From the supernatant. Gorgeous and bitter with a terrific sweet bitterness. Mixed with a cage. It is smooth and mild on the palate. The acidity is quite sour and sweet-sour. The bitterness is not so obvious. The dryness is still there and it has a nice sharpness. Production date: April 2024 Close date: April 28, 2024 ▼6/17 Postscript Sealed and left to warm up for about 2 months. It has a rich mouthfeel. Sourness and bitterness are strong, and they are tingling on the tongue. The bitterness remains. The taste itself is easy to drink.

Watanabe Sota Hanpukai sake. 100% "Comet" from Hokkaido is used. Start with the supernatant. Slightly effervescent, with bubbles in the glass. The texture is a little sticky on the tongue. It has a mellow, sweet melon flavor and is on the dry side. A touch of corkage was added. The bubbles and flavor are stronger, and it is no longer limp. Hachisen's first Yamahai brewing using 100% "Gin Karasu" from Aomori Prefecture. It was aged for four years in a refrigerator at home. Strong sweetness like honey. At the same time, there is a bitter taste that comes with it. It also has the flavor of old sake due to its maturity.
