#Funabori# A bit of a bad look 😅. Homemade sundubu jjigae with a side of homemade sundubu jjigae. We had this one. The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

I had my first bottle of Shinshin in spring and it was delicious! I was able to get a bottle of Shinshin's summer sake, and I immediately opened it 😋. Slightly sweet and refreshing taste like summer sake🤣. It's as refreshing as the label says and perfect for a hot day like today 👍 thanks for the drink❗️

Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. But I drank a little too much from Thursday to the weekend 😓. I'll enjoy a quiet rest day for the first half of this week 😮💨.

Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.

My favorite Chiba sake "Iwanoi" is brewed with ultra-hard water (hardness 240). It has the delicious flavor of Omachi and the moderate bitterness and sharpness of hard water! The taste is deep and the acidity is dignified! It can be drunk as it is, or as a food sake...no...food sake🍶 is better 🙆I'm sipping it with boiled gammo and sashimi...🙆I'm sipping it with a side dish.

Tonight, I'm back at work after GW, but naturally I'm not very excited 🥴. This one is brewed with Dewa Sanzu and Kyokai No. 6 yeast. The aroma is mild without being showy. It is a versatile sake with a soft sweetness and acidity of cucumber and herbs and a clean aftertaste that is also very sake-like 😊. It is as delicious as the rumors say 😋😋😋😋😋.

Tonight, here is a very popular project sake from Yamagata 💁. La Jomon Shoumon Koji Triple Masamune Nama Sake 2023BY✨. I think it is safe to say that this is the second most popular sake after Jyushidai. I think it is. Well, it's hard to buy and sells out quickly 😫 Now, this is the first Koji Sanbai Masozo-shu Nama-shu in my house. As you know, the specs are as perverted as you can imagine 🤣 it is made with Dewanosato x 66% koji ratio x 66% milled rice ratio x Kyokai No.6 yeast 🤣. The taste is very pleasant with the strong acidity of triple the koji, and it is easy to drink. It is not white koji, but it reminds me of a certain cat sake 😺.

Tonight, I opened a bottle of this one to accompany my dinner of kochi and kampachi sashimi and squid cod roe 💁. La Jomon Six Nama Sake 2023BY✨ We happened to have a lot of Six Nama Sake on hand, so we'll have a quick bottle. When I poured a glass of chilled sake, it had the usual mild uri aroma, a beautiful acidity, a little sweetness and citrusy flavor like Pocari, and the second half was a mix of astringent, bitter, and spicy flavors. Sake from a brewery famous for Ryujinmaru. It has been a very long time since Kirakuri. After Shikishima, tkmts-san was drinking Ryujinmaru, and I wanted to try something of Takagaki-san's sake, so I chose Kirakuri. This time it was an unfiltered raw Nakadori. It has a caramelized taste with sweetness and a sense of maturity. It's just a coincidence that there is a succession of sakes with a sense of maturity, such as Washin, Shikishima, and Kirakuri.

Wakayama Pref. Arita-gun. Takagakizo Co. Kiraku-ri Junmai Ginjo Nama Genjyo Unrefined Nakakumi I bought this at my first liquor store while I went to Wakayama to buy dried fish during GW. I wanted to get Ryujinmaru, but they said it was not available now. They will sell it to anyone who comes to the store. I had it with cold sake. The color is clear and slightly yellow. The top aroma is of almonds, caramel, chocolate, and a little alcohol. The label on the back of the bottle says that it was fermented slowly and for a long time at a low temperature, so I guess it has an aged aroma. The taste is thick and voluminous with a grain-like flavor. There is also a good amount of acidity. There is an almond aroma that goes into the nose, an alcoholic aroma, and a guttural sake-like sensation in the throat. The alcohol content of 19 degrees comes later. After adding a bit of ice and water, the alcohol feeling is reduced and it becomes easier to drink. Ingredients: rice (domestic), rice malt (domestic) Polishing ratio: 50%. Alcohol content: 15%.

Opened March 3, 2025 Purchased at Matsuo Sake Shop, Wakayama Purchased at a liquor store I was introduced to when I visited Nakano BC Mmmm, cocoa, chocolate 🍫. This 🤣 is very rich! Acid and sweetness! If it's this rich, maybe it can be used for strong flavored food like simmered dishes or meat dishes!
