Chitosekizuru light nigori with hibernating hikuma label 🐻. When I opened the bottle, it made a nice sound as it popped vigorously. ❗️ There was a pool of oriki at the bottom of the bottle, so I poured the top clear liquid first, and it was shwashy and sweet and sour, followed by a slight woody aroma. When mixed with the corkage, the sweetness is surprisingly reduced and the rice aroma increases, making it a dry adult calpis soda 😋.

The first bottle of the New Year is Tobiroki's Kasumisake🎉! The first glass was the supernatant, which had a soft sweetness and gentle acidity, and then gradually a slight bitterness with a crisp and clean finish! 2024 Fuyu labeled by Mitsuo Kunekune. The host brewery is Otokoyama Shuzo. The aroma is slightly aged with a light yellow tinge. 50% polished rice makes it smooth and refreshing. The taste is the opposite of the softness of the label: dry. The taste is the opposite of the softness on the label, it is dry, but when it is cold, I felt something different, but then I decided, wait a minute, this is a winter sake from Yamagata and it is suitable for warmed sake, so I heated it up a little and the sweetness and rice flavor came out and the balance of sweet and spicy became just right, and the last part is crisp and clean. It was definitely better when heated.

The sweetness is quickly followed by the umami bitterness. When stirred, it turns light purple, and the sweet and delicious flavor is fused with the spicy bitter acidity, giving it a green apple-like flavor. It is the ultimate food sake with the silky smoothness of orikarami. ☺️

The first Mimurosugi in a long time is an unfiltered, unpasteurized, unblended orikara sake made from Bodai-Hashidashi Yamada-Nishiki in a wooden vat. When the bottle is opened, gas is released and the top clear liquid with a little bit of orikura that had accumulated at the bottom of the bottle is served first. In addition to the clear sweetness without any clinginess, there is the aroma of wooden vats in the distance. However, the aroma of the wooden vat is very slight and does not interfere with the flavor. When you mix the orikiri well, the sweetness is reduced, and a bitterness that was not present in the supernatant comes out a little. The sweetness of the sake is controlled and a bit of bitterness that was not present in the supernatant is released when the oriki is mixed well.

The long awaited Hirotogawa Nigori 🤍. When I opened the bottle, it almost blew out, but just in time! It was so vigorous that even though I tried to pour the supernatant as much as possible, it was almost agitated, resulting in a cloudy white color. The taste starts out moderately sweet and tasty, and gradually shifts to tasty and bitter. After mixing well, the sweetness settles down and becomes balanced with the bitterness, and the final taste has a nice sharpness! The alkalinity seems to have dropped one degree from last year to 15 degrees, but it was outstandingly delicious again this year 😋.

I'll have a bottle of Hakusyu from Tedorigawa 🤍. First of all, I opened the bottle slowly without shaking it! When I poured the supernatant into the glass, it was full of shrieking, energetic gas. It has a refreshing sweetness with a slight aroma of grapes, like a sparkling wine. When shaken well, it became cloudy and the sweetness of the rice increased, and the last taste was gentle and deliciously bitter. At a low 14 degrees, this is a beautiful sake that will keep you pouring more ✨.

The first bottle of this wine is a bottle of Oragura Orikagami, which I was looking forward to drinking. When I cooled it well and opened the bottle, it made a nice sound. After mixing the orikiri well and pouring it into a glass, it becomes cloudy and the umami of rice and gentle sweetness come out in the front. The last part has an excellent sharpness with a strong spicy bitterness! When the temperature rises a little, it is time to drink, and the sweet, delicious, bitter, and spicy aroma becomes more pronounced and even more delicious. Sometimes I want to drink a pack of sake. Tonight we will have a Junmai Daiginjo from Akaban Omachi! With a sweet aroma, the first sip is overflowing with sweetness and juiciness.... The freshness and smoothness of the mouthfeel is a result of the 50% polished junmai-daiginjo-shiboritate. It is a low alcohol sake with a low alcohol content of 13%, but it has a strong umami flavor that will keep you coming back for more.

It's been a while since I've had an Ecru 🎉. There is almost no standing aroma, and when you take a sip, it has a slightly soft woody aroma, acidity reminiscent of grefr, and a slight bitterness. It has been a while since I have had Morishima! It seems to be the only junmai sake in the Morishima range. It has just a hint of sweetness and a gentle acidity. It finishes with a delicious bitterness and a lingering taste like white grapes. Overall, the taste is calm. It seems to be bottle-warmed and fire-quenched, but it is fresh as if freshly pressed and very tasty to the palate 😋.

Sono Kangiku's Ken Aizan. Last year it was fire-aged, but this year we will have an unfiltered, raw version of a special order purchased from Yajima Sake Shop! It starts with a hint of grape aroma and a soft sweet flavor! The mouthfeel is smooth and light. As you continue to drink, the bitter and astringent taste and aroma gradually appear, and the last part has a lingering alu feeling and a tangy, spicy aftertaste. I am sure you will not be able to stop refilling and will empty the bottle as soon as possible 😋.
