The rice used is Yumesasara from Tochigi prefecture.
It is a low alcohol type, but it has a moderate sweetness, and as expected from an unpasteurized sake, it has a crisp taste.
The acidity is also a bit like white wine, so it can be used with western food.
It is an all-round food sake.
It is the first time to drink Sawahime, so it is difficult to evaluate only this one, but it is an interesting brewery!
