Yamama Junmai Ginjo 18 Nakagori Direct-fermented Genshu
I wanted to drink this sake. It is called Yamama. Like Sohno-Kangiku and Eiko-Fuji, Yamama is not available all year round, so you have to buy it when you find it. The aroma is gorgeous. In the mouth, it tastes beautiful and elegant, as is typical of Niigata sake. Rather than emphasizing sweetness and acidity, it is well-balanced and you can taste the umami of the rice. It is better to drink it with sashimi than on its own.
