The rainy season is about to end, so we hurriedly opened the package. Unique sweet and sour taste, stable and delicious 😆. The boundary between sweet and sour is not so clear than usual Wataya, and the ambiguity is like the sky in the rainy season. The dishes were tandoori chicken and eggplant grilled with spices 🍆. I like cotton-ya that doesn't let the strong peculiarities of the spices get the better of it 😊.

I bought it in January, but it was too good to open, so I opened it at my parents' house. This is a Junmai Daiginjo sake matured by Hagino Shuzo. When I hear the word "aged", I imagine a unique fermented aroma and taste, but this sake has a beautiful aroma and taste like Hagi no Tsuru, but with the strength of Hiwada 😳. It's easy to pair with meals, and you'll never get tired of drinking it, so it will keep you coming back for more...

Only Ichinokura brand sake is made in Kurihara City. When Mr. Tokoro introduced it in a TV shooting at the end of last year, it was in short supply in Kurihara City 😱😆😆. The first sip tastes slightly sweet and clean without any peculiar taste. It goes well with kiwi and kurichi wrapped with prosciutto ham. It also goes well with strong meat dishes!

Got it at a liquor store in Tomiya City. This one is sweet but easy to match with food and I like it 😚. As expected, it's sweet and umami, but it's also very refreshing ✨. I think it's because it's unfiltered raw, but I can really taste the rice 😳. I had it with saikyo yaki chicken and carpaccio of prosciutto ham 👍. It's easy to prepare dishes when you know what it tastes like 😌.

Towa, went on a day trip to Tono and purchased at a roadside station in Tono ~. Tono is a major producer of doburoku. This doburoku also has sweet, dry and junmai ginjo! The sweetness and sourness are moderate. It has no peculiarity and is easy to drink. The rice has a crumbly texture as if it had been stirred in a blender. Firm milky white color. Next time I go there, I would like to drink it with Genghis Khan!

Got it at a liquor store in the neighboring Ichinoseki area~! The cool packaging is eye-catching 👀. This is a brand that is the perfect food wine! The aroma is fruity and sweet, but the taste is spicy and slightly sour. If I had to say something, I'd say it would be my favorite if there was a little more sweetness in the aftertaste 🤭.

I've never had Kakuemon before ✨. Found it left at a liquor store in Tomiya 💡. The aroma is similar to Fukukomachi, but weaker than Fukukomachi 💡. Taste is simple and clear with no sourness 😆. The bitterness becomes more pronounced when paired with a meal 😳. It is perfect with edamame, vegetable sticks, homemade pizza Neapolitan style, chikuwa and natto tempura, chicken tempura, and other dishes that lack cohesiveness.

Purchased at a liquor store in the neighboring Ichinoseki area. It is a sake made in Hitachi City, Ibaraki Prefecture, so it is a coastal sake! It is a coastal sake. I paired it with shime saba (mackerel) and yakitori (salt) according to the website! This combination was very 👍, I wondered what other dishes would go well with it...? Very light and refreshing without any unnecessary sweetness ✨. It's good as a food sake, but if you drink it by itself, it might be a bit of a pain 😅.

Purchased at a local liquor store ~. There are a lot of spring limited edition sakes out there, and with Hagino Sake Brewery, I thought it would be for glasses only..., Today I selected this one, which I was told is medium-bodied and well-balanced ✨. It's definitely not too spicy, not too sweet, light and easy to drink...after all, Haginotsuru is Haginotsuru and has a very beautiful and delicate mouthfeel! I have the impression that it is more of a pre-dinner drink than a mid-dinner drink, and is best paired with a refreshing vegetable-based appetizer. The grilled chicken with lots of garlic and salted malt that I had prepared for today was a splendid competition with the leftover Hamamusume from last week.

Purchased in Ichinoseki next door I thought it would be light and dry, but it has a firm sweetness and umami, with a tangy fizz in the back of the throat. I was convinced by the description "mellow" on the label 🤔. It would be good with seafood au gratin or boiled fish rather than sashimi!

