Preliminary study because I supported a project to release new hard water and soft water sakes through Kurafan.
They use hard water for all the sake they sell now, but they used to use soft water called Benten-no-shimizu for their honjozo. He said they stopped using it because it was too hard to go fetch it. I wanted to drink it.
So I went to fetch some. It was about a 5-minute drive from the brewery. The water was flowing out at a great rate and was soft and tasty.
