Following the standard sake the other day, this is my personal favorite koji triple brewed sake 🍶.
From the standing aroma, soft and gentle cucumber, muscat, and herb like No.6. The mouthfeel is like potassium, but with the edge of acidity of koji sanbai, it is delicious as expected 😋😋😋😋 The swelling flavor and dryness of yamahai in the latter half is also perfect and it will be empty in a second 😆.
Slightly spicy on the tongue.
Soft and sharp sweetness.
A moderate acidity comes in and is broken by bitterness.
Very clean with no cloying taste.
It is not like a junmai sake.
Personally, I want more umami.
I also want more miscellaneous flavors.
The Takumon gate of la jomon that I was expecting.
It exceeded my imagination.
Sweetness, umami, bitterness, and acidity,
The balance is outstanding.
It is so easy to drink and you can drink it as much as you want.
I could drink it as much as I want.
I should have bought another bottle.

Gorgeous aroma of green apple with a hint of acidity 💐💐.
Very fresh on the palate, with a mellow, acidic flavor that spreads out and disappears quickly without trailing off 🤤😭This is Junmai sake...☺️

I thought it would be quite sour since it was made with three times the amount of koji, but it was a sake with more acidity than I had imagined, and I was able to drink it in gulps!
Tonight, the first day after the New Year's vacations, I feel like I'm starting off on a fairly low note, but I want to keep my spirits high (⤴️), so I opened this bottle for the first time in a while 💁.

We were lucky enough to get the first bottle of the new brewing year, so we're going to open the bottle as per the ironclad rule that you should drink your sake as soon as possible 🤗.
The aroma is gentle, as you would expect from yeast #6, with refreshing notes of pear, muscatel fruit, citrus and herbs 👍 The taste is also simple, with a hint of citrus and herbs.
The taste is also simple but has a deep acidity and an edge of bitterness and spiciness that is delicious 😋😋😋😋.
I have the impression that the acidity and bitterness are clashing a bit since it is quite cold, but I expect it to harmonize and become more delicious after tomorrow, so I'm looking forward to its potential 😊.
Last but not least is La Jomon😁.
It's a rare sake with three times more koji 😊.
The aroma is fruity, fresh, rich and deliciously sweet✨.
But it also has a strong acidity that makes it quite an interesting sake 😁.
