first Japanese bush warbler to chirp this year (i.e. spring) Fruity sweet aroma. Sticky, honey-like sweetness followed by numbness from the alcohol. I didn't expect it because of the plain label, but unexpectedly I quite liked the taste. Purchased at the Nakagome branch of Kiuchi Brewery. It is not made here, but you can shop for it. The new sake was also available in a dry version. Photo 3 shows yuzu salt ramen noodles made with Hatsuyugi. It was very tasty, but the yuzu aroma was so strong that I could not feel the sake. Mt. Asama seen from the large window of the restaurant was beautiful. Sake breweries, ramen, and sweets in Saku are now collaborating. ~2/11.

But the cost is too high, so we are trying to keep it moderate. Izakaya in Matsumoto Uramachi. It is a small restaurant with only a counter, but the master and the regulars are easy to talk to and enjoyable. It is also nice to have curry from a popular curry shop right next door on the menu. A very nice place.

Pineapple-like aroma. Refreshingly dry in the mouth. When swallowed, it is tightened by acidity. Very tasty. We are exploring izakaya (Japanese style pubs) in front of Matsumoto station. However, the expenses are too much, so we are moderate. A standing bar attached to Hiraide Sake Shop. The bar is always full of customers, but today it was open for lunch and was empty, so we went in for the first time. The interior is retro and very small. The prices are quite reasonable. You can warm up your own sake on the stove. Nice place.

lesser cuckoo (Cuculus poliocephalus) Aroma of cooked rice. Light and dry. Slightly ginjo aroma. Mmmm. Purchased at Maruto Otsuka, a liquor store in front of Nakagome Station. The first generation of the family served an apprenticeship at Kurosawa Shuzo, and the name of the brewery, Maruto, is said to have been given to them. It is a local specialty. Picture 3 is Izutsucho's Iekei Ramen with Sake Lees. The aroma of the pork bone and sake is combined, and I think it tastes better than last year. This year, too, the event is a collaboration between a sake brewery and a ramen shop in Saku. This year, a confectionary shop also participated. I am going to Saku again every day.

protective cover on a clog Aroma of new sake. Softness, a little sourness, and a candy-like sweetness spread on the tongue, stimulated by the strong alcohol. The mouth is refreshed and easy to drink. Easy to drink. 19 degrees. This is a real treat. It was purchased at a sake brewery in Gyoda City, Saitama Prefecture, a town of ancient tombs, tabi socks, and jumangoku manju. Citizen M felt some sympathy for this brewery because it is located in the castle town of Oshijo. The proprietress is very amiable. She told us that the sake needed to be refrigerated, but since it was winter, it was safe to leave it outside, so she was working hard to keep the store without heating.

Risso's dolphin (Grampus griseus) Smells sweet like ink. Soft in the mouth, spicy when drunk. Dry taste. When warmed, the slight sweetness and sourness of the aftertaste stand out, making it even more delicious. One of two sake breweries in Kazo City, Saitama Prefecture. We bought it at the liquor store nearest to the brewery. Since it was New Year's Eve, we only had a chance to look around the brewery, but it is possible to buy sake at the brewery if you call in advance and let them know what sake you want.

rare occurrence It is very good. It has a gorgeous citrus-like ginjo aroma. It has a refreshing mouthfeel, sweetness, and bitterness. It is like grapefruit. The aroma is strong. It is really good. Purchased at a sake brewery. A small new sake release event held on December 28 and 29. The sake is freshly pressed in a small pot and bottled on the spot with a ladle. The aroma of the sake is so pleasant that it brings a smile to the face of the customer. The sake is made with Akita-style flower yeast AK-1 (Association No. 1501), which is a new challenge for the brewery.

It is brewed and matured with Hidahomare rice grown with compost made from the brewery's sake lees called "Sake Lees Reduction Compost Farming Method".

long snouted lancetfish (Alepisaurus ferox) Quite active opening caution. Let it leak in the kitchen for a good 10 minutes before opening the bottle. The aroma is full of milk. It is very cloudy and shrieky. When you put it in your mouth, it tastes bitter and dry. After drinking, it tastes like milk again. Or is it the aroma of rice? Then, the umami is gradually absorbed. Christmas is coming soon, so I thought I'd try something a little like that. Isn't it like that? A sake brewery in Iiyama. I feel a sense of familiarity just because I've been there before.

The silver one on the right was served hot. Soft and a little sour. It is delicious with a strong rice flavor. It was cold outdoors, so the hot sake soaked through. Suginomori Sake Brewery had a stall at the event being held on December 14 and 15 in front of Matsumoto Parco. The car is equipped with a sake server and is usually parked in front of a bar called sagyobar near the sake brewery in Naraiyado. When I went to Naraijuku the other day, I was on a break. When I told him that I was on a break, he apologized to me. They are very friendly and easy to talk to. Cedar forest is very expensive, so I took this opportunity to meet them for a drink.

