This is the first time for me to taste this one, surprisingly acidic.

This is my first sake from Shimane 🍶.
According to the website, no filtration, at most one time fire-fermentation, stored at -5℃ (distributors are also required to keep the temperature at -5℃😳), no blending, no sales except to distributors.
We always want to be a sake with the style of a champion.
This is a very hard-core sake brewery!

As a lover of sweet and tasty sake, this should not be my favorite flavor,
But for some reason, I don't find it to be my weak point at all.
It is a strange taste that makes you keep drinking it as if you were bowing down before the king.

The aroma is as follows.

-Astringency: 3 at the beginning → 2 lingering
-Rice flavor: 0 at the beginning → 0 lingering 0

(5 is the maximum) ぺっほA new sensation! It looks hot, not spicy, not sweet. The aroma reveals that it is by bitterness and minerality. And it has a sharpness that you don't even notice! On the first day, it was very fizzy and dry, even pungent; after the second day, the usual muscat aroma came through, and the last glass on the fourth day had a nice harmony of sweetness and acidity, thanks to the oli that had accumulated.
I have never been a fan of sake injected with carbon dioxide gas, as it seems a bit artificial compared to sake with stronger gas or secondary fermentation in the bottle, but I really enjoyed the changes that could be felt over time.
