Purchase from Okuhida Sake Brewery This sake brewery is within walking distance of Hida Kanayama Station. This time, they recommended to purchase by letter. I am a sucker for limited editions, so I bought it. The aroma is moderate and the taste is strong. It is dry with a clean aftertaste. I paired it with fried pork and cheese with tomato ketchup. I didn't drink enough, so +1! So... open one cup 😁. But I didn't really notice the aroma... But when you take a sip, it's very rich and mellow... My favorite Chiba sake "Iwanoi" is brewed with ultra-hard water (hardness 240). It has the delicious flavor of Omachi and the moderate bitterness and sharpness of hard water! The taste is deep and the acidity is dignified! It can be drunk as it is, or as a food sake...no...food sake🍶 is better 🙆I'm sipping it with boiled gammo and sashimi...🙆I'm sipping it with a side dish.

Outside drinking. Ordered by the impact of the name. When poured, it smells moist and sweet. The taste is as expected (?). The sweetness is strong. When tasted, it has the flavor of rice. There is a slight astringency in the aftertaste. The mouthfeel is clean, with a watery sensation and a nice clean finish. There is a distinctive sweet aroma. Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. But I drank a little too much from Thursday to the weekend 😓. I'll enjoy a quiet rest day for the first half of this week 😮💨.

Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.

@Koriyama Iando After having a drink in Omiya, I got tired of going back to Tokyo, so I jumped on the 🚄 and went to Koriyama. I decided to have a quick bite in front of the station, but it was crowded everywhere, so I went to a new restaurant that I found. They have a good selection of local sake, and I chose "Yuri", which I had never had before, and it is from the same brewery as Aizu Nakasho! I heard that this sake is brewed by a mother and daughter who are both sake brewing technicians! It has a soft sweetness at first, but eventually it becomes slightly dry and pleasant to drink. It is very easy to drink, which is impressive and delicious.

I bought a bottle of Ayagiku's raw sake because it seems to be rare. I bought it at Okura Sake Shop in front of Tamatsukuri Station. It is a new store opened this year. They seem to carefully select and handle brands that are not found in the Kansai region. They have a wide selection of sake brands such as Rairaku, Kinshi Morinori, Shonosato, Hizen Kurashin, Chitose Mori, Kikunoi, Hakuryu (Fukui Prefecture), Ayagiku, Hanashimi, Zoka, Morinokura, Rokkasen, Tenzan, etc. Sake made with Sanuki olive yeast. Fresh, rich, sweet and acidic. The acidity is impressive, but there is also a bit of spiciness in the latter half. It has a light mouthfeel for its alcohol content, perhaps due to the acidity. It does have a slightly tropical flavor.

Quite a fine Junmai Daiginjo sake. There is enough mellow deliciousness. It is a talented brewery in Saitama. Aside from Kamikame, it is the second best sake in Saitama after Hanayo-yoku.

This is the first time I drink it at home. I bought it from Kurumiya in Hachinohe because they only sell one bottle of sake in my neighborhood. I also bought two other kinds of sake that cannot be bought in Kansai. The packaging was very careful and excellent. The aroma is subtle, with hints of strawberries and berries. The refreshing sweetness and acidity are pleasant. The final taste is bitter. I have the impression that Miyamanishiki and other sake I have had in the past were sweeter. I wish there was a store in Kansai where I could buy Shugou... I heard that the sake brewery here is aging, with all the employees over 65 years old. I wonder if that's why they don't distribute much.
