At a tasting by Asahiyama, a liquor store in Kawaguchi, Saitama. Very good aroma. Firm sweetness. Refreshingly crisp acidity. It leaves a lingering aftertaste on the tongue. I thought it might be limited to direct sales, but I was able to buy it at a liquor store. If you go down the shopping street near Okamachi Station, you will find an old shopping center with a supermarket in it. This is a community-based liquor store that is housed in it. They carry a wide variety of sake brands such as Yukitsuru, Asakayousei, Katanozakura, Kaygetsu, Sakura Masamune, Ootsuru, Shiraoi, Haginoduro, Shikizakura, and others. They seemed to be putting a lot of effort into craft beer and wine. The rice is Gohyakumangoku and Koshibuki. The rice is lightly cloudy to the point of being orikara. Basically, it is spicy, but the entrance is clean, and it tastes good with a firm umami and acidity in the latter half.

Purchased at Takatsuki Hankyu. To be honest, they have a smaller selection of alcoholic beverages than Umeda Hankyu, but I think their lineup is more tasteful than Umeda. Umeda relies more on on-site sales. You can also buy Kuninonaga and Kiyotsuru at Takatsuki Hankyu. Grape and banana-like atmosphere. Not too sweet and spicy, but clear and beautiful. I wrote "clear," but considering it as a dry wine, I wonder if it is a mellow dry type. I said it was spicy, but there is a moderate amount of sweetness. It is a modest type of sake, but you can't go wrong with it.

I bought it with Yamatsuru at Sake Merchant Yori-san. Abetaya, which I visited before going here, also had a bottle of Shinyomi, but I felt it was too dry, so I passed on it and bought it here. It has a refreshing taste like a summer sake with a mild sweetness. Although the sake level is minus, the second half of the bottle feels sharp and dry. It's sweet, but something different. It tastes better at room temperature when it is sweeter. I think Shinyun was closed for a few years after Toji Kurose moved to Inada Shuzo and the president passed away, I wonder who is running the brewery now? I don't know who is running the brewery now 🤔. I know there were fewer distributors around there... I left it for about a week and the acidity got really strong.

The slight chilliness of the gas also gives the wine a freshness👍.

Tasted here also at Hankyu Department Store. Junmai Ginjo-shu made with Kuzuryu. It is a refreshingly dry sake, but has a sweet and fruity taste. This time I bought a bottle of unfiltered raw sake made with Jinryoku.

Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. Is it a multi-faceted, multi-personality sake?
