This is the sixth brewery in the Saku Sake Brewery series. Located in a historic town along the old Nakasendo road, this is a place I would like to visit again.
The taste is very strong as it is called "mellow" sake. It is 18% alcohol by volume. It has a bitter taste on the tip of the tongue, followed by a sweet sake-like flavor.
I heard that there is a way to enjoy it by aging it after buying it. Next time I'll let it mature a bit and try it with mizutaki in winter 😋.
National Sake Fair 2025 part74
Nagano (1)
I lost everyone when I came back from the restroom, so I acted alone until the end.
From here on, I'm going to drink only the brands I'm interested in with pinpoint accuracy.
Takeju Honke Sake Brewery in Saku City
I've been curious about this sake brewery for a while.
They also produce a sake called "doburoku" which is written as "126" and I've never seen it before💦.
I've seen Gyoenchiku at Yodobashi before, but it was an expensive one.
Polishing ratio 70%, Miyamanishiki 18%, Sake degree -9, Acidity 2.0
1,700 yen (price at the venue)
Aged at room temperature for more than half a year.
It is matured, but it is delicious with a strong umami flavor.
The label says it will be better if it is left at room temperature for a few more months, but I think this is about right for me.
It seems to have won a gold medal at the Wineglass Delicious Sake Awards 2022!
Norikazu Shigeta Toji
18 Makimizu Junmai Daiginjo Competition standard 35% Yamadanishiki, pear-like aroma. Slight sweetness. After the first sip, it becomes numb, then gradually acidic. Very beautiful taste.
19: 35% Yamadanishiki, the standard for Daiginjo-shu entered in the Misonotake Daiginjyo Competition.
Slightly lemony aroma. Refreshing and delicious. Slightly sweet and slightly effervescent. The lingering aftertaste is a bit sticky.
Compare with R5 Daiginjyo for the competition by Takeju Sake Brewery. Excellent.
The third and last of the SAKE country tourism achievement prizes. Sake brewery stamp rally in Nagano Prefecture. A wonderful plan whereby those who complete all the breweries receive 6 bottles from 3 random breweries.
The following have already been submitted.
14 Junmai Choujyu Kurekuchi
15 Junmai Chouji Junmai Ginjo Kinmon Nishiki Ajiginjo
16 Misonotake Junmai Ginjo Murasaki Tsuyuuso
17 MAKISUI Junmai Daiginjo Bottled and once fired
As for my impressions after finishing the tour, I could recognize that each of the various brands has its own brewer. Thank you.
Also, as a brewery tour enthusiast, it is a very useful tool as an excuse to break into breweries that do not sell their sake at retail.
Also, there are many breweries that do not have a store, so I think I have gained some courage.
There are prizes even for 10 stamps, so if you are planning to visit Nagano, please give it a try.
bamboo shoots boiled, sliced, fermented, dried or preserved in salt, then soaked in hot water and sea salt
16 Misonotake Junmai Ginjo Murasaki Tsuyuuso
Weak pear aroma. Slightly sweet if you say it with the sense of tongue. Like water. (Thin...)
17 MAKISUI Junmai Daiginjo Bottled and fired once
Aroma of lemon with a hint of rummy + matured aroma. The taste is firm. It has a sweet taste, but it is dry when you swallow it.
Perhaps it is because I drink it while watching sumo wrestling, but Yamae-nishiki seems to be the name of a wrestler.
This is the third prize for achieving SAKE country tourism.
I bought a bottle of Chiba sake even though there was still some left, so my fridge is feeling very overwhelmed.
The following has already been posted.
14 Junmai Jujyu Kurekuchi
15 Junmai Junmai Ginjo Kinmonishiki Ajiginjo
The following will be added or posted separately.
18 MAKISUI Junmai Daiginjo Competition standard 35% Yamadanishiki
19 Misonotake Daiginjo Competition standard 35% Yamadanishiki
bamboo shoots boiled, sliced, fermented, dried or preserved in salt, then soaked in hot water and sea salt
14 Junmai Juju-kirekuchi
Yellow in color. When cooled, it has a habit of lactic acidity and aged aroma. Warmed. The nose has a woody, savory aroma. It has a fruity and gentle sweetness as well as a sense of rice. A little sour. Numb, sharp and delicious.
15 Chouji Junmai Ginjo Kinmon Nishiki Ajiginjo
Slightly pear aroma. Ume. Soft, subtle sweetness and a refreshing citrus-like feeling. A little bitterness at the end. It has been a year since it was made, but I think it's good.
