Happy New Year 🎍! We toast to the New Year with our first bottle of Seikishi-Sama 🎉. It is full of juicy sweetness as if you have bitten into a pear, and gradually the bitterness and astringency mixes in nicely. It is a beautiful sake with a very clean quality that goes down smoothly and without resistance 🥰 Furthermore, it is a good luck sake 🐎✨I hope you can find a good sake 🙏. Banshu Ikkyo is made from Watabune No. 2, the father of Yamadanishiki. It has a white grape-like aroma with a slight, gentle sweetness. The spiciness comes in later and has a crisp and sharp outline. It has a fresh and lush taste, and has a nice sharpness. The slightly low alcohol content of 13 degrees Celsius makes it very easy to drink and keeps the sake flowing.

We have not had a glass of Yamanoi Ooragarami for a long time 🎉. As usual, when you drink the supernatant, the soft sweetness is followed by the spiciness and astringency of the alu flavor, and the finish is crisp and clean. The sweetness, spiciness, and astringency become even richer when the ori is mixed with the rest of the sake. A few days after opening the mouth, the aroma became better and the curd was removed, making it even more delicious👍. It was much tastier than the impression I had a few years ago 😆.

For a long autumn evening, we chose "Tenagoshizake," a sake that has passed through the summer. The standing aroma is subdued, but one sip reveals a deep grape aroma and the gentle sweetness of pears. Gradually, the astringent and complexly mixed umami comes in. In the second half, spiciness with a sense of alcohol rushes in, and the last part is again a lingering sweetness of pear. It was a summer sake with concentrated umami flavor while maintaining its freshness.

This is the red label of Denshogiku, which sells out immediately and is becoming harder to find every year. First, let's take a sip of the supernatant. It has a juicy sweetness that overflows with a gaseous sensation, followed by a slight accent of umami bitterness. It is delicious and neatly organized 😊. When mixed well, it is silky smooth with a hint of orikura. It is even more delicious with increased umami and richness 😋. I'll be drinking more next year, praying that I can drink it again...

Kikusen by Nishida Sake Brewery. I had already drunk the same brewery's rice wine, but this was my first time to try Kikusen! It has a sweet aroma and a soft sweetness. The sweet aroma, soft sweetness, and a bit of sweetness, but the spicy bitterness that comes later tightens it up, and the more you drink it, the more umami it tastes. I haven't been able to drink Sentori since the label change, but today I will have a bottle of Retro Hi-ire! The label already has a retro feel to it. There is almost no standing aroma. It has a soft sweetness with a hint of sourness. The bitterness and spiciness with umami gradually come out and disappear beautifully at the end. The natural flavor of the sake's natural yeast yeast production ensures that you never get tired of drinking it, and the alcohol content of 13 degrees Celsius further accelerates the drinking process. It is not as old-fashioned as it appears on the label, and its acidity makes it the perfect sake for the lingering summer heat of this season 😋🍶.

Today is Shinsei Day! Although it is not No.6 this year, we opened a bottle of our favorite colors Viridian 🎉. It has elegant sweetness and umami, acidity but not too strong, and a slight bitterness at the end. There is also a slight aroma of wooden vats. None of the sweetness, umami, acidity, or bitterness stands out, but the four tastes become one, complementing each other and doubling the deliciousness. The clean and smooth mouthfeel will keep you coming back for more! Shinsei is really good!
