First check-in for Tokushima sake. I bought this when I visited a sake brewery on a trip to Tokushima. The aroma is quite fruity, and the mouthfeel has the umami of rice and a little bit of thickening. As you sip it, you will gradually taste acidity and spiciness. The change in flavor is interesting.

Thanks for your comment, Jaynoby. I have 4 more prefectures to go before I conquer the whole country, but only Kyushu-Okinawa seems to be the difficult part😅Naruto sea bream is often seen outside of Tokushima. If you have a chance, please try it there 😊.

This was the sixth sake we chose to drink at a sake event in Otsu, Shiga Prefecture. This sake has a strong umami flavor, with a sense of maturity and a freshness that is unique to the original sake. It is delicious, but it is quite intoxicating.

Blended Junmai-shu, a collaboration of Shiga sake breweries in honor of Sake Day. I was curious to see what it tasted like, so I bought it. Although I wasn't sure which sake brewery to classify it under, I went with Kita Shuzo, the manufacturer for now. It has been about a week since I opened the bottle, and the taste has gradually changed from fresh and dry when the bottle was first opened, to dry with a hint of umami now. It is an interesting sake.

Last fall, I went on a trip to Nagano and bought this Shinshu Kamerei at the Okazaki Sake Brewery in Ueda. Since Shinshu Kamerei itself has become a rare sake that is hard to find, I was a little hesitant to open the bottle, but I had accumulated a stock of sake that I bought on my trip, so I opened it. After taking a sip, I was surprised in a good way that this was a regular sake. I was surprised in a good way. It tastes sweet and umami, with a touch of gas, and finishes with a slight bitterness and sourness. Although it is alky, it is not at all dull and is quite easy to drink. It is dangerous to drink without hesitation.

At Takatsu Sake Shop, I purchased Matsuo, a sake from Nagano Prefecture that I had been curious about the last time I visited. It has a soft, fruity aroma, and when you take a sip, the sweetness comes first, followed slowly by the spiciness. The change in flavor is interesting and delicious.

The second drink of my trip to Toyama was sake from a brewery in Himi, Toyama. It is rare to find this sake in the Kansai region. The label was decorated with gorgeous autumn leaves. It has a subtle aroma, a slightly matured taste, and a lot of umami.

Toyama trip, dinner & sake at a restaurant in Takaoka. The restaurant has a good selection of sake from Toyama and other Hokuriku regions. The first sake was Katsuma, a dry and refreshing sake with a delicious rice flavor. It goes well with the seafood from Toyama. It is delicious.

First visit to Takatsu Sake Shop in Kusatsu City. I was surprised at the wide selection of local sake from Shiga and other regions of Japan, including Laughing Season, and after much deliberation, I bought a bottle of Sanryusei Hiyayogoshi (hiyaoroshi). The color was a little yellowish, the taste was umami and sweet, with a touch of spiciness coming later. I would like to try it heated.
