Slightly melon-like finish The same subdued, fruity aroma as the first sip, with a hint of vanilla and a hint of azuki beans, soft sweetness and umami of rice spreading with a refreshing acidity, and finishing gently with a hint of bitterness and a slight spiciness from the alcohol. It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The "Raku" on the label represents the over-filled rice, and the blue color represents the pale face of the toji-san. Gutsy, but quite sweet and sour. It is much sweeter than other Raku no sei I've had, but I also feel its character. The rice is from the terraced rice fields of Hida. The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. My father bought it for me as a souvenir from his trip to Aomori. The nose has a faintly acidic aroma. In the mouth, there was a delicate acidity from the sake yeast and a calm, gentle sweetness and richness. It was a crisp sake, typical of Sakuta's special pure sake. It was delicious, but it was not so good when it was warmed up 🤔.

It's not a great deal in terms of price, but I look forward to it because it contains brands that I don't usually buy. This one has the sourness that is typical of a traditional sake brewery, but when you drink it lightly, it is refreshing, and as you continue to drink it, the sweetness comes slowly. As the day goes by, the sweetness will increase even more. The sharpness is not that great, but it is not overpowering either, making it a good all-around sake. The price is less than 1,000 yen without tax, but I️ think it's quite competent.
