Tonight, I'm back at work after GW, but naturally I'm not very excited 🥴. This one is brewed with Dewa Sanzu and Kyokai No. 6 yeast. The aroma is mild without being showy. It is a versatile sake with a soft sweetness and acidity of cucumber and herbs and a clean aftertaste that is also very sake-like 😊. It is as delicious as the rumors say 😋😋😋😋😋.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house. As you know, the specs are as perverted as you can imagine 🤣 it is made with Dewanosato x 66% koji ratio x 66% milled rice ratio x Kyokai No.6 yeast 🤣. The taste is very pleasant with the strong acidity of triple the koji, and it is easy to drink. It is not white koji, but it reminds me of a certain cat sake 😺.

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. A modern sake brewed by Aoki Shuzo, famous for Tsururei. It is completely different from the cup of sake Yukio that I drank before. I took it out of the fridge and opened the bottle. I'm not sure if this is a good thing or not, but it's a good thing. The flavor of the rice and the pleasant acidity. When the temperature is raised, the flavor and acidity are more assertive than right after opening the bottle. It says that it goes well with Japanese cuisine, and I think this is true. It is a good food sake that does not interfere with food. Sari seems to go well with rice crispy rice 😀.
