100% Honorific Fuji Kihei Special Junmai Honorifuji (Shizuoka Brewery, Shizuoka) The slightly sweet, gentle mouthfeel is harmonized with the full flavor and mild acidity typical of Etsuyofuji, resulting in a clean taste typical of Shizuoka. The lingering aftertaste fades away quickly, and the lightness is pleasant without tiring. It is a well-balanced sake that is easy to pair with food and can also be enjoyed on its own. We were very happy to have received this sake from our relatives in Shizuoka. Preference Score: 7/10 Aroma: 1|Mouthfeel: 1|Medium: 1|Final Taste: 2|Price: 2 → This is an easy-drinking beer that goes well with a meal. It has no outstanding individuality, but it is a bottle that can be enjoyed with peace of mind, including the price.

National Sake Fair 2025 Day 2⑭ Shizuoka ①. Shizuoka Heiki Sake Brewery in Suruga-ku, Shizuoka City. Moved to Okayama in 1967 but resumed sake brewing in Shizuoka in 2012; with about 100 koku, it is the smallest brewery in Shizuoka Prefecture Even in Shizuoka, there are still only a few stores that sell it. The brewery's staff was very helpful, and when I returned home I found out that he was the president and toji (master brewer). He is also the president of Heiki Brewery in Okayama and is still young in his 30s😳. We drank Junmai Daiginjo Yamadanishiki Red Polishing ratio 40% Yamadanishiki 16-17%, 3300 yen This sake was made for a national sake competition. It is a fruity, rich and juicy type of sake, which is not typical of Shizuoka. When I mentioned this to the brewer, he told me that they use 1801 instead of Shizuoka yeast. Junmai Daiginjo Yamadanishiki Ao Polishing ratio 40%, Yamadanishiki 16-17%, 3300 yen This sake was made for the Shizuoka Prefecture's annual sake competition. This one uses Shizuoka yeast. This Daiginjo is completely different from the previous one in that it is less assertive and more food-friendly. It tastes very Shizuoka-like. Both bottles and labels have a luxurious feel, but at 3,300 yen, they were not as expensive as I thought they would be 😅I expected them to cost around 5,000 yen. I was going to try the Kihei from Okayama, but forgot to go to the Okayama booth💦.

Today I bought a bottle of Shizuoka sake. I saw it in the souvenir shop and bought it on a hunch, but it was a winner. I like dry sake, but it is not sweet enough for me. There are many delicious sakes in Shizuoka, I am happy and happy.
