This is an unfiltered, unfiltered special junmai sake with 13% alcohol by volume.
Even if you input the number (alcohol content) first, it is hard to believe that it is 13 degrees.
If you drank it without the information that it was low alcohol, you would never think so 😊.
The aroma is a mixture of floral green melon and Omachi-like strength.
The umami spreads across the palate in a flash.
The bitter, astringent and dry finish.
It seems that this is the last Yumachi,
This is Yamama-san here tonight.
We had gotten it out of the prefecture during the prohibition period 😄.
The aroma is fruity.
The aroma is fruity, but there is almost no sweetness. The main taste is umami, with just enough acidity and bitterness to not interfere with the main taste, and then the spiciness of the kara-kara finishes it off 🍶.
The gap between the aroma and taste is quite interesting 😊.
I served it with some bonito sakataki I had bought in Kyushu 😙.
This sake is read as "YANMA" in the mountains. The label is on the back, so you can't read it at all. There is no tag on the label, but the sake is packed directly in the bottle.
It has a fresh and crisp aroma, a juicy sweet and sour taste that is not too strong, and a certain umami flavor. The flavor is easy to pair with food, and when it returns to room temperature, the sweetness comes out, which is also nice.
Yamama is a brand often seen here at Fukurokuju.
I guess it's a bit expensive since it's a special pure sake.
That's right!
The other one in the last drink comparison is also dry, so let's enjoy a crisp dry one to finish off the meal 😌.
Knowledge
Rice : Gohyakumangoku, Koiibuki
Rice polishing ratio : 60
Alcohol content : 16
Unlike the ORI-ORI that I drank before, there is no fizzy feeling at all.
It is light in alcohol (13%), but when you put it in your mouth, you can feel the alcohol. It also feels somewhat heavy in the mouth. I am sorry if you like it, but Yamama-san may not be right for you...
