This is the first Senkou after the return to Edo. The aroma is grapefruit with a hint of rummy. When you drink it, it is chili-swirling, with grapefruit acidity and bitterness, and a juicy, juicy feel down the throat. Rolling on the tongue, it has a light umami taste. When mixed, the riceiness increases. The fluffy sweetness, citrus sweetness and sourness, and a bit of bitterness make it go down easy as ever...and it's 13 degrees. The wine is still chili after a couple of hours, and has a grefle freshness. The bitterness is only a nuance, not so much that it is clearly perceptible, so it doesn't get stuck, but it plays a good role without becoming monotonous. There are some aromas and flavors that I don't like in a sake, but this one is not too complex in a good way, but the umami is not too thin and yet it is clear. I don't know how difficult it is! It was a stable taste. Before I knew it, it had been a year since I started Sake-no-wa..! In my first post, I tried to write in the "is-tasu" style, and then I wrote "...is...". I was embarrassed and thought, "Who am I writing to when no one is looking? I felt embarrassed and continued to write in such a dour (?) tone.... I didn't blow it, but when I opened it, fine bubbles came up in the bottle with a swish. The aroma of the supernatant is slightly sour and koji-like, too? When I drank it, I felt something different from what I imagined! What is it? Sweet and sour...a little koji sweetness? The aftertaste is a little sweet and sour...a little koji sweetness? When you mix it, it has a slightly sweet aroma. When you drink it, you can still taste the koji-like sweetness and acidity, and you can feel a thick, gradual umami on the side of your tongue. Before drinking it, I thought it would be more of a rice-dry type, but it has more of a sweet and sour taste like amazake. It is also delicious. As the day goes by, the taste becomes more familiar, and I think I like this one better. While it has a koji taste, it also has a soft umami, bitterness, and a hint of sweetness. It has a strong flavor with a clean aftertaste, and I enjoyed it.

The first bottle of the New Year was a limited edition Year of the Snake sake from Mimuro Cedar 🐍. The aroma is rumney, grapefruit, and a bit of koji. When you drink it, it smells like chirichiri, ramune, and carbonation. It has sweetness, but that is Mimuro Sugi's sense of balance, and it disappears quickly and clearly. It has a rich, fresh flavor that is not too sweet, and although it is 13%, it is not too thin. It tastes great the next day as well. It is fresh and light, but has a rich umami flavor. It has sweetness, but it is clear and transparent. The flavors build up like a mille crepe, and when you put a fork in it, it feels like it's melting in your mouth. I can't really explain it, but... 🍴. I also used it in a tososo (a traditional Japanese slaughterhouse) to bring good luck, but it turned out to be very tasty. I am spending a lazy New Year's, but the delicious sake was a good start to the New Year 🍶.

Sake that I received on New Year's Eve 🍶. I went to a liquor store and happened to see it on display, so I was able to buy it, and now I'm going to open it as soon as I finish drinking. The aroma is sweet? It smells like pineapple and cotton candy. When I take a sip, it has a slightly thick, chili-like mouthfeel, a pineapple-like acidity, and a lot of freshness. Finally, there is a hint of bitterness. It also goes well with food. I am always amazed at how popular sake tastes when you drink it, and I am convinced that it is delicious. It's really delicious. The next day, it mellows out, but the freshness is still there. There is a sense that the liquid is moist and permeates the mouth along with the umami. There is a sweetness, but I like the feeling that it doesn't linger in the mouth because of this permeating sensation. At the end, you are left with the lingering sensation that you have had a delicious sake. It was the perfect ending to the year. When I opened a bottle of Jikkoman, my father, who is a whisky drinker, offered me a bottle of his favorite whisky as it was the end of the year. Even I, a whisky beginner🔰, could tell that it was even better than sake...amazing. He seemed to still have a stash(?) of the now hard-to-find one he got a long time ago. He seemed to have some 🥃.

