Abukuma Honjozo 15% koji 65% kake 70% 1.8 liters 1980 yen I bought a bottle when I went to Fukushima. It is very sweet. It is sticky and clings to the tongue unpleasantly. It has a strong alteness. I'd rather drink it hot than lukewarm. Abukuma has a good image, but I would have had a better impression of this brewery if the honjozo was good. I searched for it and found it at a reasonable price of 1980 yen for a bottle! It has a simple taste but good acidity. It has a light acidity and elegant taste. It is also spicy and delicious. The rice is polished to a fine "shagin" (fine rice), which reduces the amount of impurities and makes the sake clearer, and even with low polishing, the sake quality is said to be at the level of ginjo-shu. Yamamba Oshu Ishikawa's local sake 19-20% brewed alcohol 720ml 1345 yen Purchased at a roadside station in Fukushima, Japan, from the Wakashimizu Sake Brewery. It has a golden color and an aroma of maturity. When drunk, it is lightly aged, with a slight acidity like plum wine. My first impression was that it did not have much depth, but the more I drank, the better I felt. It is soft, yet has a rough, spiky taste. It is more like a whiskey than a plum liqueur. There is no mention of the polish, so I wonder if it is a blended sake. Surprisingly, it hit the mark despite the label. There will be another repeat. It was ranked 6th out of 13 at the Kinshokai. Gojin Musume Natural Sake, as squeezed, Junmai Nama Shudo Nama Shudo 70% Kame-no-o 94%, Miyamanishiki 6% 720ml Nama sake with no yeast added. It has a perfect lactic acidity with a touch of gas and orikara. The lemon sour and fruit peel sensations make you gobble it up at a fast pace. The third day, when the gas is gone, the taste is still outstanding. Shizen-shu" is made with rice grown without pesticides. And all brands at this brewery are unfiltered. It is also the brewery that produces my favorite Katori sake. This brewery is of a high level. Horaisen Bessen 15% 60% brewing alcohol 720ml 1155yen Purchased at a convenience store in Nagoya. It is dry with acidity. The alcohol taste is too strong and sharp. It has a coffee and shochu taste. The brewer's alcohol in this Bessen is made by the company itself. I don't know how much it affects the taste, but if the discomfort I feel is reflected in the quality of the sake, I would suggest not brewing your own sake. Brewing alcohol is usually made from sugar cane or corn, but this brewery distills sake lees. When I saw a blogger's article from 2017, the ingredients were described as "shochu" instead of "brewer's alcohol. I wonder if they dared to use "brewing alcohol"? It is safe to drink it hot. There is a store called "Snack Tani" in the triangle of Sangenjaya, and the aroma like coffee shochu and too persistent barley shochu smell fight each other. Hinode Tsuru Junmai Ginjyo Miyamanishiki 60% 15% 720ml 1980yen We also bought a bottle of Honjozo at the brewery, but it was a completely different impression. The Honjozo was a little peculiar. This one is bitter with concentrated flavor and acidity. It is not at all dull. It is not flashy, but rather calm and delicate. The sweetness is graceful and has the taste of a first-class sake. The rice is local Miyamanishiki from Hitachiota. I found out that the heir who returned to his hometown had designed, brewed, and engineered the sake in a new attempt.
