Hakata Hyakunenkura Shiboritate Junmai-shu Namaishu 17% 70%. Purchased at a brewery in Hakata. It was a beautiful facility with a lot of attention to detail for tourism. Many foreigners visit the brewery. This Shiboritate Junmai sake has a strong raw sake flavor. When you put it in your mouth, you will feel lactic acidity, astringency like grape skin, and spiciness in that order. The body is strong and very drinkable. Daishichi Junmai 69%, 15%, 720ml, 1,390 yen In my mind, this sake represented the image of "Namo Hashiroshi". They have been using pure rice and making sake since the 1950s. The taste is stable. The astringent taste fits well with food, and the acidity is typical of Daishichi. To be honest, I am not good at the acidity of Daishichi's sake, but it is unquestionably Daishichi that is the standard for the taste of my world's sake. Every year, I feel like I understand the greatness of Daishichi more and more. However, how many people can tell the difference in taste between the regular rice and the super-flat polished rice? I remember that I bought it at a supermarket called Big Yosan in Tsunashima, Kanagawa Prefecture. The price is unknown. Sake that claims to be a "hidden sake" is not very good at all. But if you say "Oh, hidden sake," people in their 60s or older will say, "Oh, hidden sake? I guess it's a strategy to get people in their 60s to say, "Well, you'd better buy it soon, kaasan. I think that's the strategy. No, but this sake has a fruity taste and a light flavor. Yet it has a slightly heavy body. The aftertaste is slightly caramelized. It also has a spiciness and sharpness. It's a Hiyoroshi, but how lively it is! It is called "Umakuchi" but it is quite dry. Umakuchi and sweet are not the same thing. I was surprised because I have been drinking only sweet sake. Toukai Grain Sake Junmai Ginjo 60% 15% 720ml 1760yen The Chieba-kun label makes it look like a souvenir sake, but it is not to be underestimated. Grain Sake is the name of rice. It is said to be a rice produced in Chiba Prefecture that will make its debut in 2020. It is fire-brewed but slightly juicy with a chirichiri-stimulus similar to gas. The astringency is accentuated. A big-boned sake. Koizumi Shuzo, the brewer of Toukaizakari, has the impression of making rough sake, and this is just like that. However, this one has a nice cohesiveness. Juichi-Masamune Sakura yeast brewing 15% brewing alcohol 720ml 1034 yen Sakura yeast collected by the laboratory of the University of Agriculture is used. The rice used is "Tochigi Sake 14" and "Nihonbare". This may be the first time to use rice called "Tochigi Sake 14. It is sweet and mellow. It is sweet but has a sharpness. Tamitsu Kimu Tank pressing 60% 15% 1800ml 3630 yen Purchased at a liquor store in Yotsugi, Katsushika-ku, Tokyo. The name "Kiau" means "Kiu" in Japanese. It is made from Hachikan-nishiki Nishiki, and is once-fired sake. The fruitiness is green apple and pear-like. It has a bitter aftertaste that does not drag on the sweetness. It would go well with French cuisine. After 3 days, the sweetness seems to be more full-bodied than when the bottle was opened. It is said that they dare not put a specific name on the bottle and do not label it "Junmai" (pure rice). The fact that it is made entirely by tank pressing is also attractive.
