I learned about Fukkai through a video on Salmon Lab. I was so moved by Mr. Fukuda's story.
Today, I would like to make a toast to the sudden encounter.

In the middle of GW, I had a lot of free time by myself this year, so I wandered down to the liquor store 🚙.
While I was exploring the store, I found a bottle of Fukkai-san.

He seemed to be asking me to buy it.

I think the pesticide-free one I had before was gentler and tastier.
This one is a little sharp and angular, maybe because it's fresh?

CRAFT SAKE WEEK 2025.
We participated in the Day 6 "History Brewed by One Sake". A distinguished lineup of 10 breweries that have been in business for over 250 years.
From Fukkai, which we received the other day, we compared the Yamada-Nishiki made by conventional farming method and the Yamada-Nishiki made without agricultural chemicals, although the manufacturing method was the same as that of nama-shu and nikkumi.
Both have a fresh gaseous taste. The conventionally farmed Yamadanishiki has a more direct sweetness, while the pesticide-free Yamadanishiki is more refreshing and has a deeper flavor. Both were delicious!
At my usual liquor store, I found a sake I had never seen before. I went to the cashier to try it anyway.
The clerk asked me, "Do you like Fukkai? It's an easy-drinking sake!
It was my first time to try it, and it was indeed refreshing and easy to drink.

The bottle was packed with a raw draft.
The aroma is weak and fruity. Sweetness and melon type aroma. The acidity and weak gasiness are refreshing.
It is a delicious, easy-drinking sake with an astringent taste that tightens up at the end.
We enjoyed it with grilled Hiramasa kama-salt, smoked salmon and cream cheese, and miso soup.
Thank you very much for making a delicious sake from rice that is outside of the standard.

It's a slightly tangy, slightly effervescent Usunigori with a slight sourness and a sweet finish that's very tasty 🤤.
I hope to enjoy Tainan a little more😊.
