chamaecyparis obtusa var. breviramea (ornamental variety of hinoki cypress) Slightly habitual aroma, tongue numbing, astringent and bitter. Aroma of rice in the mouth when warmed. Soft sweetness and a bit sour. Delicious warmed. You can drink it all the time. Purchased at a sake brewery. Preliminary study because I supported a project to release new hard water and soft water sakes through Kurafan. They use hard water for all the sake they sell now, but they used to use soft water called Benten-no-shimizu for their honjozo. He said they stopped using it because it was too hard to go fetch it. I wanted to drink it. So I went to fetch some. It was about a 5-minute drive from the brewery. The water was flowing out at a great rate and was soft and tasty.

The splendid house along the old Nakasendo road is a cultural asset. Fresh amazake was served, tastings were available for a fee, and collaborative products from Summer Wars were sold. The toji explained about the products. He told us that he takes a lot of time and effort to make the Twelve Roku using box malted rice. It tastes even better now that we know how much we appreciate it.

Shigisumi-zumi Refreshing aroma of cider. Light, soft, slightly effervescent. Modest sweetness, saliva. A little bitterness lingers. Refreshing on the palate. Delicious. I heard it goes well with mushrooms, so I paired it with mushroom hot somen noodles. Does it have an earthy aroma? I think so? This is a sake brewery that specializes in sweet, sour, and juicy wines, but has not yet been discovered. I bought it at a liquor store in Suzaka while going to the Aeon Mall in Suzaka. The Naotora limited edition sake I bought at the Suzaka Aeon Mall was also sold in Matsumoto. What a feeling of defeat.

(7) means the rice polishing ratio is in the 70% range, and there are also (6) and (5). Purchase at the sake brewery. Near Shibu Onsen (hot spring). When I visited 2 years ago, there was not much sake available, but now that a new brand has been introduced, there is a good selection.

I had a similar impression of Iwanami Shuzo's Gekko (fresh stored) a few years ago, but...is that what it is? We are currently exploring izakayas in front of Matsumoto station. However, the cost is high, so I'm trying to keep it moderate. It is located on the second floor of the building, which is quite close to the Matsumoto station, so it is a surprisingly good izakaya. The owner originally liked Keiji Maeda so much that he decided to name the restaurant after him. And a regular customer donated Keiji Hana no Keiji goods, so the interior was a wonderful place full of Keiji Hana no Keiji. The limited-time-only kurikoro was very tasty.

There are also many local brands from sake breweries in the northern Shin region, such as Shinanomitsu and Katsura Masamune, which are rare in a sense, and recommended for sake enthusiasts who have gone as far as they can go.

As expected of a buckwheat noodle shop selection. Sake at Soba Restaurant because Matsumoto Soba Festival was canceled. This is a restaurant in front of Matsumoto station where you can enjoy delicious soba and sake. This sake is on the night menu, but when we asked, they served it for lunch as well. Patry. Means "homeland" in French. Oddly enough, this is the second consecutive French-language sake. The aroma is of the restaurant's kitchen, so I can't really smell it. It is sweet. The nose smells like apples. The mouthfeel is very refreshing with moderate acidity. It is sweet. Delicious. Not good with soba. The Matsumoto Soba Festival was canceled this year because of the construction work at Matsumoto Castle. We had no choice but to eat soba at an izakaya. This is a limited edition from a very popular restaurant in front of Matsumoto Station, FURIN KAZAN. The reason why the label on the back is in English may be because there are many foreign customers. However, I wonder if the English labeling of Beian Daikoku is correct...

Ima-Nishiki De Ville DE VILLE means street corner in French. Sake aged in whiskey barrels. It has a fragrant aroma of dried grapes. It is a little sour and you can strongly feel the aroma of the barrels in your mouth. The tongue feels numb and hot, just like the aftertaste of distilled sake. However, the gentle sweetness retains its sake-like character. The portion of sake that evaporates and decreases as it ages in the barrel is called the "angel's share" and the portion that seeps into the barrel is called the "devil's share," but it seems that this sake had an increased alcohol content after aging in the barrel. Devil's share is getting in......you mean! Purchased at Ina Kantenpa Garden. They also gave me a free gift of mint tablets. Mitchie Makino!