Happy New Year 🎍🐍. ...but just a few more end of the year drinks posts. The aroma is sweet, maybe a little syrupy. The impression is similar to the Aka Dragonfly I drank the other day. It is mildly fresh with a slight bitterness at the end. This is the kind of wine that goes well with strong meals at this time of the year! The next day, the aroma and sweetness become milder, and while it still retains some of the freshness of the Chiri-Ro, it goes down like water. It is mellow and has a clean aftertaste. When paired with sweet Japanese dishes, it is quite a bit lighter, but the umami is still there, so it is a great match and delicious. I thought it would be a good accompaniment to oseki-yaki. Last minute drinking, last post of the year 🐉. It's a fall drink... 🍁. The aroma is a little sour with a hint of syrupy sweetness. When you drink it, it's a little chili, sweet but it cuts right through the sweetness, like a young peach. I was surprised to see this flavor coming from this label. Preconceived notions are not good. It is indeed sweet, but it doesn't linger. The image doesn't change much when heated up. It disappears without a hitch at the end. Stable the next day. This is delicious. It has a good sweetness and umami, but it also has a freshness to it, and although it does not have a strong sharpness, it has a nice tightness to it. I think it can be matched with relatively any Japanese food. I enjoyed it very much. This year, since I started Sake-no-Wa, I have learned about various delicious sakes from everyone, and I am happy to have had the opportunity to interact with them through comments. I accidentally knocked it over and it was too late to rescue it...it came leaking out of the gas stopper, so I opened this bottle in a hurry. We were able to compare two bottles of nigori on the same day. I was too late to rescue it. The aroma was of sweet, clear rice and koji. When you drink it, it is soft and smooth, with a powdery rice feeling like rice powder, a hint of pear in the back, and the sweetness and umami of the rice, but it is still very refreshing. It finishes rather dry with a slight bitterness, a feeling of warmth from the alcohol, and a lingering taste of rice. The next day, the supernatant has a slightly sour aroma. When you drink it, it has a bubbly, fizzy taste with a hint of rice flavor, but it has the atmosphere of a very light soda water. When mixed, it became very cloudy! There is an amazake-like koji aroma, but it is not sweet. It is a little bitter and dry, with a tasty texture. This is also available as a warmed sake: ♨️ Kamikan: Not much aroma? Slightly amazake-like. When you drink it, it's just rice. Nothing else. It's still dry, with a touch of alcohol. As it cools down, it has a bitter taste. When heated, you can taste the sweetness of the rice. It would be better to raise the temperature to this level to reduce the alcohol taste. The Fukusuku is a bit more fruity and dry, while the Hakuro Taruzu is more ricey and dry with a gentle nigori taste. Both were delicious!

I tend to buy the type that recreates a snow country in the bottle (lees piled up). Opening the bottle takes a very long time, just a little bit of opening is all it takes to get a bobble and a great mixture 🫧. The aroma is a little bit of cooked rice and rummy. When you take a sip, you get pear, thick, kona kona rice, and a lingering bitterness in the back of the mouth. There is a slight fruity pear taste in the back of the mouth. Smooth shuwashu nigori: ❄️ The next day's supernatant, not much aroma...a little pear? When you include it, it's clearly pear soda, and rice behind the slightly fruity pear. Mixing, pure white! Continues to be a little pear fruity and bitter. The rice konakona and mash are more intense and delicious. The feeling of drinking nigori is amazing! I'll try it warmed up: ♨️ Kamikan, the aroma is pear and rice. When you drink it, it has rice and a crisp alcoholic kick. Hot sake, the aroma is slightly sweet rice and a hint of pear. When served hot, it has soft pear and rice, and the alcohol taste may be reduced. I may have said too much about pears...but I enjoyed it with a slightly stronger meal. One and a half hours to go... a review for the end of the year's drinking... can we go a little longer!

🎄 This is the one I had for Christmas. It was a weekday but just to get in the mood! The aroma is fruity with a hint of apple and rummy. With the top clear, chili shuwa, Akabu-like acidity, apple, and a clean finish. When mixed, oh, it becomes quite ricey. Apples, acidity, and rice. I was a bit surprised because I had always thought of Akabu as fruity and juicy, even though it is an orikarami. Of course, it has those things too! I guess it's interesting how the flavors of orikara become more complex when mixed together. The next day, the base was still fruity, sweet, and sour, but it was more like a rice soda. I thought that today would be the day for the usual Akabu's sour fruity taste, so it was surprising that it leaned more toward rice on the second day. But it is delicious. The end of the bottle is less acidic than expected. The end result is a light nigori, a mild rice flavor. It was an enjoyable Christmas with the unexpected and Akabu-ish parts 🌟. I hope to catch up with your post before the end of the year... I'd like to see the change after a few days of opening the bottle... So when should I raise the alcohol to be opened today or tomorrow? I'm wondering 🤔

Pon! and the bottle was opened vigorously but did not blow. The aroma was koji-like, rice? There is also a slightly sweet sourness. When mixed, the aroma does not change much, but it seems to become a little sweeter. When I put it in, it also becomes a little sweeter and mellower, and I can feel the rice. But it is not as sweet as I imagined. It is quite citrusy, with a hint of sourness. As the label says, the aroma is tangerine-like, but the taste is more like lime or grapefruit. You can drink it like a juice. I wondered if it would become sweeter after a few days, but it didn't. I thought it would lean sweeter after a few days, but it doesn't. It seems to hover between lime 🍋‍🟩 and tangerine🍊. The fizz gets weaker, but it's still easy to drink, and I enjoyed it at a steady and appreciably low al. Well, the temperature continued to be 5-10 degrees, so I'm sure my liver got a good rest for the end of the year and the beginning of the new year 🍶.

The aroma is apple🍎. When you drink it, it's tangy and still apple. The sweetness comes thickly, but it's not sticky, and then you start to taste the apple flavor. The sourness comes in, and there is a slight alcohol taste, and it ends with a squeak. As one would expect from a rice wine, it is very tasty! It's not supposed to be a goku goku type of taste, but before you know it, it's gone before you know it. Somehow I feel that Aomori sake often has an apple-like taste...is it a yeast problem? Of course there are plenty of apples in other parts of the world 🍎🍏. As the day goes on, it seems to get a little heavier and sweeter, but it's not hard to drink. I'm glad it keeps its lightness, even though it seems to come with a thud. The lightness is accompanied by a moist sweetness and umami, and the finish is crisp and tight with a slight bitterness. The taste is relatively neutral, and I think it is the greatest common denominator.