Ena-san Pure When poured, it smells like pears. Sweet and sour, slightly carbonated, slightly bitter. It tastes like a reward and a treat. Delicious. On 11/23, on the way back from the Mizunami and Kasahara brewery openings, I took advantage of the time I had to make a one-stop transfer at Nakatsugawa Station and bought some at the brewery. It was the first new sake brewed this year. The brewery is located in a nice area that still retains its old townscape. Since we were on a slow train, we realized that the Nakasendo road connects Shiojiri to here.

fresh verdure A twangy aroma of alcohol. Sourness and numbness after what at first seems tasteless on the tongue. It also has a feeling like burnt sugar. As the brewer says, it is astringent when heated. When I visited the Kozaemon brewery the other day, I bought this sake at this brewery, which is about a 2-minute walk from the brewery. A black cat walked up to greet me. But then he dashed outside.

trifoliate orange (Poncirus trifoliata) Good aroma like green apple. Dry and refreshing. Tongue tingling after a while. When paired with a meal, it refreshes the palate and is pleasant. Good. Limited edition for Kiso-Village. Made with local ingredients. Purchased at Sake Brewery YUKAWA, a sake brewery and bar (and home) that opened last week. I had a chance to talk with the president. He said that he had not originally planned to open a store, but after some circumstances, he decided to do so. Yabuhara was originally a post town along the Nakasendo Highway and has a nice atmosphere. The streets are narrow, so it is fun to stroll around on foot. Before, you could shop only on weekdays at the office past the warehouse. Now they are open on Saturdays, which makes me happy. But it was also fun to shop while having a casual conversation next to the labels being pasted on.

Fine effervescence. Aromas of rice and lactic acid. Sweet and creamy. Moderate bitterness. A dangerous sake that is easy to drink despite its 18% alcohol content. I buy this sake every year because I associate the time of year it goes on sale with the time I change my tires. This year, too, I changed my tires and bought it at a sake brewery. This is the third time I've posted about Sake-no-wa. The brewery opening in May this year was a 160th anniversary project, so next year is undecided.

A sweet aroma with a hint of miso and soy sauce. Slightly sweet, but immediately after the sweetness, the acidity comes. Then, umami. The taste is strong. Finally, a sense of maturity similar to numbness and bitterness. I like it. It's interesting because it doesn't seem to be like Daisetsuken. On the way to Matsukawa Village the other day, I bought this at a roadside buckwheat noodle shop and a convenience store. It is a limited-quantity product. A search for the article on this rare item reveals that it was made by a local farmer to promote his sake rice Hitogokochi, and that it was only sold in 2006. The frightening name comes from "Gakki-dake" (Mt. Gakki).

I appreciate heated sake because of the cold weather. Sanzenzakari New Sake Festival 11/23 A little over 20 minutes by shuttle bus from Tajimi Station. One hour on foot. The area is home to factories and residences of pottery makers. Sake brewery tours are offered every 30 minutes, and the tour guide gave us a detailed explanation of the different types of sake made from raw sake. He said that most of Sanzenzori's sake is classified as nama-shu. Mino-ware tiles, a local industry of Kasahara, are used as tasting tickets. It is nice to specialize in individuality. Mino one-day trip to a brewery barbecue ladder trip 2/2nd house. Probably there are other drinkers besides me who are visiting the same brewery. However, it is an excursion until returning home.

This was my first visit to Sanzenmori, and I think it is an interesting brewery specializing in dry sake. There are many sake dealers nearby, so I have more choices.

The QR code allows you to read a detailed explanation of each sake. You can also make reservations for what you can and cannot purchase from the tasting list, and you can play ring toss. Be careful of the grooves on the floor. As a first time drinker of Kozaemon, I was recommended a standard Kozaemon sake. It was my favorite one. This is the first half of a one-day trip to Mino. Since it was only available at the sake brewery, I couldn't buy it at the brewery, so I ended up buying it at a store I learned about after I returned home. Hitogokochi harvested in the rice paddies within sight of the brewery is used. The brewery's claim to fame is that it makes use of the bounty of the land in Matsukawa Village. Indeed, the area around the brewery is a nice place where one can feel nature. There is no public transportation, so a car is necessary. They are planning to sell drier and sweeter versions of this sake in December and January. However, they will only be available at special dealers. You can only buy white sake at the brewery. You can only buy white sake at the brewery....

Iraka Sake Brewery The aroma is like rum raisins. The flavor comes from the depths of the microbubbles. It is dry, and the bitterness tightens it up. The aroma is showy, but strangely enough, it does not disturb the meal. It's nice. It is delicious. One of the three most mysterious sake breweries in Nagano Prefecture (personal opinion). It was. Purchased at a sake brewery. A new sake brewery in Matsukawa Village. At the moment, the sales floor is open on Saturdays from 1pm to 5pm until the end of December. The "White" is a limited edition for Matsukawa Village. It is only available at the brewery and at Farm Ichiryoku, a five-minute drive away. Now you can get sakekasu like rice cakes (a lot). As it was the first product from the new brewery, I was very enthusiastic and checked the sales date as soon as the phone number was posted on the official website and made a reservation. I thought it was going to be more of a festival. But I was happy to talk a lot. Now I have a chance to be an old-timer.
