Hyakuban, which you can only find here. I'm always thinking about buying it when I come here, so I'm glad I got to taste it. The tasting order was a bit earlier, but I forgot 😓.
Hyakuban Junmai Ginjyo Orikigarami Nama-nara Sake.
There was a hint of orikori. It has a silky sweetness and a bit of bitterness that is not too assertive.
I would like to try other kinds of sake because they are also colorful labels.

I went to the tasting just as I was thinking of going to Kyoto because I had some sake I wanted to buy 😁.
The train was running very late, so we had to change our route and arrived a little late, sorry for keeping Nemuchi and Ao waiting 🙇.
I didn't have time to buy any entrée, but I got a lot of food 🙏.
The first one was my first Hyakuban!
Rice is Ginotome
Rice polishing ratio 55%, Sake degree +-0, Acidity 1.7, Amino acidity unknown
Alcohol 16%.
I had the impression that Hyakuban was a spicy sake, but it is sweet and delicious.

Iwate is the pride of Ichinoseki, in the southern part of the prefecture, and the Iwanoi Sake Brewery "Hyakuban"!
It is my favorite brand.
Hyakuban is a dry yet umami style that is similar to Niigata sake.
This time, the sake was a rare type of sake called "Hi-ire" (hi-ire of raw sake). In contrast, I realized that I have been drinking only nama sake and unfiltered nama sake.
Despite the fact that it is not a ginjo-shu, the aroma is fresh, clean, and sweet, reminiscent of bright red apples.
This high aroma is the result of Iwate's original yeast, "Yuko no Souri".
I was born and lived in Morioka City until I graduated from elementary school. The elementary school I attended was surrounded by apple fields, so the children were called "Ringokko.
It is a vivid apple-like aroma that brings back the spirit of "Ringokko".
In the mouth, you will find the same moderate apple-like sweetness and refreshing acidity as in the aroma.
Then, the pungency of the alcohol gently passes by. The mild dryness melts in harmony with the acidity.
I was thinking about what to do when I couldn't fit the word count, and before I knew it, I fell asleep.
It is a modest sake, but has a strong aroma and flavor that makes you feel at ease when you drink it.
That's what I wanted to say. (Laughs)
We had a good amount of it for outside drinking. The aroma is subdued and the umami is alive and well, and I never get tired of it. I think it is a brand that should be appreciated more.

is a policy of drinking happily.
Now, Hyakuban, red. The sake rice is Ginotome and the yeast is Yuko no Sou. It is a perfect match for Iwate.
The light aroma is perfect for the mid-palate.

This sake is made from Ginginga, Iwate Prefecture's preferred rice for sake brewing, and is a watered-down summer sake type.
The yeast is Yuko no Sou. It is a yeast created by Yuko at the Iwate Prefectural Industrial Technology Center.
It is mainly used for junmai ginjo type sake.
This is a summer sake, so it was quite refreshing.
Although it is a draft sake, the alcohol content is only 14%, which makes it easy to drink.
It was a light sake with a fruity, but subdued aroma.

The moderate bitterness afterward from the lactic acid system was impressive.

I drank it at the previous tasting, but I wonder if the label color is different. I'll be with you next time, Mr. Okayama!