Sweet and sour, faintly effervescent, with a delicious sweet aroma. No oakyness. Kurosawa nama-hashiroshi tokubetsu junmai nama sake mixed with some kind of sake. It tastes awfully good. Kurosawa Shuzo Autumn Sake Brewery Open House 2025/10/4 (Sat) 9:30-15:00 The tasting starts 5 minutes before 9:30, so it's pretty loose. Suki. Sake lees soup, amazake (sweet sake), kasuzuke (pickles with sake lees), and barrel sake will be served. 30 kinds of sake are available for tasting for 1500 yen (only the first glass is free for KEG). Local vegetables and snacks from restaurants are also available for purchase. The event attracts a wide range of customers from children to the elderly. The Matsumoto - Saku area is only a short drive by car through a tunnel, but by public transportation, access was moderately difficult as you had to make a detour to Kobuchisawa. But it was a great harvest for the gods.

Great Anglo-American War (Sweden vs. Russia, Poland, Denmark, Sri Lanka, etc.) Sweet apple aroma. Light. Slightly sweet, fruity acidity, apple-like. It is easy to drink due to its slightly low alcohol content of 14 degrees. Delicious. It was very hot on the day of drinking, but now that it is cooler, it tastes good warmed up again. We bought this sake at the Omachi drinking event on 9/6. This sake seems to have sold well. Delicious. By the way, we were also able to taste Iyari, which is also a pure rice sake, but it is said to be made by changing something (ambiguous). They are totally different in taste and both were delicious. Yaghi Dam Due to aging? Slightly sour aroma. Sake smell. Sweet and strong taste. Soft aroma of rice. Softly leaves a numb feeling on the tongue. Delicious. There is sand under the cap and you can feel the passage of time in the dam. Purchased at the dam sake festival site. I didn't feel much difference between 0, 1, and 2 year aged sake, but I bought the one with a longer aging period. It contains brewer's alcohol and sugar, but I'm not a Junmai-shu believer, so I enjoy sake.

good luck 9/9 hiyaoroshi ban (Nagano). Aroma of Japanese pear or apple and yogurt. Slightly sweet, soft sourness comes and drool. Delicious. It has the taste of Nagano Prefecture's sake, which is soothing. Delicious. Purchased at a liquor store. The system is that you can get the right to purchase rare sake with the ticket you get according to the amount of your purchase. Friendly to regular customers and heavy drinkers. Tends to expire. Kisofukushima sake brewery with an impressive toji (master brewer) who looks like a comic storyteller. Zenkichi is only available at special dealers, so this may be a first for home-drinking.

On the way home from the dam sake festival, I went to Liquor Shop Otake near Chikusa Station in search of local sake from Aichi Prefecture. There were some eye-catching sake from outside of the prefecture, but there was a large selection of sake from Aichi, Gifu, and Mie, especially Isobeki. This sake may possibly be available only here. Isun-hate, clear azure sky, or true?

Ori-Kawa dam A comparison of sake matured in the dam with different ages. 0 years old: Brilliant aroma. 1 year old Dry, light, and light. Slight sweetness. Round. 2 years old Yellow color. Aromatic aroma. More rounded. All three have different tastes, depending on the age of aging. But they are all made in different ways. Dam Sake Festa ~Maturity 3rd STAGE 2025~ is being held at Nagoya TV Tower Park on 9/13,14. This is a good event where you can enjoy drinking sake from 13 dam-aged sake breweries in Aichi and Gifu with the exemption of being able to study dams. The sake comparison set is a good deal. Nagoya-meshi (Nagoya food) is also delicious.

It is refreshing and yet delicious. It has an aroma of rice and is very tasty. This is the second time I have tasted this sake since I had it last year in Shizuoka. I am currently exploring the izakayas in front of Matsumoto station. But it will cost me a lot, so I'll keep it moderate. A teishoku-ya (set meal restaurant) that we had been curious about near Tai Man's well has moved to the second floor of Moriyoshi. We were able to have a drink at the opening celebration. The accessories decorated inside the restaurant and the waitresses' outfits are cute. But the manager is the cutest of all. You can also drink Gokotsuru. It's a good thing.
