Saitama Pref. Iruma-gun. Asahara Sake Brewery Co. Biwa no Sasanami Junmai Namaisake. I went to buy the pre-sake I wanted, and since that was the only sake I was sorry to buy, I bought Saitama sake, which I rarely have a chance to drink. When I was trying to decide which one to buy, the owner laughed at me at the cash register, wondering why I was looking at the back label so much. I told him I don't like anything too spicy, and we chatted for a bit. I had it cold. When we poured it into the glass, there were quite fine microbubbles adhering to it. It is clear with a faint yellow tinge. The top aroma is slightly malty and slightly apple-like. The mouthfeel is juicy, full, and smooth. The palate has a slight sweetness from the rice on the tongue and a mild acidity that flows gently through the mouth. The juiciness is followed by a refreshing taste. It has a malted rice aroma that spreads when it passes through the nose. The aftertaste is a bitter and bitter taste with a slight spiciness that lingers for a short time. This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

Relief as usual. Perhaps because I'm used to drinking it, the nightly aridness has decreased somewhat. Purchase from Okuhida Sake Brewery This sake brewery is within walking distance of Hida Kanayama Station. This time, they recommended to purchase by letter. I am a sucker for limited editions, so I bought it. The aroma is moderate and the taste is strong. It is dry with a clean aftertaste. I paired it with fried pork and cheese with tomato ketchup. ☀️ Masamune hunters go today🍶. Today we visited the Tottori & Okayama Antenna Shops, a place of relaxation for Masamune hunters 📡. As soon as I arrived there, I started looking for Masamune and found it 🤩. It's sake 🍶. It has a crisp, Hakka-like aroma. It is also very refreshing on the throat. The umami of the rice is subdued, and then there is a subdued sweetness and an equally subdued acidity. Overall, it has a light and simple taste 😙. It is probably best suited as a food sake 🍶. The 800 check-in is the H27BY (2015 brewing year) Sanko Masamune from which Toji Takagaki retired 😆. We were lucky to get it 😊. This is the only sake from Mr. Takagaki but we are holding Takagaki festival 😅🍶. When opened in the fridge, it smells slightly like a soy sauce warehouse (there was a soy sauce warehouse in my neighborhood when I was a kid) or Shaoxing sake. It's a dry and light sake when cold. Sanko is still a warmed sake, so I'd recommend heating it up 🍶. The top aroma is the aromatic aroma of a freshly heated sake. When heated, it does not have a matured aroma. In the mouth, you first feel sharp acidity and spiciness. The acidity is not as strong as that of Sanko Tenpyo's Namahashi or Yamahai, but it is quite good. There is a slight sweetness and a beautiful umami that does not make you feel the rice polishing ratio of 72%. This is a perfect food sake 🍶😊. I don't know if this is the original taste since it is an old sake, but it was deeply delicious 😌. After retiring, he returned to farm near his hometown, but unfortunately, he died in a field accident last year 🥲. I learned of his death when I saw a relative of his on Instagram late last May with a picture of H27BY "Katsumasa" to inform me of his passing. A toast to Mr. Katsumasa Takagaki 😌🍶.
