Sogawara-Homare A somewhat nostalgic aroma. When you put it in your mouth, you will feel a light sweetness. After that, it tastes sour and bitter. It has a strong taste, which I like. As far as I know personally, this is the first brewer since Seimasamune and Hanazumi to use the four-step glutinous rice brewing method. Purchased at a sake brewery. To be honest, the appearance makes you wonder if it is safe to drink. The appearance of the brewery makes me wonder if they are all right, but the sake is delicious and they have a sake brewed with Odawara's specialty ume (plum). It is nice that there are several sake breweries along the Sako River.

Matsuo Bird Day Fair (held at Otori Shrine on each Day of the Bird in November) Fairly dry. Soft. The astringency is probably due to the storage conditions. The tongue and throat are a bit sticky. You are also Miyamanishiki from Nagano Prefecture, aren't you? Purchased at a sake brewery. It is conveniently located in front of Matsuda Station and Shin-Matsuda Station. The shutters on the sales floor were closed, but when we asked at the office, they opened them for us. The sake brewery has a good reputation among local pubs.

Rhododendron oomurasaki (species of purple azalea) When I put it in my mouth, it smelled delicious when heated, so I had it hot. Soft, slightly acidic. Slightly sour. Slightly acidic. Mmmm. Purchased at a sake brewery. Near Lake Tsukui. I was impressed by the very friendly and loud proprietress. The sake brewing equipment is right next to the sales floor and is very powerful. But even if you visit the brewery during the brewing season, the work is finished early in the morning.

Maybe because the rice is from Nagano Prefecture. Purchased at a sake brewery. It is a small brewery run by a family in a large house. The wind chime has a strip of paper written by a child with a high level of awareness. Since it was my first visit to the brewery, I bought a bottle of sake, which is said to be the most popular.

Oya Takashi Brewery Slightly yogurt aroma. Dry, slightly effervescent, dry impression. After the first sip, a juicy sensation with acidity. Good sharpness and a little bitterness remains. Delicious, or rather, scores well. Returned home from Kanagawa. The first shot, I chose a cold one. We bought it at a sake brewery. Two big trees. The sake brewer recommended this one because it is said that it is a Yamahai (mountain haku) sake while Zanso Horai (I couldn't read it) is a Shoryu Horai (readable) sake. Since I accidentally bought a bottle of raw sake, I tried my best to keep it cool for about two days in a car in the middle of summer. We challenged the Kanagawa Sake Brewery Stamp Rally on the second day. The rest were on Obon vacation, so I will visit them again next time. We went to an izakaya in search of Kanagawa's local sake. Sake Bar Sakeza is located on the 2nd floor of a small building on East Street in front of Odawara Station. The bar has a good selection of delicious sake from all over Japan to go with the local fish, and the master is friendly and helpful. Although the order of the posts is back and forth, it was this master who introduced me to Suruya. In addition, in order to differentiate itself from the surrounding restaurants, it has a policy of not serving Kanagawa sake (2 losses).

It is a white koji all-rounder that can be used with a wide variety of dishes. niji This is a proper sake. It has a lot of malic acid, but it's just a normal dry and refreshing sake. It's a malic acid junmai sake that makes a deep night clear. It is from a sake brewery in Odawara. Moriyama Sake Brewery of Hachiryu-zai. Seriously? They have 12 kinds of sake based on the concept of time. They are not participating in the Kanagawa Sake Brewery Stamp Rally. At Suguruya, an izakaya in front of Ashigara Station. The store and regulars are unusually friendly while having a core aspect of having all kinds of Hinemos and rare local limited edition sake. Thank you so much for everything.

Miyama cherry (Prunus maximowiczii) The aroma is mild. Soft, not too sweet, acidity comes and refreshes. Very tasty. A good combination of lightness of Furuya Sake Brewery and softness of Kurosawa Sake Brewery. It seems to be. The brewery suffered a fire at the end of last year, but I was curious to know that they had started brewing sake after that, as it was often reported in the prefectural news. It is still delicious. This sake was made as part of a project to use sake rice from the Saku area together with Kurosawa Sake Brewery, which the president and I have known each other for many years. You can gobble it down. Takaten is amazing. We bought it at a supermarket near the Takaten Sake Brewery. There is a huge selection of sake from Okaya and Suwa. Takaten has had a sake called "Rock" for quite some time, which is recommended to be mixed with ice and watered down, and they added this to their lineup about 5 years ago in response to the high demand for junmai sake.

