Takatsugawa" Junmai-shu from Fusozuru's brewery We ordered this sake from Kotobukiya in Atsugi in January 2023, and it was commented on Kotobukiya's website as "a hidden gem for home drinking". It has been stored at room temperature for 2 years and 9 months since it came to our house, and it has further changed color and has some ooze. At room temperature, it has a matured, savory, and peculiar taste (this peculiarity is also its charm). It is still not hot enough at lukewarm temperature, but when the temperature is raised to 50℃ or higher, it is nice and full-bodied, The caramel-like sweetness spreads and attracts the taste buds. It is a great everyday evening sake, and can be kept at room temperature after opening, and is also suitable for aging.

( -̀ᴗ-́ ) ̖́-🍶🍶🍶🍶 Sake Marche 2023 Part 2 We had sake from Kuze Sake Brewery, the closest sake brewery to my parents' house 😋. Amber-colored Daiginjo ✨with a rich rice flavor😊It's a traditional sake 😚👍It has a robust flavor, but the aftertaste disappears quickly😇. I felt like it was a sake to be enjoyed by itself and sipped slowly 🥳.

GW in Kanazawa! At the Kanazawa Sake Brewery in Kanazawa Station, we came across a dream machine that allowed us to sample sake for 100 or 300 yen (P.S.) Naturally, we took the challenge. The description said it was dry, but I prefer raw sake, so I chose this one. I tasted it thinking it might be a fruity type, but it was a clear dry sake that would go well with sashimi and other dishes. I appreciate free tastings, but I feel somewhat guilty about it, so this kind of reasonably priced tasting is very helpful and encourages me to try different kinds. I tasted three other types of sake here, and all of them seemed dry to me. I have an image that Ishikawa's sake is basically dry.

Nice aroma. It is a sake with an interesting name. It is said that it was named with the thought of "making the world round, flat, and straight. It finishes with a crisp finish. It was a very delicious sake.

The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

Junmai Cold Oroshi Slightly tinged with color. It has a sense of maturity. The taste is a little peculiar, but the mouthfeel is pleasant and slightly sweet. The impression is that the umami is concentrated in the center. Well-balanced and full-flavored.

At the usual BAR (4) I was served hiya oroshi to my liking 😊. Almost no top shelf aroma. The aroma is gentle and fruity like white peach or muscat, with a strong umami. It has a clear sweet taste and I could hardly feel any sourness. No bitterness or other unpleasant tastes. It was slightly similar to Masamune 🤔.

Drunken Garden in Azumino, Shinshu. I was curious to buy it because it is 59% Hitogokochi, a Nagano Prefecture sake. As the label says, it is a refreshing sake with a delicious flavor. It is not at the top level of popular Nagano sake, but it has a glimpse of Nagano's sake character.

Purchase from Okuhida Sake Brewery This sake brewery is within walking distance of Hida Kanayama Station. This time, they recommended to purchase by letter. I am a sucker for limited editions, so I bought it. The aroma is moderate and the taste is strong. It is dry with a clean aftertaste. I paired it with fried pork and cheese with tomato ketchup. I had it with fried pork and cheese with tomato ketchup. It had a strong flavor, but because it was dry, I think it would go well with western food. I think it goes well with western food. It has a nice aftertaste.

First time drinking at Japanese Sake Festival Osaka ③. This is Okuhida-san, which I really got for the first time 😀. The first green sparkling sake was quite tasty, but the one that surprised me the most was this Tokujun Hi-ire 😇. The nuance of the flavor was more like Jungin than Tokujun 😀 It had the flavor of rice, but also had the taste of rice. The overall flavor was cohesive while still having the deliciousness of rice 😀. I heard that this sake is also available in a raw type, but unfortunately it was not exhibited this time 🤣. But I would like to taste the raw version again 😀.

Sweet and bitter with a bitter aftertaste. It has a bitter aftertaste with a sweet and bitter aftertaste... It is a mellow dry sake... It does not have a cloying taste... It is a good match for strong flavored dishes... Although it is not the latest popular sake, it has a presence that says you are drinking sake. ...this is delicious in its own way...

The last of the Koriyama drinks was Snow Komachi Students were getting on and off at stations along the way, so we were drinking quietly... Now the train is deserted. I am so grateful to the railroad company for keeping the local line running! Koriyama's sake, three different kinds This is a refreshing sake Even if you don't have anything to drink, you will drink it in gulps! When you drink it, you will feel a slight sweetness in your mouth, which disappears quickly and leaves you with a refreshing aftertaste! Delicious!

It happened to be a campaign. I compared the two, and I think the dry sake is a safe match for Japanese food. When I came to my senses, I found that I drank much less of this sake. Maybe it's because it's easy to enjoy with food and it's what I prefer.
