The aroma of cheese. The sweetness of malt-sweetened sake and the sourness of yogurt. Spicy aroma of ginger and cinnamon. It's quite unique, but if you think of it as a lassi, it's quite delicious in its own way. This doburoku is made from the whey produced during cheese making. It is available at a direct sales place. The glass-walled koji room, tasting room, and sales floor are located in a stylish general store in the downtown area of Nagahama, northeast of Lake Biwa. When I was about to buy this limited edition, I was stopped by the owner, Mr. Kotaro (Happy Tarou) with round glasses, who used to work at Nanabonjari and gave me a small sample of Uki Uki Hop, which is recommended for first-timers, and even offered me ice cream. The ultimate in hospitality. It certainly has its quirks, but it goes well with curry. It goes well with miso. It goes well with cheese.

waah waah! (crying) Smells like diluted Fujiya Nectar. Oriented. Slightly effervescent. Slightly sweet, with a fruity acidity that makes you salivate. A little bitterness at the end. Very tasty. I posted the same sake of R5BY in April 2012, and I still like it. I love it. Picture 3 shows ramen noodles with clams steamed in Miyamazakura. The sake enhances the clam and the clam enhances the ramen. Winner. Sake breweries, ramen, and sweets in Saku are now collaborating. ~2/11. until tomorrow. Purchased at a liquor store in Matsumoto in January. r6/12 Manufactured. The brewery caught fire last year on 12/23. Even if it could reopen, it seems to take more than 2 years. When I go to Saku for ramen, I always see the burnt ruins of the brewery because it is located along the road I always pass by. Due to a combination of factors that moved me as described above, I ended up transferring the money to the support fund account opened by the Nagano Sake Brewers Association. I know it will be very difficult to get the building and equipment ready again, but I am supporting them in my small way.

This is a good sake. Purchased at a sake brewery. On the west side of Lake Biwa. A building with a sense of history on a large site. A large sake brewery. Sake lees were piled up in the sales area and smelled very good. They sell limited edition sake at the brewery on Saturdays and Sundays at the end of the month, and the day we rounded Lake Biwa was just that day. I had no choice but to buy it.

Sasai Shuzo's fresh doburoku launch event, Feb. 8 and 9 The event is to have doburoku drawn in a pot and wait for the president to put the label on it in a separate room while chatting with the store keeper (personal impression). You can buy the already-filled bottles at a later date. They plan to offer a variety of doburoku in the future. Blowout warning. This type of sake is familiar to sake drinkers, but they need to sell it where they can see it in order to prevent unfortunate accidents from happening to those who are not. So you have to go to the brewery to buy it. The difficulty of obtaining it is too much in favor of the locals.

Purchased at a sake brewery. The brewery has been brewing sake for 490 years and the building is a registered tangible cultural property. As you enter the building, you will see a deeply carved signboard on a zelkova tree with the name "Shichihon-yari" (seven lances) by Rosanjin. The seven lances, carved deeply into the zelkova tree, are said to mean a sake cup. I learned a lot from the store keeper, who told me not only about the brewery, but also about the local area. We then climbed up Mt. It is a low mountain, about 30 minutes one way, but when I reached the summit, I was as exhausted as the statue of Katsuie Shibata.

Purchased at a sake brewery. South side of Lake Biwa. Along a residential road with many cars. I was impressed by the very affable owner. The sake is called "yobi-shu," which means "sake that is drunk before a meal," with the hope that it will be used as a primer for the meal. Perhaps it was just a coincidence, but I had the impression that all the stores and sake breweries I visited in Shiga Prefecture were very hospitable. Tourist-friendly.

Purchased at a sake brewery. One of the sake breweries located near the Yasu River. The area is surrounded by fields, residential areas and Calbee's industry. Finished circumnavigation of Lake Biwa. We returned home safely and in good health. We returned home safely, although we could not say that we were. For the first trip home, we chose this one, which somehow seemed to be the fastest one. Kitajima Sake Brewery sells a limited edition at the end of every month, and it happened to be the day of the sale, so I bought it. Lucky me. It seems that reservations are accepted online, but it seems that reservations are not necessary if you go to the direct sales office. But there seemed to be only one bottle left. Lucky.

wrestler of second highest rank Sweet. With a cheese-like aroma. Not too sweet, but not too strong. Light for a sake at 13 degrees, but it is easy to drink and very smooth. Participated in Nada Gogo Kura-opening on 1/25 from 11:00 to 16:00 at Koshien-mae. A good time to talk with the brewery staff just before the end of the event. The brewery is famous for "One Cup Ozeki" sake. The brewery is huge. Is it a brewery or a factory?

