Narutabura Mt. Fuji subsoil water brewing 2020 Omachi 17%, 720ml, about 2200 yen This sake is made by a very small brewery called Negami Shuzo in Gotemba. It is a junmai (pure rice) sake, but there is no special polishing label. In fact, the Negami Shuzo's "Kinmei" sake is so good that its popularity has skyrocketed in my mind. This "Narutabura" is labeled as 2020, so it has been aged for quite some time since January 2024. However, it does not have an old sake feel and has a strong depth of flavor. The taste is surprisingly clear. The rice is omachi, but the finish is clear for that. The alcohol content is 17 degrees, but it feels like 15 degrees. Koshi Mellow Sake 15% brewing alcohol 720ml Purchased a regular Kouji variety at a supermarket in Chiba. It has a yellowish color. The taste is exquisite, with a hint of yellow and a hint of not so yellow. It tastes like old Japanese sake, which may not be to everyone's liking. However, the acidity is quite deep. It is labeled "mellow sake," but it has a malty, aged-like sweetness and just the right amount of spiciness. I quite like this kind of sake. Amabuki Koisuru Banana Nama Junmai Ginjo 60% 15%, banana yeast, 720ml, 1544 yen It is indeed banana! The banana feeling is passed through the nose. The sweetness is surprisingly moderate, rather picking up dryness and bitterness. However, it is sweet in its own way with a sake degree of minus 6. It is not at all sweet and delicious. Popular Ichi Sake Godzilla Junmai Daiginjo 16% 50% 720ml 3850yen The case has an interesting story about Eiji Tsuburaya's hometown near the brewery in Nihonmatsu. It is brewed in a wooden vat, daiginjo, and comes in a nice box, so the price is quite reasonable. It has a smooth taste with a hint of guava and other tropical fruits. It has a full, rich mouthfeel with hints of guava and other tropical fruits, and the slight aging process gives it a rich, mellow, and hot taste. Ikegame Junmai Ginjo Unfiltered Hiyoroshi 60% 15 degrees Celsius Purchased in Fukuoka. The sweetness starts out as a whiff and changes to a full-bodied taste. Sweetness and bitter aftertaste follow. It has a hiyaoroshi-like taste. There are some fluty notes that I don't like, and the flavor is good, but the sweetness is a little too strong. Ogaki Okijyu Namikake Junmai-shu 15% 65% 1800ml 2310yen The brewery of Yuto Masamune. This sake has a strong pungency. It seems to have a nama-shoto style, but it does not have a sense of umami and does not leave a strong impression. It seems to have a raw yeast character, but it has no umami and is not very impressive. When heated, the pungency and astringency stand out! The sense of nama yeast is doubled. Fukuwagura Junmai Ginjyo Nama Shu 60% 15%, 300ml Mr. U of Kinsho-kai gave us a small bottle of this sake. It is made from Kami no Hobo sake produced in Mie Prefecture. I thought for a moment that it might be a bit dry, but it is sweet with a strong aftertaste. It tastes like white wine. The aroma was too sweet and smelly. I wonder if the Mie Prefecture yeast, MK3, is responsible for the artificial ginjo aroma. It's a high-class sake that costs 2,400 yen for a four-pack, but it's still in a realm I don't understand. Mansaku no Hana SILKY SNOW TIME - Winter hiya-shu 70% 15% 720ml 1430yen This is a low-temperature fermented fire-aged limited edition sake. Recently, I have avoided Mansaku because of its overly pronounced fruitiness, but this one is a bit more subdued. It has sweetness and bitterness, and the bitterness is cocoa-like. Hakata Hyakunenkura Junmai Ginjo F44 15% 55% 720ml 1870yen I went to Hakata brewery from Tokyo. There were a lot of souvenirs and many foreigners were there. This is the first time to drink sake from this brewery, but it gives the impression of being sweet, heavy, and guttural. It has a flavor like persimmon extract and a depth like soy sauce-based soup stock. It is sweet and spicy, sweet and strong, and has a powerful feeling of more than 15 degrees Celsius. My wife said it has a salty taste. It is a little too strong to keep drinking. It is best served on the rocks. The website says that it is for "food", but I wonder if this is the taste that people in Kyushu prefer. The label says "F44" because it uses Fukuoka's strain 44 yeast. Chichibu-Nishiki Special Junmai Nama-shu Shiboritate 18% 60% 1800ml We went to Yao Honten in Chichibu to buy our favorite Chichibu Nishiki. It has a thicker texture, and the bitterness from the lactic acidity is like grapefruit. It has a punch and a strong flavor. It has a sweetness, but also has a man's sake feel to it. The boss of the Kinsho-kai told me that Chichibu-nishiki is a traditional sake, and that it might not be tasty. He praised me for changing his image of Chichibu-Nishiki. It is made with black malted rice for shochu. It is very robust despite its 15% alcohol content. The label on the back says "Strawberry," which is very obvious! It also has a custard-like sweetness and a dry aftertaste. It has something in common with Kikusui's canned shochu liquor with sake lees. Well, I repeat, it is very strawberry. A bargain! Hakata Hyakunenkura Shiboritate Junmai-shu Namaishu 17% 70%. Purchased at a brewery in Hakata. It was a beautiful facility with a lot of attention to detail for tourism. Many foreigners visit the brewery. This Shiboritate Junmai sake has a strong raw sake flavor. When you put it in your mouth, you will feel lactic acidity, astringency like grape skin, and spiciness in that order. The body is strong and very drinkable. Daishichi Junmai 69%, 15%, 720ml, 1,390 yen In my mind, this sake represented the image of "Namo Hashiroshi". They have been using pure rice and making sake since the 1950s. The taste is stable. The astringent taste fits well with food, and the acidity is typical of Daishichi. To be honest, I am not good at the acidity of Daishichi's sake, but it is unquestionably Daishichi that is the standard for the taste of my world's sake.
