National Sake Fair 2025 Day 2㉟
Nagasaki 2②.
Fukuda Sake Brewery in Hirado City
I've had Fukuda a few times, but this was my first time to try Fukkai!
I have the impression that the distributors are also narrowing down the number of stores from the days of Fukuda, so I guess it's harder to buy 🤔.
Polishing ratio undisclosed, Reihou 14%, 1,750 yen
It's fire-brewed but fresh. Dry and light. A little minerality. Not too sweet, but a trendy sake quality.
Personally, I think it was better when it was made by Fukuda...
I like a sake called "Fukkai" too much.
I came from Tokyo to visit the brewery in Hirado, Nagasaki Prefecture.
We had a special connection and today, with the 15th generation brewer of Fukuda Sake Brewery
He took us on a sightseeing drive.
We had a great time talking about sake for hours.
After learning about the roots of sake
After learning about the roots of sake, drinking Fukkai was exceptional!
Not too sweet, not too floral, not too dry, but just the right amount of sharpness... that's what makes Fukkai so special!
For some reason, I had never been associated with Fukkai before.
It is fresh, clear, and delicious with a refreshing acidity.
Even though it is fire-aged, it has a freshness that is typical of nama-zake, and the aftertaste is very sharp!
This is a bottle that can be enjoyed by all.
I opened a bottle of this brand that I bought in early spring🍶! (*^^*) Easy to drink, sweet mouthfeel, with a sake feel at the end. The balance is very good and I think it goes well with everything except sashimi 🌝.
Fukkai-like goodness!
Grapefruity.
It's just a matter of taste, but I would have liked it better if it wasn't sparkling.
It was nice and summery, though!
The bottle was opened with a lively popping sound.
The label says that it has a pleasant slightly effervescent taste, but it is so pleasantly squashy that you would think it was a sparkling sake.
The taste is also refreshing, with a clean aftertaste.
The taste is also refreshing with a clean aftertaste,
It is a delicious sake that is easy to drink.
When the bottle is opened, it is quiet without any blowout.
The aroma is not flashy, but acidic and bitter.
After the acidity and carbonation comes the sweetness. The rice flavor and bitterness swells and finishes with little aftertaste.
It is similar to grapefruit. It has less acidity and bitterness than Koueikiku from Kyushu area, and is more balanced.
It is a real treat! I wish it would come to Hokkaido,
