Cold. Purchased at Fukuda Sake Brewery. I bought a lot of it, so I drank it all at once to reduce the amount. It is a sparkling type, not too sweet, not too spicy, and easy to drink, but it has 14% alcohol content. I am not a fan of carbonation, so the carbonation was stronger than I expected, and it hurt my nose. I think I prefer Nagasaki Bijin if they are made by the same brewer.

Crystal silver coloration. Melon, apple, etc., ethyl caproate. Ueshin powder, white dumplings, lime. Elegant sweetness, acidity is smooth, full-bodied and pleasantly bitter. While it has a sweet aroma, it is relatively dry and clean as a taste. Personally, I quite like the taste.

There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. The first saké I had last time was a clear saké of Yumeginko from Bishu Kotobuki with No.7 yeast. It is a draft sake, but it was stored at room temperature at the store, so we served it as it was. Finally, we had a bottle of Yumeginko +7 Sumi-shu. This was also freshly opened. First, it was served at room temperature. The first aroma is faintly sweet. Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

The first Matsumine no Fuji. Low milling of 77% Dewanosato rice from Yamagata Prefecture. The top aroma is sweet and fruity. The aroma is reminiscent of pears and peaches, and is so gorgeous that it is hard to believe it is junmai. The taste is not as sweet as the aroma suggests, and the mouthfeel is clean with a touch of umami. There is a faint bitterness in the aftertaste, but it is not difficult to drink. There is also some fresh gassiness from the secondary fermentation.

Sake from a brewery famous for Ryujinmaru. It has been a very long time since Kirakuri. After Shikishima, tkmts-san was drinking Ryujinmaru, and I wanted to try something of Takagaki-san's sake, so I chose Kirakuri. This time it was an unfiltered raw Nakadori. It has a caramelized taste with sweetness and a sense of maturity. It's just a coincidence that there is a succession of sakes with a sense of maturity, such as Washin, Shikishima, and Kirakuri.

This is the first time I've seen this warehouse. The rice used is Maikaze. As the name suggests, everything, including the yeast, is from Gunma, and it seems to be an annual event. After a few drinks, it was quite late, so I headed home while eating a golden dharma bento commemorating the 140th anniversary of Takasaki Station. I will close my Gunma trip with "Akagisan" and "Funao Taki"! Sweet and sugary aroma like sugar. The taste is smooth and silky, and while it has a Gunma sake-like quality, it tastes more like a sweet sake derived from brewer's alcohol. There is nothing outstanding about it, but it is a perfect match for ekiben (boxed lunches), with its unobtrusiveness, slight sweetness, and crispness!

Now Igarashi Sake Brewery is complete 😝.
