Local first guess Kura. I went out of my way to hold out until the right time to get the spring sake pink label 😣 and after all, the label too 😁. The first one is a beautiful young green color🩵. Taste... the aroma is green apple, the sweetness is subtle and the refreshing acidity is nice 💓Bitter taste makes it a good food sake. We had a Chinese dinner menu of sweet-and-sour pork and spring rolls, and it went well with them 😋.

Leaving the new sake festival, we went to the second restaurant. The second party was at a soba restaurant on the restaurant floor of Amu Plaza Kumamoto, adjacent to the station. I got "Uonuma de sakou" as a souvenir....sold only in Minamiuonuma, the concept is good ⭕️...I couldn't find a good marriage...but I'm sipping it with yellowtail sashimi and okonomiyaki...Niigata sake 🍶 traditional light dry taste.... ...I've had it a few times...it's a good ⭕️ as a food sake 🍶! Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake. Even so, I heard that the owner stubbornly continued to make sour sake. (^○^) Nowadays, with the Shinsai boom, Yoemon's sour sake is also selling well, especially outside of the prefecture. 100% Yamadanishiki from Hyogo Prefecture, with wine yeast. It is said that the name "Sora no Tsuru" comes from a dream of riding a beautiful "crane" soaring in the sky. Wine yeast is great because it makes rice sweet and sour! The top aroma is of grappa and rum raisins. When swirled, it smells of plum. The flavor is very sweet and sour, like plum wine. The color is a pale yellowish hue like lemon pulp, the legs are short and weak.

It is a sake from Akashi City, Hyogo Prefecture. It is only available directly in the city, and there are only a limited number of stores where you can drink it. I found it at a store selling Hyogo products in Kobe Hankyu in Sannomiya and bought it. How does it taste? It does not have the harshness of the original sake. It has a chocolate-like aroma. It has a rich sweetness, with spiciness and astringency chasing after it. The chocolatey and caramel-like aroma that passes through the nose is delightful. If you let it air a little, it becomes more brightly sweet and fragrant. It is simple, but quite flamboyant. How about if you heat it up? It tastes like chestnuts and is easy to drink! The spiciness that comes out volatilely and the refreshing sweetness that comes in quickly. It has a rich and expressive taste. It is really good. The aftertaste is also refreshing and sharp with a nice sweetness. I think it is especially good when heated. I have now completed a round of the 70-odd breweries in Hyogo Prefecture (and have 300 reports to my name)! It took me two years to complete this feat. It was a long but enjoyable journey. I will continue to enjoy Hyogo sake (and Fukui sake as well) slowly and carefully, and hope to one day become an evangelist for good Hyogo sake...

🏠 Drinking ( -̀ -́ )୨⚑︎゛ I didn't care for the aroma. Crisp ‼️ and no bitterness. Maybe a light acidity when paired with veggies😊. For the entrée... Yakitori with sauce made with rice wine 🐓. I'm not sure if it's a good idea to use it with vegetables Rice used, Miyamanishiki Yeast, Kyokai 701 Alcohol 13%. Personal preference among 4 types 4️⃣ I received a bottle of sake that has been stored at room temperature for a wacky long time... I tried to drink it but it was old sake ( ´-̥̥̥̥̥ω̥̥̥̥̥̥`) I got about 7 kinds of sake including Tasake and Jyushiyo... What a waste 😭😭😭 The sauce made with Tasake was delicious though 🥲.