冷蔵庫の、立てて保管できるスペースを開けてかないと、穴あき栓とかどんどん来ちゃうので…6月ロットをやっと開けます。 ほんとは全部立てたいけど横に寝てるお酒たち…すまない。 前回飲んだ時もだが、開栓はとても時間がかかった。邪道かもだけど必殺・一瞬冷凍庫🧊!を数回繰り出し、なんとか開栓。 香りはお米・りんご🍎 含むと、しゅわっしゅわで、お米とりんごがかなり強く主張する。リンゴジュースぽく、かつ、香りがお米!なんだろう、フルーティーでもあるけど、甘さはお米の味の甘さだと感じる。美味しい。 翌日は上澄みが取れた。 甘くてすっぱい、りんごのシュワシュワレモネード🍋でもごはんもある…すごい。混ぜるとごはん増し。見かけによらず濃い!そこがいいところ。 ひとつ前の豊盃の感想でもリンゴとゴハンを連呼していたが、味わいは全く異なる。 美味しいなぁ。 5度だしゴクゴク飲みたい時とか、日本酒はあんまり…な人と一緒に飲みたい時とか、あったら有難いやつ。 2月あたりにまた出るかな?

It doesn't feel like it has 16 degrees in a good way. When heated, it smells like freshly cooked rice. The translucent Japanese paper-like label looks delicious and fits perfectly with the atmosphere of the new Orikara sake. First of all, the moment I opened the bottle, I was surprised to find it was full of shwash! I'm glad I didn't blow it out. The aroma is pear and melon. When you sip it, it's a melon soda with a lot of melon! The bitter taste is a little bitter at the end and disappears. The next day, the supernatant, which could not be removed the day before, smells like melon and is also melon🍈 when drunk. When mixed, the muckiness is reduced, the riceiness increases, and it becomes a milky melon soda. After a few more days, the muckiness disappears and it becomes a mellow rice melon soda. I wanted to drink something with a sour taste, so I opened a bottle of this one in a time leap to summer. The aroma is slightly fruity and sour. It is a bit like Monster minus the spice. As expected from Akabu, this is the kind of wine that makes you want to have another glass. It is delicious. I think I like the first day when the flavor is more balanced (although I drank almost all of it on the first day). Whether sweet or sour, I appreciate the fact that I can drink it easily without stress. Now, another new sake or nigori is waiting for me in the future, I guess?

On a recent trip to Shinshu, I bought a new Yamae-Nishiki sake at a brewery, so I suddenly opened a bottle of this one that I didn't know when to open. I wondered what the difference was between the brewery's limited edition and the commercial version. I wondered if it means that it is not sold anywhere else at that time of the year. The aroma is sweet and refreshingly fruity. I had a feeling it would be delicious. When you taste it, it is fresh and crisp like a meadow, and the delicious taste of rice comes in a fluffy way, followed by a little bitterness. Even after a few days, it is still chili, a little sweet, and refreshingly fruity. This is the kind of wine that makes you want to drink it all the time. After a little more time, the apple and grape-like sweetness increases, but it remains refreshing. It was sweeter than the Hitogokochi, but it was as good as you would expect. It will be a while before I open the brewery's limited edition, so I'll let you know about my visit. It was my first visit to this place and the atmosphere was very nice. I saw someone taking 📷 pictures with the brewery staff, but later I wondered if it was the brewer and the toji's wife. In the neighborhood, I bought walnut bread at a bakery called Levain, which was delicious 🍞. I dragged my friend, who doesn't care much for sake, with me, and when we got back, we almost couldn't afford it! It's delicious! I told him and he bought it with me, so I'm waiting for him to come to the swamp.

When you drink it, it has an atmosphere similar to that of Hanaizumi, but with a gentle sweetness. I saw a review of it at Sake-no-Wa and went looking for it, but Hirotogawa's Nigorigo was also in stock, so I bought it as well. The one I went looking for because I saw your review and it looked so good (all those things). The aroma is grain-based. I have never tasted anything like it. The next day, the chile-chile flavor remains and becomes more mellow. The supernatant has fruity acidity and rice. The rice is sweet and tasty, but the overall flavor is clean! When mixed, it starts out as muscat, then the rice slowly permeates through, and before it spreads too far, it is cut off quickly with a touch of alcohol. The bitter taste comes in at the end. Fruity, umami, and clear on the palate. When heated up, the aroma is of rice, and the rice is a little more relaxed. When you drink it, the fruity flavor remains, but after the sweetness of the rice is felt, it gradually disappears, leaving a lingering aftertaste. This was a delicious dish to be served with a warm winter menu. ♨️
