modern-style room Sweet aroma. Like candy. Very slight effervescence. Aroma of rice. Sourness and umami come in jabba-jabba. It's so good, it's so good. Purchased at a sake shop. The Imanishiki Tadpole Series is a limited edition sake made only from rice grown in the terraced rice fields near the brewery (worth a visit). Each season, the sake is released with different levels of maturity and with hind legs and front legs. This sake was purchased last month and is about to grow legs.

three famous ancient calligraphers: Emperor Saga and Tachibana (no) Nama sake is slightly effervescent. The aroma is fruity or floral. It has a sweetness. Surprisingly dry and dry. It has a light impression with a slight bitterness and numbness at the end. Slightly effervescent when heated. The aroma of rice and softness is relatively dry and light. I think I like this one better because it has more umami. Obtained through crowdfunding. This is a new brand from Misuzu Shuzo. It's a new low alcohol challenge for the sake brewery, and since it's from Matsumotohira, we have no choice but to support it.

silica sand Slightly effervescent. Muscat aroma. Soft, sweet and juicy with moderate acidity. The aftertaste is clean. A dessert-like, rewarding and popular taste. Delicious. Purchased at the Niigata Sake-no-jin (Sake Festival) on March 8 and 9. 4 sessions in the morning and afternoon. Attracted by the "secret sake" on the flyer handed out in the opening line, I went straight there right after the entrance, but it was already sold out at the session I attended. Oh no.

peak of the sun The very light and dry taste. Aroma of rice. Dry mouthfeel. When served with salty snacks, it refreshes the palate with its sweetness. Goes well with Murakami's specialty, salmon and tobaccos. Shigumo at lunch at a teishoku-ya (set meal restaurant) recommended by Shibari Tsuru! Only available in Murakami! Only now! I went to the sake brewery to buy it, but it was lunchtime. I went to buy it at the sake brewery, but it was closed for lunch. I went to buy it at the sake brewery, but it was closed for lunch. Shimehatsu Tatsura! Seasonal Nama sake. Sweet aroma. Slightly effervescent. Soft sweetness. Slight bitterness at the end. It is elegant and coherent. So this is Yamada-Nishiki... Purchased at a sake brewery. I was at the Niigata Sake Festival. The booth of "Shimehari Tsuru" was very popular. While waiting in line, I heard from the brewery that they were selling directly to the public, so I went to Murakami the next day. The next day, I went to Murakami in a residential area a little far from the city center. We were given a short tour of the magnificent 200-year-old building. The exhibition space was converted from a room where labels used to be pasted. Currently, rice milling and bottling are done at another factory across the river. As a side note, a very polite lady gave us a very good impression of the Miyao Brewery.

Mist Sweet and sour taste comes, slightly effervescent and numbing. Refreshing and refreshing on the throat. Very tasty and very likable. Goes well with strong tasting snacks. Goes well with shrimp and beans. This is brewed with 1:1 ratio of rice and water. Very rich and mellow. The rice is Tamakae. Purchased at a sake brewery. It is a big sake brewery east of Lake Biwa. When I went there, two buses were parked in the parking lot. The sales floor is spacious and has a high ceiling. There is also a restaurant in the renovated warehouse, which is just huge.

pine blossom Nama sake aroma. Dry taste. Tongue feels a little numb. Good acidity. The palate is refreshed. It is so-so delicious. But then it was empty. It is easy to drink. Purchased at a sake brewery. Takashima City on the west side of Lake Biwa. They have started producing whiskey in recent years, and although it is still in barrels, it will finally be released next year. The timing was good and I was allowed to enter the whisky warehouse. It was a nice aroma of the barrels. Photos are not for social networking. I guess he is a Noto Touji.

Fujiura school (training) complex There is little aroma. If I had to say, I would say plum. Slightly sweet. Slightly effervescent. Sour and refreshing. Delicious. Purchased at a sake brewery. Kusatsu-juku is located near the confluence of the Nakasendo and Tokaido Highway, and the townscape shows signs of having prospered since ancient times. Ota Sake Brewery's Doukan is also made in Hyogo Prefecture, so you need to be careful because there are two different locations in Sake-no-wa. The strange place is very detailed.

mistress (in a field) Banana aroma. Dry taste. Full of rice flavor. Sourness is also slowly coming through. Delicious. Purchased at the sake brewery. The shopping street in Iwamura Castle Town still retains its old-fashioned atmosphere. Since it was a holiday, I thought I would go for a drive and buy some local sake, so I stopped by Iwamura Brewery. It happened to be the opening day of the brewery. Iwamura Brewery's warehouse opening on Feb. 8, 9, 22, 23, Mar. 1, 2 The area was crowded with stores participating in the event. Since it was a good opportunity, we joined the brewery tour. It was very satisfying to see the steaming rice cooling machine, the fermenting tanks, and the pressing machine, all of which were in operation this morning. What's more! A tasting of mash pumped directly from the tanks! You can taste the yellow sake freshly pressed in the yabuta! I couldn't drink it because I was driving, though! It's a live snake, isn't it? The aroma of cheese. The sweetness of malt-sweetened sake and the sourness of yogurt. Spicy aroma of ginger and cinnamon. It's quite unique, but if you think of it as a lassi, it's quite delicious in its own way. This doburoku is made from the whey produced during cheese making. It is available at a direct sales place. The glass-walled koji room, tasting room, and sales floor are located in a stylish general store in the downtown area of Nagahama, northeast of Lake Biwa. When I was about to buy this limited edition, I was stopped by the owner, Mr. Kotaro (Happy Tarou) with round glasses, who used to work at Nanabonjari and gave me a small sample of Uki Uki Hop, which is recommended for first-timers, and even offered me ice cream. The ultimate in hospitality. It certainly has its quirks, but it goes well with curry. It goes well with miso. It goes well with cheese.

