A reproduction of a Muromachi period sake.
It is so sweet that it really is pure sake without additives. The taste is similar to Shaoxing sake, as is the color. Soda is also recommended.
Oki Honor Daiginjo bought in Oki Island for the end of the year with my father at home. It has the lightness and odorless sweetness of a daiginjo with a strong rice flavor. It is tasty, but the lack of the mellowness of recent sakes is a little lacking, but I think that this kind of sake should be called daiginjo.

Reminiscent of Shaoxing sake and ice wine.

Rice used is Oki Kami-no-Mai
Kaminomai is a cross between Gohyakumangoku and Miyamanishiki.
It seems to be grown only in Shimane Prefecture.
This sake is said to be a reproduction of a late Edo period to early Meiji period sake
It has an impact, but the mouthfeel is surprisingly soft.
It is dry and crisp.
The umami of the rice is directly conveyed.
