Makihata" Junmai Ginjo "Gin" brewed by Takachiyo Shuzo, a brewery located at the foot of Mount Makiki, one of Japan's 100 most famous mountains.
The rice is made from 53% flat polished rice produced locally in Minami-uonuma. The rice is carefully treated using a micro-bubble rinse and brewed with an emphasis on sharpness and a clean taste, making it a junmai ginjo sake for use as a mid-meal drink.
It is a junmai ginjo-shu for the "in-between meal" drinker.
Gentle and gentle ginjo aroma. It has a soft aroma.
The mellow aroma spreads softly and gently from the clean mouthfeel. A clear spiciness spreads later, creating a sharp atmosphere. The crisp and well-polished taste is pleasant, and the aftertaste is a refreshingly light and refreshing gem.

This sake was purchased at Nagaoka station during a business trip to Niigata. The word "limited" is weak.
The aroma is rather subdued.
It is fruity with a gaseous taste. Sourness and bitterness predominate, with little sweetness.
It is a dry sake with a silky mouthfeel and a clean aftertaste.
I brought it to a sake party and it was well received by those who like dry sake.
A bottle during my trip to Niigata.
Yesterday, I had decided to carefully drink a bottle of Jun purchased in Niigata over two nights, but I ended up buying it and drinking it. I had heard of Takachiyo, but I heard that Ipponshime is only available at 20 stores in Niigata Prefecture, so being a meek person, I bought it. I was surprised when I drank it. It had a refreshing sweetness and richness that I had never tasted before. Very gorgeous flavor. It is insanely delicious! I would recommend this product to anyone who loves sake. I got drunk, so I will drink the rest tomorrow.

Basically light and dry, but you can also taste the umami of the rice.

I don't remember the taste. (I don't remember what it tastes like.)
It seems to be brewed with Miyamanishiki and Ipponshime.
Takachidai Shuzo doesn't use Gohyakumangoku or Koshitanrei, so I personally don't care for it (laugh), but I love their Junmai Ginjo, which is not a Makiki sezonaru, because it is a very tasty, light sake with a great rice flavor.
