Junpei Junmai Ginjo Nama Shu Arabashiri 17% 50%. Purchased at a sake brewery in Kure, Kochi Prefecture. This brand has never been seen in Tokyo. Like Kure's raw sake, it is juicy and then sharp. Tenkakashin Junmai Daiginjo 50% 15% 720 ml 1980 yen I bought the same bottle two years ago, but it was an accidental repeat. I noticed it later when I looked back at the Sake no Wa. It is a Junmai Daiginjo made from Yamadanishiki produced in District A. The specs are outstanding. It is a little dry, but has the umami and sweetness of rice. Drunken Whale Junmai Ginjo Ginrei 50% 16% 1,595 yen Purchased in Kochi Prefecture. Kochi is known for drunken whales! This sake is also a representative of Kura. The taste is very orthodox and dry. Simple is best. It has a classic acidity that is different from the latest fads. It is made with Hokkaido's Ginpu. I like Ginpu because I think it is full-bodied yet refreshing and sharp. Suigo Sakari Junmai Genshu 17-18% koji 55% kake 60% 720ml 1520yen A minor sake selected by the wife's father. Looks interesting. Suigosakari is a sake made by Baba Honten in Chiba, which brews "Sawara Hashi. Though I don't usually hear of "Sawara Hayashi". It has a spiciness that stimulates the tongue, and the strength of a man's sake. The water seems a bit hard. It is best served at room temperature or warmed. A punchy sake suitable for eating. Kure Junmai-shu 60% 16% 1800ml 2640 yen This was my first visit to Nishioka Sake Brewery, which brews Kure. It was one of the purposes of my trip to Kochi. Since I was there, I bought a bottle. It is a good dry sake! The bitterness is strong, but it is a nice accent. Kurei is juicy on the raw side, but I got the impression that the hi-ire version is orthodox and dry. Tosa Kinzo Junmai-shu 15% 65% 720ml 1386yen Go to Kochi Prefecture to buy sake. Buy at a roadside station or a supermarket. It is called "Tosa Kinzo". It is a dry sake with a tangy edge. The umami is modest, but that is what Kochi sake is all about. The lingering aftertaste leaves a lingering chill on the tongue. I might actually like this kind of dry sake. It is only in Kochi that sake is made based on bonito. The sake rice is Akebono. It is made in small quantities by a small brewery. It is probably not available in Tokyo. It has an astringent taste which is not my favorite. It is like an astringent grape. The sake rice is Tamakae. According to the website of Shunyuginsingen, this sake is recommended to be warmed up to lukewarm. I should have tried it. I heard that this sake was featured in the 82nd volume of "Mimi Shinbo". Hatsuson Ikketsu Namahashimoto Junmai-shu 16% 60% 720ml 1320yen When I got into sake, Hatsuson was the first sake that I could easily identify as a "sake brewer's yeast yeast". However, I had the impression that it was a little different from my taste. This Ittetsu is also light and spicy. It also has an austerity similar to that of red wine (I may be the only one with this feeling). It has a little bit of richness. Nabeshima Junmai Ginjo Kitsushizuku 16% 50% 1800ml 3520yen Purchased at Nishiyama-ya in Kawasaki. Nishiyama-ya, which does not sell mellow sake as much as possible, has Nabeshima? Actually, this is a Nabeshima with a moderate sweetness. It tends to be rather dry. It has a fine gas characteristic of Nabeshima. The bitterness is also emphasized, which is different from the image I had of Nabeshima. A little less bitterness would be fine. Kitashizuku" is made from Hokkaido rice. Sonotoku Yamahai Junmai 60% 15% 720ml 1700yen We visited a sake brewery in Tochigi Prefecture and purchased a sake called "Sonotoku" both Yamahai and Namahashi. The name "Sotoku" comes from Kinjiro Ninomiya. They have been making Namahashi for a long time, but have only recently started Yamahai. I had the Yamahai first. This Yamahai is a magnificent Yamahai. It is juicy and has good acidity. I think I like it better than Nikko Honor, their representative brand. Of course, it is also delicious heated. It is like a plum wine and adds thickness to the sake. Suginamiki: Roadside Station Nishikata Limited Junmai Ginjo Unfiltered Nama Sake 17-18%. Purchased at Michi-no-Eki Nishikata on the way back from a round of golf in Tochigi. Michi-no-Eki Nishikata carries a large selection of sake from Iinuma Meikozo, the brewer of "Sagata". And they also have draft sake. Nowadays, "SAGATA" can be found at famous sake shops, but "SUGINAMIKI" is distributed locally. It has a pineapple-like fruitiness and is very rich. The caramelized taste is a characteristic of Iinuma Meizo's nama-shu. It has a long aftertaste. However, it does not go well with raw food such as sashimi, so be careful. Gunma Izumi Ginjo Tamaroku 50% 15-16% brewing alcohol 720ml 1460yen The name "Awamori" means "light green" in Japanese. It is made with Gunma Wakamizu and made with Yamahai. It is light and dry and quite to my liking. The Gunma Izumi is very good when heated. The koji taste is fuller and juicier. This is the kind of sake that I like to drink slowly, slowly, slowly. When the sake boom of Shinmasa and Ottersai started, an earnest-looking but slow-talking shopkeeper opened a store in the drinking district of Nakanobu Ebara, but he didn't stock trendy sake and sold only very reluctant sake like Gunma Izumi. BUFUKU Junmai Ginjo cold stored for 3 years 50% 15.5 degrees Celsius The finish has a very matured feel. It is quite stinky, and is a favorite of professionals. Made with 20% Tamakae and 80% Nipponharu. Dry +3, but you can't tell much because it's so sticky. It is more than the alcohol content. It has cocoa and shochu-like taste. They say it used to be unintentionally made to be a bit bitter, but they have evolved it by using low-temperature technology. It seems to be a little bit twisted, though. Some of the other specs of "Bifuku" are delicious, but I wonder if this cold storage is the right one. There is also a cold-stored draft sake, but I'm curious about the taste of that one.