Takaten recommends high alcohol content sakes, including this one, to be drunk on the rocks. The locals also serve regular sake on the rocks, though. Purchased at a sake brewery. The urban area of Okaya. A killifish and three whoopers, the toji's hobby, greet you. No names yet. Last time, there was only killifish.

The Junmai Unfiltered Nama is said to be popular, and there is a wide selection of different rice varieties. We bought the recommended Hidahomare. Deep in the mountains of Nakatsugawa. As our predecessors have posted on Sakenowa, it was a long way to the brewery. It is important to drive with respect for others. I feel I was able to accumulate virtues along the way. There is a parking lot for about 4 cars under the hairpin curve before the brewery, and I felt their welcoming attitude. It seems that they also have a corner bar. They also have a selection of Moayashimono and Natsuko sake. The whale on the receipt is cute.

We are currently exploring izakaya (Japanese-style pubs) in front of Matsumoto Station. However, the cost will be high, so we are trying to keep it moderate. This restaurant opened last week next to the ramen shop Hizuki. The location and the fact that the restaurant opens at 3:00 p.m. are in line with the drinking habits of Matsumoto. The young and pleasant master is a one-man operation. The food is delicious and the sake selection is maniacal, with four brands from within the prefecture and four from outside. I think it's seamless. We will spread the word in a small way. Correction. The sake brands were 4 in-prefecture and 6 out-of-prefecture.

Since I was in Nagoya, I went to Liquor World 21 Shibata in front of Nagoya Station to buy some local sake. I learned about the Mizutani Shuzo Fire from a flyer in the store and bought some. It is made by Yamazaki Goushi Kaisha. Both breweries are located in the Mikawa Bay area. I had never heard of them before. I went to SAKAE SAKE SQUARE 2025. It was hot. I didn't raise anything to SAKE WA, but I was able to learn about many sake breweries in Aichi and Gifu, and I was able to tell Mr. Yamauchi Sake Brewery that his fumamori was delicious, so I am glad that I went.

We visited a sake brewery last week. Deep in the mountains of Nakatsugawa. Even the car navigation system was lost. I called in advance and was given a tour of the brewery because it was a day when the brewer was managing the warehouse. The brewery is handmade with old-fashioned (and dilapidated) equipment and produces less than 50 koku (50 koku = 5,000 sachets) of sake. We were very grateful for the sake. I was told that the sake was sold by the previous generation in the main house, but I could not buy it because he was not home, so I bought it at the nearest store (30 minutes away by car). I thought that the pop-up sign in the store was promoting Yamauchi Sake Brewery, but it turned out that the owner of the store is a toji (master brewer), so they have a close relationship with the company. The owner of the store is a toji (master brewer), and I was told that he was the one who started to rebuild Yamauchi Brewery, which was about to go out of business. splendid alfonsino (Beryx splendens) Aroma of rice cake. Aroma of barley. Dry and smooth. The flavor is simply delicious. Delicious warmed up. It's great in an air-conditioned room in the summer time. We bought it at a sake brewery when we went around Lake Biwa in January. The name "Kinkame" comes from the fact that the Ii clan gave it the name of Kinkame Castle, which is also called Hikone Castle, but they were too proud to call it that so they called it "Kinkame". When I told him that I drank Kinkame at Kinki-an, a buckwheat noodle shop in Otsu Station, he said that it had nothing to do with the Okamura head family. Also, I remember that the waiter's conversational tempo or pause was very Kansai-Japanese.

Aroma of dried fruits. Mild mouthfeel, subtle sweetness, saliva-stimulating acidity astringency. Quite yellow. I was worried because it had been stored at room temperature for three years without the right time to open it, but I was relieved to find that it tasted surprisingly good. I bought it at a souvenir shop in Tokorozawa Sakura Town a few years ago. It was made by Tenranzan in Hanno, as there is no sake brewery in Tokorozawa. Although Tokorozawa is the birthplace of aviation, it is not a town where people come all the way from other places, but suddenly an installation spot called the Kadokawa Museum has appeared, and I am looking forward to its future.
