Juichi-Masamune Sakura yeast brewing 15% brewing alcohol 720ml 1034 yen Sakura yeast collected by the laboratory of the University of Agriculture is used. The rice used is "Tochigi Sake 14" and "Nihonbare". This may be the first time to use rice called "Tochigi Sake 14. It is sweet and mellow. It is sweet but has a sharpness. The sake tastes like old times. Somewhat nostalgic. I don't know if it tastes like Sakura yeast. It seems to be treated as a regular sake, but considering the price, I think it is a bargain. Fumikawa Special Junmai 16-17% 58% 1800ml 3190yen Chuaai" is probably better known than "Fumikawa". It is mellow and has a strong umami flavor. The acidity and spiciness intertwine well with the aftertaste. It is a delicious sake that is easy to drink, with a somewhat robust yet refreshing "Gohyakumangoku" taste. Tamitsu Kimu Tank pressing 60% 15% 1800ml 3630 yen Purchased at a liquor store in Yotsugi, Katsushika-ku, Tokyo. The name "Kiau" means "Kiu" in Japanese. It is made from Hachikan-nishiki Nishiki, and is once-fired sake. The fruitiness is green apple and pear-like. It has a bitter aftertaste that does not drag on the sweetness. It would go well with French cuisine. After 3 days, the sweetness seems to be more full-bodied than when the bottle was opened. It is said that they dare not put a specific name on the bottle and do not label it "Junmai" (pure rice). The fact that it is made entirely by tank pressing is also attractive. Setsuzen Sakura Junmai Ginjo Unfiltered Genshu 15% 60% 720ml 1815yen I received a nice sake from a friend in Akita. It seems that a friend of mine who is a wine specialist collaborated with A-Sakura to produce this sake. Refreshing fruitiness with a hint of kabosu and sudachi. Syrupy sweetness and gorgeousness. However, the floral taste is too persistent and bothers me. It bothers me even if I drink it on a different day. The sake is slightly dry with a sake strength of +2, but the sweetness is strongly picked up due to the florality, perhaps due to the AKITA snow country yeast UT-01. It may be that many people like it because of the recent trend of floral flavors. Thanks to the brewer who sent us a limited edition of 600 bottles of this precious sake. Junpei Junmai Ginjo Nama Shu Arabashiri 17% 50%. Purchased at a sake brewery in Kure, Kochi Prefecture. This brand has never been seen in Tokyo. Like Kure's raw sake, it is juicy and then sharp. Tenkakashin Junmai Daiginjo 50% 15% 720 ml 1980 yen I bought the same bottle two years ago, but it was an accidental repeat. I noticed it later when I looked back at the Sake no Wa. It is a Junmai Daiginjo made from Yamadanishiki produced in District A. The specs are outstanding. It is a little dry, but has the umami and sweetness of rice. Suigo Sakari Junmai Genshu 17-18% koji 55% kake 60% 720ml 1520yen A minor sake selected by the wife's father. Looks interesting. Suigosakari is a sake made by Baba Honten in Chiba, which brews "Sawara Hashi. Though I don't usually hear of "Sawara Hayashi". It has a spiciness that stimulates the tongue, and the strength of a man's sake. The water seems a bit hard. It is best served at room temperature or warmed. A punchy sake suitable for eating. Kure Junmai-shu 60% 16% 1800ml 2640 yen This was my first visit to Nishioka Sake Brewery, which brews Kure. It was one of the purposes of my trip to Kochi. Since I was there, I bought a bottle. It is a good dry sake! The bitterness is strong, but it is a nice accent. Kurei is juicy on the raw side, but I got the impression that the hi-ire version is orthodox and dry. Tosa Kinzo Junmai-shu 15% 65% 720ml 1386yen Go to Kochi Prefecture to buy sake. Buy at a roadside station or a supermarket. It is called "Tosa Kinzo". It is a dry sake with a tangy edge. The umami is modest, but that is what Kochi sake is all about. The lingering aftertaste leaves a lingering chill on the tongue. I might actually like this kind of dry sake. It is only in Kochi that sake is made based on bonito. The sake rice is Akebono. It is made in small quantities by a small brewery. It is probably not available in Tokyo. According to the website of Shunyuginsingen, this sake is recommended to be warmed up to lukewarm. I should have tried it. I heard that this sake was featured in the 82nd volume of "Mimi Shinbo". Nabeshima Junmai Ginjo Kitsushizuku 16% 50% 1800ml 3520yen Purchased at Nishiyama-ya in Kawasaki. Nishiyama-ya, which does not sell mellow sake as much as possible, has Nabeshima? Actually, this is a Nabeshima with a moderate sweetness. It tends to be rather dry. It has a fine gas characteristic of Nabeshima. The bitterness is also emphasized, which is different from the image I had of Nabeshima. A little less bitterness would be fine. Kitashizuku" is made from Hokkaido rice.
