Dawn of the Young at Otemachi A great opportunity to learn about unknown breweries Some of the things that caught my attention (3) Heiroku Revive Origin Akatsuki Heiroku Brewery is a local craft brewer who left a brewery for various reasons. This sake uses the brewer's yeast "Akatsuki". This sake is made with five kinds of rice based on glutinous rice and germinated brown rice, and fermented at low temperature for a long period of time. It is a very expensive sake, so it is not easy to drink, but we hope you will take this opportunity to enjoy a little bit of it. Elegant yet complex sweetness and umami Even though glutinous rice is used, it is not too sweet. Beautiful acidity A little citric acidity I'd like to drink more, but maybe some other time. I'm glad the brewer remembers me who visited the brewery in Morioka one time when many things were going on! I really want to support this brewery!

The brewery produces 50% polished koji rice and 40% polished kake rice from Iwate Prefecture, By adding glutinous brown sprouted rice, it is not a sake, but a brewed sake. but other brewed sake. I've been curious about Re:vive Kuga from Heiroku Brewery, but I've never had it before. I drank "layer" but this is my first time to try "Re:vive". I wanted to make sake, but I don't have a sake license, so I mixed germinated brown rice with sake and made it as a craft sake. (Brown rice is considered rice and is sake, germinated brown rice is craft sake, I didn't know that 🧐) Gentle sweetness, moderate acidity. Fresh and delicious 😋. Not schwashy, but fresh? Beautiful and tasty, but maybe it's my imagination, a bit subtly different from so called sake? (Can't describe it 🤣) Well, it's good because it tastes good 😆. It's the kind of thing that goes down smoothly.

This craft sake is brewed using the method of Shaoxing sake, using glutinous rice as the mash as well as germinated brown rice. It has a unique aroma different from that of ginjo, and a rich flavor that cannot be described by sweetness alone.

I was curious about it but couldn't find the right time to buy it, but I finally did. It is sweet and sour. I found it a bit sweet, but the acidity sums it up and it's surprisingly sharp. Thanks for the food😊.

Perhaps it's my imagination, but I've been seeing Iwate sake a lot in the Sakénawa area lately, so I extended my love of Miyagi to love of Tohoku, and my 501st bottle was Heiroku's Setsuna. I'm just saying, I was influenced by Maru-san's post the other day about Hori no Ii, and I just wanted to drink some good Iwate sake too 😅Hiraroku Brewery from Shiwa town, just like Hori no Ii. All Iwate rice is used here, and from the first sip, it's soooo good😍! It has a light mouthfeel and just the right amount of sweetness. The refreshing citrus-like acidity that comes along with it is an exquisite and wonderful accent 💕Wow, it's delicious 😋. Whatever Heiroku-san's sake is, it's too delicious to finish 💦.
