ワカ太Today, February 1, is our 16th wedding anniversary ❤️ We went home with a meeting to prepare each other what we wanted to eat and make it a delicious and happy time. I bought horse mackerel sashimi and boiled mackerel. I am already ready to drink sake. The husband brought home yellowtail sashimi, oysters on the half shell, and a cake. My daughter made soup and stuffed green peppers with potato salad on her way home from school. Of course, we paired it with Mimuro cedar wood vat Bodhi Hashiwado ✨because it was our anniversary 🎉. This is the most amazing sake😍I've never had such a beautiful sake ✨. It's delicious the moment you put it in your mouth, and yet it's so refreshingly clean and crisp, it's just quintessential. Not only is it beautiful, but it also has a complex flavor due to the wooden barrel brewing process. The top aroma is a mild melon. No, this coolness may be the main attraction. As time goes by and it opens up a bit, it becomes, hmmm...? Shinsei? I'm not sure, but it's super good again 😋. This was indeed a great sake ✨.

ワカ太This is an ICHIHAKUSUISENSEI KIJYOZAKE that was included in Sukumasa's first sale set the other day. It has a gassy, rich, elegant sweetness, and a juicy, light nigori taste. Delicious 😋💕. However, it could have been a bit drier for our chirashi sushi today. It is a beautiful sake that should be drunk completely on its own: ❤️

ワカ太I read that active nigori is absolutely delicious is my unwavering definition, and this purple space was definitely delicious 😋💕. It is a sparkling wine made from 100% "Gohyakumangoku". You can feel the refreshing acidity and juicy, beautiful sweetness that Purple Air has to offer in between the shwash 😆💕. So delicious 😋. And the horse sashimi my friend from Tokyo brought was too delicious. They go well together💕.

ワカ太When I went to Himeji to buy oysters, I stopped by Teramura and stocked up on some great sake. I like Teramura because the lady at Teramura is so friendly and has a great smile. ❤️ At Teramura, she recommended Takezumi, a sake from Hyogo. I'm not sure if it's only for Hyogo or Teramura since they said it's only available here, but I bought it because of the cute label👍😃. Taste is nigori dry and shuwa shuwa. It's as dry as the Boshimaya active nigori I drank before, but it has a little acidity and is easy to drink. Delicious 😋💕It was so good, I drank it right up 💦. The third picture is the dashi stock sold at Teramura. It's the one that was so delicious💕.

ワカ太The last of the other sake breweries is Takachiyo zodiac label 🐲. I'm a sucker for zodiac labels, and I'm tempted to get my hands on a lot of them if I think they're only available now 💦. First of all, Takachiyo has a cute label. It's covered by a cat 🥹 with the zodiac sign. And then a sip. Mild aroma 😆. No, the 3 cups so far are just gorgeous 😆 ⁉️ The freshness of the raw sake behind the gentleness is also there, and the unique rice flavor of Takachiyo is coming through well. ❣️ This is what Takachiyo is all about, I thought. It's not flashy, but it's good, and that's what the zodiac label was for😊After all, "Takachiyo" and "delicious" are synonyms: ❤️

ワカ太Next is nirvana tortoise. This is 500 yen for other places' sake 😱. This is a junmai-shu with a so-called low-polishing ratio of 88%. But it doesn't have that feeling at all, if anything it has an elegant finish ✨It still has the body or somewhat guttural feeling that only low-polishing can give, but it is held together by the acidity that is typical of Shinmasa, which is unique 😋 Oh, it's delicious ❤️

ワカ太The second bottle of sake elsewhere is a zodiac label for Tasake, which I couldn't get for home drinking 😆💕. Every year Tasake's zodiac sign label looks gorgeous or like the embroidery on the back of a scajan....... It's cool, so no problem 😅 But that aside, here's a sip. No lie⁉️ if it's just the first sip, it's so perfect that even the Jyushiyo I just had is faint ✨. Fresh green apple and LaFrance nuances. Chilli, delicate acidity and soft sweet umami. The aftertaste is refreshingly bitter and moderately sour. A light sharpness closed it out 😋💕. Great taste. Quintessential 🥹.

