They are currently researching how to make sake that does not conform to trends. According to the description The greenish ginjo aroma brings a cool sensation to the palate. The sweetness and texture of the rice is also a key element of the sake. According to the brewery, "We're working on making a sake that doesn't pander to the trend. According to the description, this brand is characterized by "umami" and "sharpness" 🧐. It is delicious 😋. It's been 5 days since my first saké 🍶💖. ❗️ It's been a while since I've had a Masamune here 😆❤️ delicious 🙌 fruity and sharp! It's low in alcohol, but it's still a solid Masamune! I've been drinking only beer for the past few days, but I feel like I get drunk more easily with beer.

Overall 8 (out of 10) Seimasamune is my favorite sake brewery because of its "glutinous rice hot-kake four-step brewing process". They seem to be a sake brewery that tries all kinds of unusual things👍. The brewery uses glutinous rice and malic acid yeast in a four-stage brewing process, and the brewing water uses "Shinshu University Crystal", a highly functional crystal developed by Shinshu University (it sounds like a "superalloy", but I don't know what it is 😅). Rice" 😅 has already taken the leading role. And Nagano love, with all the ingredients made in Nagano Prefecture 👍. Delicious 😋. Sourness, spiciness, and astringency are the main flavors, but umami & sweetness are also well-practiced in the back, making it easy to drink 👍😋. I had it chilled. The aroma I felt was  Aroma: The aroma of rice flavor and some sourness👍👍 - Hint: Sourness that passes through the nose  -The aroma is a little sourness that goes into the nose. About acidity and astringency bitterness (minerality). I have the impression that mountain sake is acidity and sea sake is minerality. Overall 9 (out of 10) I have enjoyed both No. 33 and No. 44 of Kudokigake in the past 😋, so I bought this No. 29 without hesitation when it caught my eye at the liquor store 😅. According to the description I want you to feel the subtle umami (pole). It is delicious 😋. I think I know what you mean by "delicate umami". It is not a rice flavor with no depth and no impurities as a result of 71% reduction, but a clear main flavor as a result of a large amount of reduction, while at the same time, it has a three-dimensional feeling with a sense of the original miscellaneous taste of rice in the back. Overall 10 (out of 10) I bought it at a store that handles it because I enjoyed it so much when I drank it before. The feature is glutinous rice hot brewed in 4 steps🤔. According to the description It has the acidity from lactic acid fermentation, the umami of Hitogochi, and the clean taste of Yamae Nishiki, while pursuing a unique sweetness and exciting taste from the four-stage glutinous rice brewing. A different brand from before, but good ‼️😋. The beginning of the drink starts with a soft and fluffy rice sweetness and umami that shows the influence of the unique glutinous rice, and the aftertaste gives the impression of closing with a festival where all the rice flavors appear (but in a moderate way) 👍. It was served chilled. The aroma I felt was  -Aroma: Soft and fluffy aroma of rice 👍  -The aroma of the rice is still there, but there is a slight spiciness that passes through the nose. Marusei Shuzo, Nagano Prefecture Seimasamune GREEN CARP Junmai Unfiltered Nama-shu Yamae-Nishiki 90% from Nagano Prefecture Hime no mochi produced in Nagano Prefecture 10 Polishing ratio 59 Nagano D yeast 13 degrees Celsius A sake brewery that I personally recommend. This brewery features a four-stage brewing process using glutinous rice, and the glutinous rice gives it a slight heaviness at the back, not unpleasant at all. The concept of this green carp seems to be umami and sharpness. Aroma, melon-like and fruity, rich in aroma. Taste: sweet, sweet and full of umami, but with a great sharpness. I like dry sake, but I haven't tasted such a delicious sweet sake in a long time. It is like eating melon or pear as it is. The taste is as clean as a junmai ginjo. It's so delicious.

 Junmai Daiginjo  I thought the Junmai Daiginjo would be good because the Nama Sake was so good, but...  I was a little disappointed.  It didn't taste like sake, more like white wine, with a strong acidity that I didn't like.  However, after opening the bottle and drinking it a few days later, the acidity had lessened a little and it was slightly easier to drink than immediately after opening the bottle.

A little fizzy when you open the bottle and the alcohol itself is a little cloudy white. When you drink it, it has a strong muscat-like sweetness and is easy to drink, with little alcohol. I bought it out of a sense of adventure, but I hit the jackpot, and it's one I'll definitely be repeating!

When opened, it has a slight gassy feeling and the aroma in the mouth is quite spectacular. But it also has acidity and lightness, making it perfect for summer. It is just the right balance without being too much. It reminds me of the nighttime sea view at Kujukuri-hama or Oiso in the summer when I was a student 😁.

I've never been there, but I think it's the Matsuzaki in Urawa Parco! There is a main store in Kawagoe and I recommend that one 😊. A few years ago, you could change the Hana-yosu if you went to the warehouse 😥, but these days you can't buy it anymore 😥.
