waterway 10 Suiro Junmai Ginjo Natural Made with environmentally friendly rice produced in Omi Village, Shinshu Aroma of pear or melon. Sweet, sour and juicy. Numbness on the lips. Refreshing. Delicious with a beautiful taste. 11 Takao no Tengu Junmai Ginjo Aroma like pear. Sweet and sour. Contrary to the austere label, it has a freshness that caught me by surprise. I like it a lot. It is made with rice from Hachioji, where the brewery had a connection with about 10 years ago through various circumstances. The second prize for achieving SAKE country tourism is Maihime from Suwa. It was a crazy project in which, after collecting stamps from 70 breweries in Nagano Prefecture, 18 bottles were delivered as prizes, 6 from each of 3 random breweries. For some reason, we received 7 bottles. Rhizopogon rubescens (species of edible mushroom) Aroma is quite fragrant, as is typical of old sake. I like it. Woody aroma and flavor. Numbness on the tongue. The astringency and acidity left on the palate makes it even better with snacks. It's a great taste for a great price. Amazing. It was a new experience for me. Purchased at a sake brewery in January. Koka City, Shiga Prefecture. It has a cafe and a store and was crowded with regular customers. Shiga Prefecture's famous popping-out boy is a ninja in Koka City.

biwacho Yellow. A fresh aroma like some kind of gum passes through the nose, and there is also the aroma of rice. The taste is delicious. It is light and refreshing. Quite to my liking. We bought it at a liquor store in Niigata City. I went to the Niigata Sake-no-Taien (Sake Festival). While enjoying a bottle of Hi-iri Ichijozo Junmai at the Koshi Meijo booth, I asked about the special feature of this sake, which is that it is named "domaine ikazuchi" and is made from local rice. Nagaoka? I was surprised to hear that it is made with local rice. I have no good photos because they are blurry, so I'll add photos of the trip to and from Toki Messe. Note that typing in "Sake no Wani Ichibrew" will associate it with a liquor store.

Shimehatsu Tatsura! Seasonal Nama sake. Sweet aroma. Slightly effervescent. Soft sweetness. Slight bitterness at the end. It is elegant and coherent. So this is Yamada-Nishiki... Purchased at a sake brewery. I was at the Niigata Sake Festival. The booth of "Shimehari Tsuru" was very popular. While waiting in line, I heard from the brewery that they were selling directly to the public, so I went to Murakami the next day. The next day, I went to Murakami in a residential area a little far from the city center. We were given a short tour of the magnificent 200-year-old building. The exhibition space was converted from a room where labels used to be pasted. Currently, rice milling and bottling are done at another factory across the river. As a side note, a very polite lady gave us a very good impression of the Miyao Brewery.

The glass-walled koji room, tasting room, and sales floor are located in a stylish general store in the downtown area of Nagahama, northeast of Lake Biwa. When I was about to buy this limited edition, I was stopped by the owner, Mr. Kotaro (Happy Tarou) with round glasses, who used to work at Nanabonjari and gave me a small sample of Uki Uki Hop, which is recommended for first-timers, and even offered me ice cream.