As soon as bouken-san told me about the first lineup of my beloved sake brewery, my switch flipped from work mode to closing mode, so I invited my husband who was still on his New Year's vacation and jumped on the train to Tennoji after work😅. Because it's 700 yen for Jyushiyo ⁉️ and 500 yen for Tasyu zodiac label ⁉️ I called in advance and was told that the restaurant had been full since it opened, but when I got there, I was lucky to find a table open ✌️ Jyushidai is available at 、、、、、、 and ❣️. I ordered it without hesitation❤️ As expected of Jyushidai, not only the aroma, but also the atmosphere it creates is spectacular💕. The taste is mellow. It has a soft mouthfeel, a mild sweetness, and a savory, concentrated rice flavor. The sharp acidity adds a bitter aftertaste like citrus peel. But this bitterness is also pleasant ❤️😋 It was too good 😂It was a wonderful time at the beginning of the year. Thank you bouken for teaching me 😭.

ワカ太Well, I had prepared a limited brew of Hiryu🟥 from Shinzawa Shuzo, which has Hakurakusei. After all, we should drink some local sake to start the New Year off right. ‼️ This Hiryu was a sake I had when I was just about to get into sake and it was unquestionably delicious. My first "Shu" had the clear, light mouthfeel characteristic of Hiryu. The aroma is a modest apple-like ginjo aroma. It spread quickly and instantly took its place in the New Year and disappeared 🥹. The taste is just as refreshing, acidic and sharp. It was a perfect food sake, the kind of finish that Shinzawa-san is already good at 😋💕.

ワカ太Next up was a bottle of Shichibon-yari brought in by a cousin of my husband's. A bottle from a sake lover who always accompanies us at sake events😄. The freshly pressed Shichibonshuari has a new sake-like freshness, umami and acidity from the rice (Tamakae), and a youthful sprout-like aroma. I had the impression that Shichibonshari was a bit heavier on its own, but it's totally different ‼️, it's just so easy to drink 😳 Delicious ‼️

ワカ太The second bottle for the new year is a zodiac label of two hares. I was attracted by this dragon and rabbit and had to get my hands on it😍. I thought Ni-Rabbit was a representative of sweet and sour, but this one seemed a bit dry to me. Still, it has a sense of balance that is typical of Ni-Rabbit, with a touch of sweetness, but also a little more assertive and refreshing as it goes down your throat. It's delicious after all 😋💕

I sincerely hope that those who suffered from the disaster along the Sea of Japan coast and those who were affected by the unexpected accident will be restored to normal life as soon as possible. New Year's Day happened while I was walking to visit my husband's parents' house. Of course, I was on foot so that I could enjoy a good drink 👣 There was a lot of talk about Osaka being shaken as well, but I only barely noticed it when I heard the news on my cell phone 💦. I am such a pathetic person, but I will do my best to support the victims from what I can do. ‼️ The first one over New Year's Eve was Shinshu Kamerei, a fire-brewed sake. It is light in mouthfeel, but the sweetness and umami come in balance, and it tingles a little. As the temperature loosens up, the taste opens up and it may become a little heavier. This is also the umami of rice. We start 2024 with an elegant sake 😊.

