Light amber color with reddish tints. Lively acidity. A dryness, iron, grape sweet bitterness, creaminess, and cedar aroma. Vigorous, fresh, fruity and complex.

Gizaemon is sweet and fruity, Hachibei sake has a strong taste of rice, Takijiman is dry but has a crisp and clean aftertaste, and Mie no Kanmei is light but has a strong acidity😇.
Each of them tasted completely different from the other, but they were delicious sakes with a strong individuality 😀.

A refreshing cod stew and "Gizaemon NOUVEAU" from Wakabisu Shuzo. I am familiar with this sake as it is used in Kikyouya Orii's Japanese confectionery "Ginsen".
This is the first sake brewed at the newly renovated brewery last fall.
It is said that "easy-drinking" junmai sake is good, but this sake is easy to drink and has the character of rice (kami no ho), both of which can be enjoyed.

I haven't had this sake since I used to live in Mie.
It doesn't have a ginjo feel at all, but it has a robust flavor and can be served cold or warmed, so it's not bad.
