Another one this time. It is Takatsugawa by Fusozuru. It is from Shimane Prefecture. I saw Hiraccio-san drinking it and longed for it 🙌. First at room temperature. The color is a solid yellow. The aroma is mildly savory with a hint of maturity. It smells like caramel, soy sauce, and cream cheese. The mouthfeel is gentle. The palate is drowned in the complex flavor of aged rice with a moderate acidity. When heated up, it becomes smoother and more balanced, and you can just keep on drinking it. I had received this sake at a New Year's party at Maguchi in G-machi and bought it because it was delicious. The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

GW in Kanazawa! At the Kanazawa Sake Brewery in Kanazawa Station, we came across a dream machine that allowed us to sample sake for 100 or 300 yen (P.S.) Naturally, we took the challenge. The description said it was dry, but I prefer raw sake, so I chose this one. I tasted it thinking it might be a fruity type, but it was a clear dry sake that would go well with sashimi and other dishes. I appreciate free tastings, but I feel somewhat guilty about it, so this kind of reasonably priced tasting is very helpful and encourages me to try different kinds. I tasted three other types of sake here, and all of them seemed dry to me. I have an image that Ishikawa's sake is basically dry.
