This is everyone's favorite Koji Sanbai Masozo sake Hi-iri.
The aroma is sour and lemongrass-like. The sourness in the first sip has an impact, but the overall balance is maintained and it is not simply sour, but combined with the sweetness of the rice, it has depth and a three-dimensional quality, and it naturally slurps and slurps in an endless loop ♾️😋🐴.

At the beginning of this year, we had a bottle of Yamahai Junmai Namaishu (pure Yamahai Junmai sake) Shoumon, and this is the Junmai Hi-iri version.
The aroma is a light greenish cucumber and herbs. The taste is smooth with a pleasant acidity, followed by a slightly soft rice sweetness and flavor, and finally a firm bitter dryness.
It is a perfect embodiment of a modern classic with a nice balance of flavors that I like very much 😋😋😋😋.
