Hinode Tsuru Junmai Ginjyo Miyamanishiki 60% 15% 720ml 1980yen We also bought a bottle of Honjozo at the brewery, but it was a completely different impression. The Honjozo was a little peculiar. This one is bitter with concentrated flavor and acidity. It is not at all dull. It is not flashy, but rather calm and delicate. The sweetness is graceful and has the taste of a first-class sake. The rice is local Miyamanishiki from Hitachiota. I found out that the heir who returned to his hometown had designed, brewed, and engineered the sake in a new attempt. The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

At the usual BAR (4) I was served hiya oroshi to my liking 😊. Almost no top shelf aroma. The aroma is gentle and fruity like white peach or muscat, with a strong umami. This seems to be a regular sake of Amanurin! After bottling, the sake is matured slowly in the brewery. Mellow and full-flavored with a lot of umami!

The rice used is Comet from Hokkaido. You can't ignore the sake made with Hokkaido rice, can you? It has a clear and refreshing taste typical of Comet. It has a gentle acidity and a good sharpness, so you can drink it easily. It is well-balanced with a good taste of rice. I️ think it's a versatile sake that can be used in any situation. Hakone Drink Comparison Set (2) On March 1, after a year-long event, I went on a trip to Hakone as a way of consolation! The local sake was served to compare with Japanese kaiseki. It was my first time to try Hakonezan! This is the spiciest sake in the group. It is a dry ginjo-shu as you might imagine, but it is moderately rich and very good as a mid-meal drink. Of course, it goes well with ingredients as they are, but it also goes well with dishes that have been added, such as those using dashi (Japanese soup stock)!

I ate okonomiyaki, went to an izakaya (Japanese style bar), and at the end, I got the last of a bottle of sake that the owner recommended 😊I got the last of a bottle as a courtesy 😋. It's like a summer sake with a refreshing taste 😚 and a crisp aftertaste 😋. It went well with oysters, small sardines, conger eels and other specialties. ❤️ I'm going to work hard tomorrow and then go back to the liquor store 🥳.

I saw a lot of Shuyoshi's La Chante at a souvenir shop in Akita. It was stored at room temperature in the sun, so I bought the one from the liquor store's refrigerator. I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

I drank it at a tasting and bought it because it tasted better than the sake labeled by Machida Sake Brewery. It is high quality for about 1,500 yen. It seems they use a sake rice called Maikaze, but they don't know if they will be able to produce it next year. I hope they will sell it again next year...
