Junmai sake brewed with Koshihikari rice. The complex flavors come rushing in at once along with the umami, and as the label color indicates, this sake is suited to rainbow colors.
Maybe it's the color that pulls you in, or maybe it's the grape-like fruitiness, but it converges nicely with the soft acidity.
Combined with the ease of drinking, the overall taste is quite high on the list.
A bottle from the smallest sake brewery in Japan that I had hoped to try someday. The acidity is pleasantly assertive in the clean taste. The text on the label gives a sense of familiarity, which is also a nice touch.
