Tonight, we continue our series of firsts with this one, named after the female toji known for her work at Tomikunaga. This sake is brewed with Hachitanishiki and Yamadanishiki. The freshness is alive and well, and the melon aroma (typical of Yamada Nishiki) is faintly felt at first, but then the sharp dryness and acidity overflow into the pineapple aroma (So_1F34D) without the sweetness of Hachitan Nishiki and continue until the finish. It's very refreshing and easy to drink 😋.

Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

I've been curious about this for a while, but this is my first time in Beian Daikoku. The rice is Hitogokochi, though it is not written on the label. Juicy sweet flavor. I bought it at Tsunoka Shoten, which I had wanted to visit for a long time. The nearest stations are Keihan Sumizome Station, Keihan Fujimori Station, or JR Fujimori Station. The brands available include Miyakotsuru, Tamagawa, Yaetsuru, Shirakikyu, Kumi no Ura, Jinzo, Yosamusume, Haginoroh, Roppo (from Kirakucho's brewery), Wakabisu, Joyo, Honohana (from Wakamiya Shuzo), and sake from the Meimon Sake Association. In addition, there were a few PB-like products that were only available at sake dealers' associations and unions. They were sake made by Eikun and Tsuki no Katsura. There were two kinds of sake, both fruity, so I chose 1801. It was not very fragrant for an aromatic yeast, but it was voluptuous and sweet. It was a bit similar to the Yatagarasu I drank before.