The sake is named "Shigetu" after the sake brewer Takeshige and the toji Shigeta. The toji explained this to us when he opened the brewery in the past.
SAKE Country Tourism Achievement Prizes. The third prize is from the Takeju Sake Brewery in Saku. It is one of my personal favorite sake breweries.
The second batch of sake still remains, so the pressure in the refrigerator was tremendous.
The following will be posted separately. A lineup to savor Toji Shigeta Hoichi.
16 Misonotake Junmai Ginjo Tsuyuuso
17 Makisui Junmai Daiginjyo Bottled and fired once
18 MAKISUI Junmai Daiginjyo Competition standard 35% Yamadanishiki
19 Misonotake Junmai Daiginjo Competition standard 35% Yamadanishiki
A work colleague gave it to me as a souvenir from a trip to Nagano. My first bite was "much sweeter than I expected"!
It's not fruity, but more like a smooth and sweet taste. It is delicious and smooth on the palate!
The sweetness is followed by a slight sourness and bitterness.
At 300ml, I think it will be gone in a day, but I'll leave it for a few days.
I'm lucky to get this level of sake as a souvenir!
YOMOYAMA NAGANO in Osaka⑳
The booths of "MISONOTAKE" and "MAKISUI".
This is another brand we didn't know.
Misonochiku: Newly brewed Junmai-shu (Junmai-shu with new rice).
The overall taste is firm, with little acidity, a full flavor of rice, and a deep, thick sweetness. This is a delicious junmai sake.
Murasakitsuyuuso Junmai Ginjo
Easy to drink at a low 12% alcohol content, but with a strong umami and sweetness 😋.
Juniroku Light
Doburoku with 4% alcohol. It has a strong lactic acid bacteria but is sweet and tasty. It is said to be delicious even when frozen like a sherbet.
The picture is a little blurry...
All of them are delicious.
The brewer was shy and reserved in his voice 😁.
Good evening, Mr. Nemuchi.
I had heard rumors about Juniroku when I started drinking sake, but it was almost gone from my memory because it was not sold anywhere 😅I guess I have to buy it 🤔.
Hello bouken, you are quintessential to know ☀126 😉 Let's drink and review it before it disappears from our memory 😁I think Gyoon bamboo is close to bouken's taste 😋Pot it or go to the warehouse... 🤣.
🎍
A belated Happy New Year ㊗️
Finally our HP has recovered: ❤️🩹
At the time of the earthquake, I was preparing for an away-from-home relatives' banquet and had four oil heaters on and was frying fried chicken. Anyway, I moved to put out the fire, but the tremors were absurdly long and hard. I had to hold my breath during the shaking. The quake was intensity 5, but I don't think there was any damage. I hope those who were affected by the earthquake can return to their normal lives soon.
The away party will be held amidst the earthquake early warning. We had no choice but to drink, so we opened a bottle of this sake. It seems to be a sake from Saku. It is easy to drink, perfect for eating, and I gobbled it up. It was delicious 😋.
5.5 drinkers finished two bottles 🤣.
Well, this is how we will do it again this year.
Oh, I'm going to work so hard 💪.
Ane-san, Happy New Year 🎍That was a tough earthquake early in the New Year. It's great to have a party in the midst of it, though 😅Please give me your best wishes this year, too👍.
Ane, Happy New Year 🗻🦅🍆 and best wishes for the new year 🙇♀️⋆꙳You've been drinking quite a bit since the new year 😊Quite a feat ✨Work hard and go drink good alcohol🥳👍
Congratulations to Masaaki Sapporo🎍!
I guess it's because we gathered here. I was so tired of thinking about everything that I decided to start drinking in the middle of the meeting😅.
I'm looking forward to working with you 🤲.
Congratulations, Maecin-san 🎍.
I didn't drink any water and fell asleep in the bath afterwards (what was I going to do when the aftershocks came?), but I didn't get a hangover: ✌️
I'm working from today~.
Happy New Year, Ane!
What a tough start to the New Year! I am glad that your relatives and Ane-san are safe.
Surely, we might have to have a banquet if we can ensure their safety...
I look forward to working with you again this year 🎍.
Congratulations Joe 🧧!
I don't know about aftershocks when I get drunk! I really wish you had broken up....
Nice to meet you too. My gym teacher recommends muscle training over pilates to me😅.
