Apparently, it is named after Asahi rice and the toji's name.
Warmed.
Umami and spiciness.
Slightly acidic and full-bodied, with a mildly lingering umami.
2022BY.
Deep spiciness and umami, with a slow build up from the beginning to the mid-part of the bottle.
It is fresh and lingers gently until the aftertaste.
Spicy Classic
Aroma reminiscent of a signet pen and herbs. A crisp, sweet and sour taste comes from a clean mouthfeel. In the second half, the spiciness and flavor comes through and the wine is sharp and clean.
The overall impression is somewhat classic. The freshness and umami contrasts are impressive.
★★★★★
This is the last of a series of souvenirs from Okayama.
It is a strong one. It has too much peculiarity! It smells and tastes like barley shochu at best.
It is a kind I have never had before. Unfortunately, it did not suit my palate.
The owner told us that we had brought something austere.
As he said, it is a mature and calm sake that he recommends, and we enjoyed it calmly with a strong sense of rice flavor.
