Tsukibotan is the reason I fell in love with Tosa sake.
I buy it whenever I see it.
The rising aroma is slightly fruity.
In the mouth, one senses a strong sense of rice rather than fruity notes.
There is not much sweetness, but there is a firm umami of rice and a slightly hidden acidity.
There is also a strong alcohol taste, giving it a robust impression.
From the mid-palate, the spiciness comes out.
The end is sharp and light.
The later it gets, the more smooth and light it feels.
When heated, it becomes even more delicious with a little sweetness and fullness.
