This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔. Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Visiting Ise with my wife's parents! (We just went there last October 😅) Geku shrine → Sarutahiko shrine → lunch at Ise Kaku Uchingu restaurant → around the inner shrine and back to the inn for my parents and to Ise Man for myself and my wife 😁. This time, due to the space in our fridge (and budget), we only tasted the raw sake! It was refreshing and delicious 😋😋😋.

Sake from a brewery famous for Ryujinmaru. It has been a very long time since Kirakuri. After Shikishima, tkmts-san was drinking Ryujinmaru, and I wanted to try something of Takagaki-san's sake, so I chose Kirakuri. This time it was an unfiltered raw Nakadori. It has a caramelized taste with sweetness and a sense of maturity. It's just a coincidence that there is a succession of sakes with a sense of maturity, such as Washin, Shikishima, and Kirakuri.

Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.
