Immediately after opening the bottle, it was dry and dry, perhaps due to the 17% alcohol content. Then, after leaving it in the refrigerator for about 5 days due to a business trip, the taste changed drastically! There is almost no aroma, but it has turned into a crisp, sweet and delicious sake. There are not many sakes that have changed in taste like this.

I drank it last year and enjoyed it so much I bought it again. Personally, it is my favorite new sake along with "Akagisan"✨. When you open the bottle and pour it, the aroma is crisp and gorgeous, like pears. The mouthfeel is light and immediately afterwards there is a solid gassy feeling. It's as shwashy as a carbonated beverage! Dry and clean on the palate, with pear and green apple flavors that are gorgeous and fresh. There is a hint of sweetness, so it is not only dry, but also well balanced. The astringent taste comes in the last half of the bottle and finishes it all off, so it is a delicious wine with a perfect ending! The sun is setting later and later, and we can feel the approach of spring. It's still early, but I'm looking forward to this year's spring sakes!

The aroma is faintly peachy 🤔In the mouth, it's fire-aged but fresh 😀 Mature soft umami and round sweetness 🥰 Mild acidity to tighten it up and a slight sweetness lingers 😚 It's a refreshing drink 😊. I feel like it would be good with azuki beans since it is from Imuraya 🥳.

(*) 🍶🍶🍶🍶 It was hot today, so I had a bottle of Dobrock. It's my first time to drink in Tokyo😙It was separated so I mixed it up and opened the bottle. It was very carbonated and I spilled a lot of water 😛 It was so fizzy it was like pouring cider into a glass. It's not too sweet and the grains of rice are delicious. It's also good on a hot day as it's chilled 😀.

I carefully opened the bottle and it took about 15 minutes. It's a sake that you can eat with your eyes, with the grains of rice usually recognizable. Overall, the strong gaseous feeling gives a swooshing impression, so it's refreshing to drink. I liked it.

The second day in Aizu, we went to Sake-na Tenmi for a drink. I made a reservation in advance because I heard it was recommended by Mr. Muro. Incidentally, I was chatting with two women who were sitting next to me at the counter at the sake bar where I had been drinking the day before, and I found out that both of them worked at Tenjiki, which made me realize how interesting the relationship between sake is 😊. The first glass was Mine no Yuki Junmai 🍶. The aroma on the nose is slightly sweet and calm. It is a bit ripe on the palate, but full-bodied, sweet and delicious. It was quite delicious 🍶. The third picture is of the Mine-no-snow brewery in Kitakata. I had a short chat with the sales clerk, who told me that Mine-no-Snow was the first brewery in Japan to make mead, and that they have recently been making a mead made by fermenting honey with sake yeast.

The aroma is milder than expected, but slightly apple-like. When you drink it, the sugar sweetness and syrupiness are quite strong, but it is closer to a dry sake than expected, and it goes down quickly. It is better at room temperature, as it has a more modern apple sweetness. The limited edition sake might have been better, but it is not too modern, nor is it too classic.

It is more suitable as a mid-meal drink than as a stand-alone sake. It went well with grilled sea bream, various sashimi, simmered pork, simmered sea bream, fried fish, and other dishes made by my wife's brother.

Yoshidaya and Mansho Hanegi Press in Minamishimabara, Nagasaki. Hanegi Shibori is a traditional method of pressing rice with a giant tree called Hanegi. It has a slightly yellowish color, and the mouthfeel is very sharp, but does not leave a lingering aftertaste. It has a good rice flavor and is very much like a Japanese sake.

First time drinking this brand, we had it with my family 😁. I was told that it's good to drink it cold, so I made it very cold ❄️❄️ When I opened the bottle, the aroma was not so strong, probably because it was chilled... When I put it in my mouth, I could feel the coldness and the richness of the flavor. And a good amount of spiciness... It's delicious, I can drink it easily 😆😆😆.

The one I went to a liquor store I don't usually go to after a baseball game and drank after I got home. It tastes like Aizan, but is closer to a classic. It is spicy with a little sweetness. The oldest sake brewery in Fukuoka, Ohga Shuzo, has created a GABAGABAHEY raw sake. At the first sip, the fresh and rich rice flavor typical of nama-shu spreads. The fourth cup is a "Tamadezumi" unpasteurized sake! (First picture, left side) The sweetness is even richer than the previous "Ooga Unfiltered Nama"! However, as you savor it, the acidity and pungency slowly come from the back, along with a hint of shiitake mushroom-like aroma. The coffee milk-like aftertaste is impressive ✨.