ワカ太Now for the last sake of the year, Asahi Taka🦅! I happened to come across this one on my summer trip from Miyagi to Yamagata✨. After all, Yamagata has nothing but treasures. ❣️ As soon as the bottle is opened, the aroma is unmistakably gorgeous. The first sip is juicy like a grape 🍇 and it's absolutely delicious 😍The hexagonal shape of the flavor chart is all that you can find on it. On the flavor chart, it's all balanced and full. No, it's not heavy, so I guess that's the only dent. This is a good one to drink at home. It's the best 👍💕 Thanks to everyone at Sake-no-Wa, I was able to enjoy a delicious drink this year. This year for Christmas, we opened the Earth 😆👍👍Snow from Akabu was unavailable, and we didn't win the lottery for No.6 Xmas, so this was our family's decision 🤔 that this was the only way to go. As it turns out, I like Earth a lot. As the label on the back says, it tastes like citrus and green apple and it's really delicious, but the unique aroma of the wooden vat comes at the end and leaves a strange impression. Interesting ‼️ Nice Christmas 🤶🎄.

ワカ太I wanted to taste Kaze no Mori again after seeing a TV special on the Aburacho Brewery. I wanted to taste Kaze no Mori again after seeing it featured on TV. The new ALPHA 1 has 14% alcohol by volume. I was impressed that he talked about Bodhidashi in great detail. Now, open the bottle. After the fresh fizziness that is typical of Kaze no Mori, a banana or melon appears. I wonder if this acidity is from the Bodai yeast. ⁉️ I drank the Kaze no Mori again and found it to be a well-balanced and delicious sake 💕💕.

ワカ太This is what I drank before. Our neighbors came over to share the beef tongue they got from Furusato tax payment 😋 Our family is in charge of the sake and BBQ table. We selected S.Tokyo by Matsumidori because it was rated as a good match for the meat. This sake is the only sake in Japan that uses a fantastic yeast that is the second oldest yeast in existence. I drank it without knowing any of the deep and lengthy information about it, but it was really delicious 🩷😋🩷. The sweetness is elegant and the acidity is refreshing. The aroma and flavor make you think that this is what fruity means. It was so good that I couldn't help but say "Yum" 😊. Of course, it went great with beef tongue 👍✨and with grilled green onions and simple vegetables 😋.

ワカ太Rafa-san gave this Boshimaya to Sake-no-Wawa before. Just as I was thinking about applying to my husband for a purchase request because I was curious about the Orikagarami dry sake, he bought it even though I haven't said anything yet😳. This is the sincerest ⁉️ With Shinshu Kamerei on the side there. Now, a super dry orikara. The aroma is, oh, melon-like‼️ drink it and it has a freshness that is typical of origara-mi. Of course, the base is super dry. The spiciness is in contrast to the sweetness, and everything is washed away... I like this one. ❤️

ワカ太Chrysanthemum festival in cold chrysanthemum next, Kenaiyama: ❤️ This Kenaiyama is a very rare rice used only by two breweries in Japan, Sharaku's Miyazumi Meizumi and Kangiku Meizumi. The aroma is sweet. More mature aroma than Hoshikai. I don't know if this is called elegant or not. ⁉️ The taste is also sweet and elegant, which is typical of Aizan. It also has a refreshing feeling due to the fire-roasting. Delicious 🩷. I've listed 3 kangiku, each sweet and delicious, each flavor, of course, but they are all delicious and quintessential ✨.

ワカ太Another cold chrysanthemum. This time it is Hoshikai. It's a summer sake, but enjoyed in winter. I just couldn't get my hands on it because it was a waste 💦. The aroma is gorgeous ‼️. But when you drink it, it's refreshing. It is indeed a summer sake. It has sweetness and umami, but finishes crisp and refreshing 😄💕.

ワカ太One more day and this year will be over. I will try my best to make this year's sake this year under the slogan. Now, Kangiku. It's definitely a delicious one. Because it's nigori, fizzy, and jun Dai ✨. The sweetness and deliciousness that you imagine when you hear the word "Kangiku" first spreads in your mouth. Perhaps it is because of the nigori (bitterness), but the bitterness comes at the end and brings the whole thing together. It's still delicious 😋. Ace-san was reviewing the taste change until the 3rd day, but I was so overcome with desire that I drank it all up 💦I noticed it was gone 🩷, it was such a delicious Hakuginkai 🩷.
