I had my first bottle of Shinshin in spring and it was delicious! I was able to get a bottle of Shinshin's summer sake, and I immediately opened it 😋. Slightly sweet and refreshing taste like summer sake🤣. It's as refreshing as the label says and perfect for a hot day like today 👍 thanks for the drink❗️

Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. But I drank a little too much from Thursday to the weekend 😓. I'll enjoy a quiet rest day for the first half of this week 😮💨.

Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.

The website says "lukewarm or hot heating is recommended"! I had no choice but to drink it. ❗️ I drink it with a sake cup that my eldest son gave me! Sake temperature: 45 degrees. The fermentation smell is gone and the aroma is not strong. In the mouth, the soft sweetness is still there, but the thickness has increased and there is not much acidity. The sweetness slowly lingers on the tongue. This is delicious. ❗️ I want to drink it slowly without snacks on a long autumn night!

Souvenirs from Saga 🤗No.1 The top aroma is like red miso or buckwheat flower honey, the type I haven't tasted recently. 〰︎ As the temperature loosens up, it has a fruity bitter chocolate flavor with a strong acidity 😚 I thought I remember smelling that aroma of BASE BREAD chocolate somewhere 😚 It seems to be a slightly classical rich dry type, but it had an interesting flavor........ Another bottle I bought at Hasegawa-san in Tokyo station. The first time for Otokoyama-san in Yamagata This is also the original label of Hasegawa-san. The rice used is Miyamanishiki, so it's the same as "Junmai-shu Gold Label". Anyway, it was a delicious sake with a lot of fullness. The sharpness isn't bad either, and it's perfect as a sake for a meal. I thought it was good for everyday drinking. That's about all I can say for a 1-gallon bottle...
