads at the top, but the sourness and bitterness soon take over.
It would be better heated up.
Junmai Ginjyo Nama-Shu, Hidahomare polished to 55%.
This sake is only available at Gero Onsen (Gero Hot Springs).
The alcohol content is slightly higher at 17%. It has a fruity aroma and a smooth and mellow taste on the palate.
Hidahomare rice, which accounts for only 1% of all rice suitable for sake brewing, is used. The first sip is soft and the aftertaste is refreshing, and it seems to go well with all kinds of meals.
The use of ultra-soft water in the brewing process is responsible for this characteristic.
