This sake is made with TOSA deep sea yeast. The price is a little over 1000 yen, which I appreciate. The aroma that comes up is a fruity Muscat-like scent. The aroma is similar to that of the Bunkajins I drank before. When you put it in your mouth, you can also taste a Cemedine-like flavor. Then, there is a solid rice flavor. I feel that Bunkajins have a thicker umami than other sakes from Kochi Prefecture. The sweetness and sourness can be felt in the back of the bottle, but the spiciness is clearly felt from the middle of the bottle. Bitterness also comes out. The sharpness is good. The taste is typical of Bunkajins. I don't know what the characteristics of the deep-sea yeast are, but it's delicious, so no problem. Taste level 88 points
