Next up was the Ittiki Senzan Comet Nama-no-Hara Sake. The only sake from Gifu that I know of is Ikki Senzan, so I thought I'd give it a try. It was a brand that had just been opened. Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

I've been curious about this for a while, but this is my first time in Beian Daikoku. The rice is Hitogokochi, though it is not written on the label. Juicy sweet flavor. Today is Valentine's Day!👩‍❤️‍👨 This Sake paired very well with the filet mignon I prepared for my wife. There is a full mouth feel with umami. There is a light smoke flavor and wood. The aftertaste is short.

Cowboy bought me this as a souvenir from Niigata! Yay! Yamahai is great! The design is cool too! It's crisp and mellow, and I drank a bottle so fast... I want to drink it again!

Late night at the diner. The second one is a limited edition sake that is sold only on two days before the brewery opens. This year's bottle is called "Gokuragiri Limited Edition" on the label. This one has a sweet taste of rice. It's different from the earlier Sukkiri, but it's thicker. It's not my favorite, but it's the kind of sake I want to drink a little bit of every day. Yummy, yummy 😋

I actually had it yesterday, but since it is a special junmai, I compared the two. We will drink it cold. The color is clear and almost colorless. The top aroma is mild and not very noticeable. The taste has a robust rice flavor, sweetness, and a nutty, chocolate-like complexity. It is rich and mellow, but compared to Saka, it has a more traditional country-style flavor. The aroma on the nose is bitter and chocolatey. By the second day, the chocolaty flavor has settled down, and a clear, mineral, full flavor emerges, making it easier to drink. Ingredients: rice (domestic), rice malt (domestic) Rice polishing ratio: 60 Alcohol content: 15 to 16 degrees Celsius

Saga, Saga Prefecture, Japan. Saga Brewery Co. Saka Tokubetsu Junmai Nama Nama Zake. Purchased after tasting at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. Saka is a new brand, and is apparently better known as "Ume" (window plum). It is served cold. The color is clear with a slight yellowish tinge. The top aroma is mild, with a slight hint of alcohol. The mouthfeel is smooth with a slight flocculation, and it does not feel fresh to the extent that it should. On the palate, there is a little bit of juicy acidity, a little bit of tangy alcohol, and a nutty, full flavor that spreads. The aftertaste is a bit of a sharp spiciness, with a slight throat hit after swallowing. I bought it thinking it would be sweeter and more umami, but it was surprisingly dryer than I expected. It is similar to the first sake released from the brewery, but I think this one has a clearer outline. I think Doukan is stable in its line of slightly sweet umakuchi at first and finishes with bitterness. Like Okura and Tamagawa, if the direction of the flavor is consistent, we can drink it with peace of mind. Anyway, Shiga sake is generally very tasty.