waah waah! (crying) Smells like diluted Fujiya Nectar. Oriented. Slightly effervescent. Slightly sweet, with a fruity acidity that makes you salivate. A little bitterness at the end. Very tasty. I posted the same sake of R5BY in April 2012, and I still like it. I love it. Picture 3 shows ramen noodles with clams steamed in Miyamazakura. The sake enhances the clam and the clam enhances the ramen. Winner. Sake breweries, ramen, and sweets in Saku are now collaborating. ~2/11. until tomorrow. Purchased at a liquor store in Matsumoto in January. r6/12 Manufactured. The brewery caught fire last year on 12/23. Even if it could reopen, it seems to take more than 2 years. When I go to Saku for ramen, I always see the burnt ruins of the brewery because it is located along the road I always pass by. Due to a combination of factors that moved me as described above, I ended up transferring the money to the support fund account opened by the Nagano Sake Brewers Association. I know it will be very difficult to get the building and equipment ready again, but I am supporting them in my small way.

Kamiya Heiyo Shoten A little sweetness behind the slight effervescence, but it may be dry. Alcoholic and pear-like aroma. Moderately sour. There is a slight aftertaste on the tongue. This is a good sake. Purchased at a sake brewery. On the west side of Lake Biwa. A building with a sense of history on a large site. A large sake brewery. Sake lees were piled up in the sales area and smelled very good. They sell limited edition sake at the brewery on Saturdays and Sundays at the end of the month, and the day we rounded Lake Biwa was just that day. I had no choice but to buy it.

rare occurrence Smells like a flower. Like a rose. Sake is amazing. Slightly effervescent. Rice is in abundance. Not too sweet and easy to drink. You can finish it quickly. Sasai Shuzo's fresh doburoku launch event, Feb. 8 and 9 The event is to have doburoku drawn in a pot and wait for the president to put the label on it in a separate room while chatting with the store keeper (personal impression). You can buy the already-filled bottles at a later date. They plan to offer a variety of doburoku in the future. Blowout warning. This type of sake is familiar to sake drinkers, but they need to sell it where they can see it in order to prevent unfortunate accidents from happening to those who are not. So you have to go to the brewery to buy it. The difficulty of obtaining it is too much in favor of the locals.

Purchased at a sake brewery. The area of Koka City with its fields and residential areas. The sake bottles are lined up in a showcase at the entrance of the office, with three bottles of new sake on the outside for show. I had to buy them because they were next to two bottles with cool labels. I apologize for being so busy. New sake is ready! pawnshop Tangy and skunky. Slight fizziness. Sweetness in the dryness. It has a unique hardness that is different from bitterness. Tamakae is a unique rice, which is very interesting. Purchased at a sake brewery. The brewery has been brewing sake for 490 years and the building is a registered tangible cultural property. As you enter the building, you will see a deeply carved signboard on a zelkova tree with the name "Shichihon-yari" (seven lances) by Rosanjin. The seven lances, carved deeply into the zelkova tree, are said to mean a sake cup. I learned a lot from the store keeper, who told me not only about the brewery, but also about the local area. We then climbed up Mt. It is a low mountain, about 30 minutes one way, but when I reached the summit, I was as exhausted as the statue of Katsuie Shibata.

white water and black water Lactic acid aroma. Aroma of rice from the second sip. Soft and elegant mouthfeel. Not too sweet and not too dry. Saliva from the acidity. Easy to drink. Purchased at a sake brewery. South side of Lake Biwa. Along a residential road with many cars. I was impressed by the very affable owner. The sake is called "yobi-shu," which means "sake that is drunk before a meal," with the hope that it will be used as a primer for the meal. Perhaps it was just a coincidence, but I had the impression that all the stores and sake breweries I visited in Shiga Prefecture were very hospitable. Tourist-friendly.

northern island Rice + grape aroma. Slightly sweet. Light numbness due to micro-foaming, followed by a slightly bitter taste. Refreshing in the mouth. Can be served alone or with a meal. Very tasty. We returned home safely and in good health. We returned home safely, although we could not say that we were. For the first trip home, we chose this one, which somehow seemed to be the fastest one. Kitajima Sake Brewery sells a limited edition at the end of every month, and it happened to be the day of the sale, so I bought it. Lucky me.
