This sake is made by a very small brewery called Negami Shuzo in Gotemba. It is a junmai (pure rice) sake, but there is no special polishing label. In fact, the Negami Shuzo's "Kinmei" sake is so good that its popularity has skyrocketed in my mind.
This "Narutabura" is labeled as 2020, so it has been aged for quite some time since January 2024. However, it does not have an old sake feel and has a strong depth of flavor. The taste is surprisingly clear.
The rice is omachi, but the finish is clear for that. The alcohol content is 17 degrees, but it feels like 15 degrees. It has a complex taste with astringency, acidity, and spiciness.
It is also very drinkable with a glass of wine.
