Sawahime was in stock, but I wanted something else and couldn't buy it all at once 😅
The first part is fruity and sweet. The second half is quite firm and dry. It is spicier than Yamahai and Tokubetsu Junmai, but the lingering ginjo aroma is pleasant!
Sawa-hime has a wide range of flavors, which is very interesting.
I paired it with melon and it was delicious.
I think it tastes sweeter after a few days than freshly opened!

My friend stopped by Chuzenji Lake and bought this for me!
I thought Hitogokochi was a sake rice only grown in Nagano Prefecture, but it is also grown in Tochigi Prefecture 😮.
It was a delicious, easy-drinking sake with the strength of Yamahai and the riceiness of Junmai 🍶.

Very mellow! It has a perfect balance of rich, sweet and spicy flavor. I love the sweet taste right after taking a sip!
It tastes better a little longer after taking it out of the refrigerator.

I was going to throw Sawahime 3 times in a row but I put a figure in between 😁.
I bought a lot of Sawa Hime at a local liquor store 😊.
Purchased at the brewery store. It is a test brew. It has a clean sweetness and a refreshing aftertaste. I haven't recommended it to the ladies at home yet, but I'm pretty sure they will like it.
The aroma was not very pleasant, but when you put it in your mouth, you can smell the sake-like aroma. The taste is fairly sweet. It is quite a refreshing sake.
Summer excursion. We went to Nikko Yumoto Onsen and enjoyed the hot spring. Unfortunately, the weather was so bad that we went directly to the hot spring resort without any sightseeing 🤣 I wonder what the weather will be like tomorrow.
So, we had a local Tochigi sake with dinner. I drank the same sake last year, Sawahime's Kasumi Sake. It has a gaseous taste and even though it has a high alcohol content, it is easy to drink.

Nama sake version of the sake we had at Keihan department store
It feels juicy and rough.
When opened, it is about half sweet and half spicy, and feels much wilder than the fire-aged version. When the temperature rises a little, it has a juicy sweetness like golden sugar candy. The bitterness is strong towards the end.
It is a little difficult to describe with my vocabulary.

Purchased at the brewery's store. It has an elegant sweetness with a smooth aftertaste. The umami is unique and hard to describe. My wife and daughter loved it. I was a little surprised that there was a second cup, which I usually don't have.

The Sawa Hime booth was manned by the same brewer who was at the Sake Brewer's Festival, and later, Mr. Bouken told me that he was the Touji (master brewer) of the brewery.
This time, the lineup was mainly regular.
Sawa Hime Special Junmai Gohyakumangoku
The most standard and basic sake.
It has a rice flavor, a well-balanced acidity, and a refreshing aftertaste. It is easy to pair with meals.
Sawahime Junmai Ginjo Hitogochi
A light and dry sake with a refreshing sweet and spicy taste. It is not tasteless, but has a gentle flavor. It is a perfect match for both Japanese and Western cuisine.
Sawa-hime Junmai
Mild sake made with Tochigi Sake 14.
It is a little spicy with a refreshing acidity, but it is a mild sake. It seems to be made with a sake degree of 0 to +1.
Sawahime Yamahai Junmai
A wild type of Yamahai using Hitogochi. The acidity is very strong, so it is said to be mischievous. It has a juicy flavor and a slight bitterness. It has a tangy and naughty taste.
Sawahime Junmai Gold
A little hard, matured and slightly burnt. It has a little bit of a richness to it. When I bought it at the brewer's festival, it was labeled 2019. It's more peculiar than weird.

Junmai Tochigi Sake 14
I have had a draft sake before, and the impression of a strong and sweet sake is almost the same.
Yamahai Junmai Hitogokochi
It says "wild," but I couldn't really tell.
I think it's wilder than nama-hashiwado.
Yamahai is juicy and bursting with flavor.
Junmai Gold
It's sweet but has a strong sense of maturity. It is like Shaoxing sake.
It seems to go well with Japanese sweets. It tastes like a typical matured sake, so the level of perversity is probably low.
When I told him how hard it was to open the nigori I drank at New Year's, he asked me if I bought it at Ikoma-san. I was asked if I bought it at Ikoma-san.
Maybe they don't wholesale to other liquor stores in Kansai?
Other liquor stores said they only get orders from time to time.
I am looking forward to the new shipment of the Jun, Jungin, and Yamahai versions of Nama-Harakai sake from Icoma.
Nanoha and I enjoyed two days at the Tochigi Sake Toast Festa. I don't remember how many kinds of sake we drank, but I would like to say as many as I can remember.
