When it is cooled down to a crisp, you can feel the aroma of maturity, and when it is on your tongue, the sourness and sweetness are gradually released. Delicious. When heated, it has a soft and gentle sweetness and a sourness at the end. It tastes even better when warmed. So it was heated in the mouth.
Purchased on 10/25 at the opening of the brewery.
It is a special limited edition sake made from Koshihikari rice and aged in a cool place in the brewery. I also enjoyed the explanation of the sake by the toji (master brewer). It is an attractive sake brewery, but access by public transportation is a hurdle.
