You can gobble it down. Takaten is amazing. We bought it at a supermarket near the Takaten Sake Brewery. There is a huge selection of sake from Okaya and Suwa. Takaten has had a sake called "Rock" for quite some time, which is recommended to be mixed with ice and watered down, and they added this to their lineup about 5 years ago in response to the high demand for junmai sake.

changing for the better Quite nice aroma, like fresh fruit. Sticky and alcohol-derived numbness on the tongue. A bit of bitterness stands out. When ice is added, it transforms into a sweet, soft, and refreshing taste. A great sake that can be drunk endlessly when paired with a meal. Umeyesu. Perfect for summer. Takaten recommends high alcohol content sakes, including this one, to be drunk on the rocks. The locals also serve regular sake on the rocks, though. Purchased at a sake brewery. The urban area of Okaya. A killifish and three whoopers, the toji's hobby, greet you. No names yet. Last time, there was only killifish.

The Junmai Unfiltered Nama is said to be popular, and there is a wide selection of different rice varieties. We bought the recommended Hidahomare. Deep in the mountains of Nakatsugawa. As our predecessors have posted on Sakenowa, it was a long way to the brewery. It is important to drive with respect for others. I feel I was able to accumulate virtues along the way. There is a parking lot for about 4 cars under the hairpin curve before the brewery, and I felt their welcoming attitude. It seems that they also have a corner bar. They also have a selection of Moayashimono and Natsuko sake. The whale on the receipt is cute.

Oroku Hachimaru It has the astringency and umami typical of 80% low-polishing sake, with a salami-like aroma, but also a strange elegance without any unpleasant tugging. We are currently exploring izakaya (Japanese-style pubs) in front of Matsumoto Station. However, the cost will be high, so we are trying to keep it moderate. This restaurant opened last week next to the ramen shop Hizuki. The location and the fact that the restaurant opens at 3:00 p.m. are in line with the drinking habits of Matsumoto. The young and pleasant master is a one-man operation. The food is delicious and the sake selection is maniacal, with four brands from within the prefecture and four from outside. I think it's seamless. We will spread the word in a small way. Correction. The sake brands were 4 in-prefecture and 6 out-of-prefecture.

Since I was in Nagoya, I went to Liquor World 21 Shibata in front of Nagoya Station to buy some local sake. I learned about the Mizutani Shuzo Fire from a flyer in the store and bought some. It is made by Yamazaki Goushi Kaisha. Both breweries are located in the Mikawa Bay area. I had never heard of them before. I went to SAKAE SAKE SQUARE 2025. It was hot. I didn't raise anything to SAKE WA, but I was able to learn about many sake breweries in Aichi and Gifu, and I was able to tell Mr. Yamauchi Sake Brewery that his fumamori was delicious, so I am glad that I went.

We visited a sake brewery last week. Deep in the mountains of Nakatsugawa. Even the car navigation system was lost. I called in advance and was given a tour of the brewery because it was a day when the brewer was managing the warehouse. The brewery is handmade with old-fashioned (and dilapidated) equipment and produces less than 50 koku (50 koku = 5,000 sachets) of sake. We were very grateful for the sake. I was told that the sake was sold by the previous generation in the main house, but I could not buy it because he was not home, so I bought it at the nearest store (30 minutes away by car). I thought that the pop-up sign in the store was promoting Yamauchi Sake Brewery, but it turned out that the owner of the store is a toji (master brewer), so they have a close relationship with the company. The owner of the store is a toji (master brewer), and I was told that he was the one who started to rebuild Yamauchi Brewery, which was about to go out of business. I am grateful for and respect his enthusiasm.

Purchased at a sake brewery. The brewery is famous for its hon mirin (Japanese rice wine). Hanamigura," for which there are many signs along the Shirakawa River, is the sake brewed here. When you enter through the many wind chimes, you will find a beautiful sales area and the aroma of incense sticks. Today, the brewery was holding a "kurabiraki" event, with amazake (sweet sake) being served, tastings, and a pickle shop. This sake is directly pumped from a tank. The Hichisou set meal at the brewery cafe was delicious.

splendid alfonsino (Beryx splendens) Aroma of rice cake. Aroma of barley. Dry and smooth. The flavor is simply delicious. Delicious warmed up. It's great in an air-conditioned room in the summer time. We bought it at a sake brewery when we went around Lake Biwa in January. The name "Kinkame" comes from the fact that the Ii clan gave it the name of Kinkame Castle, which is also called Hikone Castle, but they were too proud to call it that so they called it "Kinkame". When I told him that I drank Kinkame at Kinki-an, a buckwheat noodle shop in Otsu Station, he said that it had nothing to do with the Okamura head family. Also, I remember that the waiter's conversational tempo or pause was very Kansai-Japanese.

Aroma of dried fruits. Mild mouthfeel, subtle sweetness, saliva-stimulating acidity astringency. Quite yellow. I was worried because it had been stored at room temperature for three years without the right time to open it, but I was relieved to find that it tasted surprisingly good. I bought it at a souvenir shop in Tokorozawa Sakura Town a few years ago. It was made by Tenranzan in Hanno, as there is no sake brewery in Tokorozawa. Although Tokorozawa is the birthplace of aviation, it is not a town where people come all the way from other places, but suddenly an installation spot called the Kadokawa Museum has appeared, and I am looking forward to its future.

Or rather, you can only buy it at the sake brewery. The brewery is located in downtown Matsumoto. The management changed this year and they have changed their focus from traditional sake to junmai (pure rice) sake. Expectations for the future. It is really recent, so the pamphlet and website are not ready yet, but they have opened an Instagram page, so please check it out. You can buy on Saturdays and Sundays if you call in advance. Even if it is locked and you can't get through on the phone, you can still buy it if you persistently attack.

the Bank of Japan's quarterly Short-term Economic Survey of Principal Enterprise in Japan Ginjo aroma like maitake mushroom. Soft. It is dry but has the sweetness of rice. There is an astringent taste at the end. When served with a meal, the ginjo aroma enhances the taste. Purchased at a sake brewery on the day of the Firefly Festival. It was raining. Tatsumaru label commemorating the 70th anniversary of Tatsuno Town, limited to 700 bottles. At a glance, it is hard to believe it is pre-dawn. Inside is a regular sake, Tatsunogin.

Sweet, tender, fresh and delicious. They use rice from Tokorozawa and have it made at Igarashi Sake Brewery in Hanno. Sake Brewery Fest Made in Saitama 2025 June 21,22. Tokorozawa Sakura Town's first sake event. A very satisfying and divine event with quite a lot of tasting tickets for the price. Oh no. It is so impressive that they are making rice in Tokorozawa, where it is said that they used to make sweet potatoes that grow with little water because there is no well water. This sake is only available at Hinoya Sake Shop.

Purchased at a liquor store in Matsumoto. A sake brewery in Nakagomi, Saku City. It is a summer sake from Kame no Umi. The picture of a cicada on the label is cute. Kame no Kai's regular sake lineup is simple and easy to understand.

Norikazu Shigeta Toji 18 Makimizu Junmai Daiginjo Competition standard 35% Yamadanishiki, pear-like aroma. Slight sweetness. After the first sip, it becomes numb, then gradually acidic. I have a feeling! An American SAKE that came to Japan through a partnership with Hakkaisan. This is the second bottle. When I drank the first bottle in April, I thought that I wouldn't go out of my way to choose an expensive American SAKE, but as the price of rice has skyrocketed in recent years and the price of sake made from rice also shows signs of going up, I have reconsidered whether it might be an option if the imported product is this good and if the price range is on par with domestic products.
