Toyokuni Tokubetsu Junmai Yamadanishiki Nama-Nagara Sake
Toyokuni is famous for its "Ippou-self" (Higashi) from Ishikawa County, and Toyokuni from Aizu, Kawanuma County, where we will drink this time.
I found out that there are two Toyokuni Shuzo Goshi companies with the same name.
The brewer here told me that they no longer have to indicate the year of production.
He told me that this brewery is identified by its own production number, NP-23C, where NP is not known, but 23 is the year 2023, and C is March, since the months go up alphabetically from A to January.
I bought a bottle of March released Nama sake in November 😁.
I drink it cold.
The color is light for an aged sake, just enough yellow to be discernible.
The aroma is sweet and mature, like burnt caramel. It also has a honey-like flavor.
The mouthfeel is surprisingly light, and the flavor has the extremes of sweetness and nuttiness that are typical of a matured wine.
After swallowing, the matured aroma lingering in the nose expands and the concentrated sweet and delicious taste increases. A bit of sourness at the end.
It has the juiciness and depth of a pure sake, and is rich, mellow, and delicious.
Ingredients: Rice (domestic), rice malt (domestic)
Polishing ratio:60% Flattened rice
Rice used: Yamadanishiki produced in Hyogo Prefecture
Alcohol Content:16% Alcoholic Beverage
We had it at a tavern near our house.

The sake has a strong, rich, Yamadanishiki-like quality, with a nice sweet acidity and a starchy holder.
It's just too powerful to be drunk on its own. It's not so much a washing down sake as a washing away sake, and I can only think of spicy ethnic food to pair it with.

It is refreshing to drink, but leaves a lingering spiciness in the aftertaste. It does not interfere with the meal, but still leaves you with the satisfaction of drinking sake.
Summer Fireworks Label Flavors of peach and melon at first. Mild but robust flavor. Best with dishes like simmered conger eel. We enjoyed it while feeling the thoughtfulness of its careful maker.
You taste like chocolate liqueur. There's no chocolate in it, right?
Still, it's strange that it doesn't feel strange with a regular dish.
This week is also sashimi and pak choi salad!