We were on our way around Lake Biwa, but stopped by to attend Nada Gogo Kurakai (Nada Gogo Storehouse Opening) on 1/25 from 11:00 to 16:00 at Koshien-mae. So many people. It made me realize that I am a country person. Also, everyone who came and went spoke in Kansai dialect. Shochiku Ume is brewed by Takara Shuzo. Shochiku Ume Brewery is Tsuinaichi. Ninben. The original name was Sanzui, but it was broken down.

splendid alfonsino (Beryx splendens) Slightly habitual aroma. Something drooling in the mouth, whether it is a slight sweetness and sourness or umami. Finally, I felt a sensation like that of candy. It was delicious. It would probably taste good heated up. I drank it at a soba restaurant in Otsu station, but the relationship between the name of the restaurant and the sake is unknown. We are now traveling around Lake Biwa in safety and health. Day 2 Otsu via Kinomoto, Takashima, Konan, Koga, and Shigaraki. Quite tired. We crossed the Lake Biwa Bridge, so we failed to complete the round-the-lake trip.

chamaecyparis obtusa var. breviramea (ornamental variety of hinoki cypress) Quite thick and cloudy. Aroma of porridge, yogurt and cheese. Thick and rough on the tongue. Moderately sweet. The umami is strong. Delicious. Purchased at a sake brewery. It is a magnificent building along a small street in the downtown area in front of Komoro Station. In contrast to the weight of the entrance door, the talk is light. They have been making sake as their family business since the Edo period. We support them. Photo 3 shows ramen noodles made with this sake. It is a 2-minute walk from the brewery. It is delicious with dried fish and sake. Saku's sake brewery, ramen, and sweets are now collaborating. ~2/11

first Japanese bush warbler to chirp this year (i.e. spring) Fruity sweet aroma. Sticky, honey-like sweetness followed by numbness from the alcohol. I didn't expect it because of the plain label, but unexpectedly I quite liked the taste. Purchased at the Nakagome branch of Kiuchi Brewery. It is not made here, but you can shop for it. The new sake was also available in a dry version. Photo 3 shows yuzu salt ramen noodles made with Hatsuyugi. It was very tasty, but the yuzu aroma was so strong that I could not feel the sake. Mt. Asama seen from the large window of the restaurant was beautiful. Sake breweries, ramen, and sweets in Saku are now collaborating. ~2/11.

It is a small restaurant with only a counter, but the master and the regulars are easy to talk to and enjoyable. It is also nice to have curry from a popular curry shop right next door on the menu. However, the expenses are too much, so we are moderate. A standing bar attached to Hiraide Sake Shop. The bar is always full of customers, but today it was open for lunch and was empty, so we went in for the first time. The interior is retro and very small. The prices are quite reasonable. You can warm up your own sake on the stove. Nice place.

lesser cuckoo (Cuculus poliocephalus) Aroma of cooked rice. Light and dry. Slightly ginjo aroma. Mmmm. Purchased at Maruto Otsuka, a liquor store in front of Nakagome Station. The first generation of the family served an apprenticeship at Kurosawa Shuzo, and the name of the brewery, Maruto, is said to have been given to them. It is a local specialty. Picture 3 is Izutsucho's Iekei Ramen with Sake Lees. The aroma of the pork bone and sake is combined, and I think it tastes better than last year. This year, too, the event is a collaboration between a sake brewery and a ramen shop in Saku. This year, a confectionary shop also participated. I am going to Saku again every day.

protective cover on a clog Aroma of new sake. Softness, a little sourness, and a candy-like sweetness spread on the tongue, stimulated by the strong alcohol. The mouth is refreshed and easy to drink. Easy to drink. 19 degrees. This is a real treat. It was purchased at a sake brewery in Gyoda City, Saitama Prefecture, a town of ancient tombs, tabi socks, and jumangoku manju. Citizen M felt some sympathy for this brewery because it is located in the castle town of Oshijo. The proprietress is very amiable. She told us that the sake needed to be refrigerated, but since it was winter, it was safe to leave it outside, so she was working hard to keep the store without heating.

Risso's dolphin (Grampus griseus) Smells sweet like ink. Soft in the mouth, spicy when drunk. Dry taste. When warmed, the slight sweetness and sourness of the aftertaste stand out, making it even more delicious. One of two sake breweries in Kazo City, Saitama Prefecture. We bought it at the liquor store nearest to the brewery. Since it was New Year's Eve, we only had a chance to look around the brewery, but it is possible to buy sake at the brewery if you call in advance and let them know what sake you want.