This is also a souvenir of the cherry blossom viewing. The aroma is not too strong... and this one tastes like nothing I've ever had 😳 Sweet with a hint of bitterness and light and refreshing✨ Light, but it makes a statement when drunk after a meal 😳. It reset my slightly bitter bamboo shoots, croquettes with lots of sauce, and garlicky fried chicken with just one sip ✨. It was similar to the feeling I had when I went outside after a bad day, only to be blown by a fresh but strong yet enveloping warm wind that took all the bad things with it. (Am I tired?)

I got it on the way back from Hanamiyama Park to see cherry blossoms 🌸 The first sip was sweet and spicy at the same time, like an orthodox sake! It's like an orthodox sake 😆. It was my first time to drink it but it was familiar to me 😁. It was very easy to pair with dishes, and it helped to refresh the oil from the Saikyo style chicken ✨. I think it would go well with fish too ✨

A dream collaboration between Matsubara-source and Cotton Shop, who had a business relationship ✨. I opened a bottle for the launch party by myself after work was over.... This is my first time to drink Wataya's raw sake 😆. Mellow -> sourness of lactic acid -> spiciness -> dry and fizzy feeling Rarity of the unique feeling of Nama-no-Harajiku? Rarity or braniness? It goes well with strong flavored dishes. Kurihara's highly acclaimed grilled chicken with Gyoja garlic sauce 😭

From the brewery's installation. 'Tempura with spring ingredients, give it a try!' and decided to open the package immediately! I will try it - 🤚🏻! I got assorted tempura and cod sprout tempura at a local supermarket. I'll heat it up in my helcio and serve it... The sweetness is hardly noticeable, and the aroma is subdued. It lacks the sweet and sour taste characteristic of Wataya, and is much lighter than usual. You might not know it's cotton-ya unless you are told, but this is delicious. Indeed, it goes well with tempura. I think it is good not only for tempura, but also for spring taste in general.

I fell in love with the cuteness of the label😍. The aroma is understated ✨. Elegant sweetness on the palate, followed by a cool, rummy ✨. Slightly effervescent and the sweetness is quickly quenched, so it's easy to pair with food ✨. Pairs well with yellowtail sashimi, crab tofu tempura, and soaked rape blossoms. My first experience with Kyushu sake 😋.

I've been wondering about it for about a month and couldn't resist - bought it! The first sip is as sweet and sour as it looks, but then the fizziness and dryness comes rushing in right after 😳. It's so fizzy ✨ it's almost like a carbonated beverage! I bought it thinking it would be best with fried oysters, but it's not so sour and the spiciness is stronger, so it's easy to pair with anything without thinking about it 😆.

Tasted and purchased at the brewery opening The fruity aroma makes you want to smell it forever 🥰. The aroma suggests that it is sweet and tasty, but the taste is only at first, and after a second or so you can feel the spiciness 😳. I tasted it at a local liquor store and it was so good I bought it 😆. The gap between the cute pink bottle and the taste is amazing 😎! It's a food sake with a weak sweetness and a strong effervescence + dryness ☺️ The sourness at the end and the long lasting sourness is pleasant 🥰. It goes well with the flavorful hors d'oeuvres for hanami (cherry blossom viewing), but also with light textured spring foods such as rape blossoms and scallions 😭

Purchased at a liquor store in the neighboring city of Tome, Japan, with an eye-catching label. A sake with a sake strength of +2 We prepared saikyo-marinated chicken, yellowtail sashimi, radish stew, etc. I took a sip with excitement... Sweet! Spicy! But both sweet and spicy is a new sensation 😳 and one I've never had before! The sweetness is not thick like a typical amazake, but rather a smooth and casual sweetness 😍😳😳. The spiciness is backed up by a slight fizzy sensation at the back of the tongue, which helps the thick fat to be washed away... No acidity, so lemon juice or ponzu is a must 😆.

Since I've recently been limited to Miyagi and Akita, I selected sake from Nagano Prefecture, which is a little farther away. Open the bottle... The aroma is modest, but elegant. ☺️ The sweetness and acidity are restrained, and the spiciness can be felt. The clean and light feeling is similar to Hakurakusei. ⁉️ I prepared a variety of dishes with Nagano in mind, but the soaked leek was a perfect match ✨. Nagano is known for its nozawana, so darker greens would be a good match? Also, the fried horse mackerel was a good choice.
