I had an image that Aizan somehow goes well with cappuccinos and sweet sake, but this sake, contrary to that image, is quite dry and has a great sharpness! It is super dry! And the bitterness is strong within the range of elegance! And the bitterness is as strong as it is elegant! LOL!
As the temperature rises a little, the unique flavor of this sake becomes apparent... This is very tasty!
If you drink it in a wine glass or tin, I think the dryness and vigor of the sake will stand out too much, so I personally recommend drinking it in an inokuchi (cup) or ceramic cup. The crispness of the outline is more rounded.
It is also good to drink it warm. In fact, it shows its potential more when drunk warm. The spiciness is softened and the umami gently expands. The slight rummy taste is still present, and the balance is at its peak.
I would definitely pair this with Chinese food! After all, it is Szechuan bean curd, isn't it? I can't get enough of it!

I have been interested in this brand for a long time, but never had a chance to drink it. I was also interested in the Good Times series because of the cute girl on the label, but I missed out on it in the winter and was finally able to buy it as a spring sake!
The taste is just as cute as the cute label, and the sweetness, flavor, and acidity are well balanced in this spring sake. I have an image of spring sake as being half-baked and relatively undrinkable, but lately I've been really liking it.
I had the impression that it was fresh and people who like it would like it, but at worst, the taste was still a bit rough. But by the third day, it all comes together and is super tasty!
The peach aroma and the sweet and sour taste are easy to understand, and the gentle mouthfeel on the third day is also very good, as if it represents the fruity spring weather.
The taste from the third day onward, which was quite different from the first two days, was delicious and surprising in a good way! I thought it went well with the lively and seasonal flavor of spring cabbage and early summer vegetables such as okra. It was not bad with hamburger steak, but I think it would be better with roast beef.
This is the first Tazake NEW YEAR bottle since 2021. I wondered if it was really sold since I haven't seen it anywhere since then, but I found it!

I don't know about you, but I brought it to drink after work with people at my office to thank my junior staff for their hard work!

It's so good! I really like this one! Especially when it's warmed up, it's so crisp and flavorful! It has a grape-like aroma and a bitter taste similar to astringency, making it almost like wine at times. It also has a fruity and exquisite flavor that can only be achieved by a good brew that has extracted the best parts of grains.
Because of this deliciousness, it is hard to tell if it is dry or not, but I believe that the term "dry" does not refer to the taste per se, but rather to a comparison or trend, so if the brewery says it is dry, it is dry. If the brewery says it is dry, then it is dry. It is much softer than the general image of dry, and it seems to be a dry wine that can be enjoyed by people of all ages and both sexes.
Is it...dry? But maybe it is still dry. This is the kind of sake that makes you ask and answer such questions.
Shiraten was good, and this dry sake is also quite good! I thought that Tenbi is very good at making fruity dry sakes! I was so impressed with the white and red that I could drink them indefinitely, so I decided to continue drinking them in the future.

I'd like to try some Oroku, different stars and different brands, but it's a little difficult to find it in my neighborhood 😅.
I drank this sake last year or the year before. I remember it was very tasty. I wonder how different it will be this year from the last time I drank it.
On the first day, it had a vigorous mouthfeel with a slight effervescence. The body is more solid than the alcohol content, and this is probably what surprised me the most. Was it like this last time? It seems to me that the thickness of the flavor is due to the origami. They must be making this wine very well.
The aroma of vinegared banana and magic ink is very pleasant, and compared to other sakes, it is wonderful that it is not harsh in contrast to its strength. It is the same when you drink it, and even though it is a vinegar-iso-ish sake, it is neither too harsh nor too mellow, and it has a very exquisite saltiness that makes it unique in its details.
Still, if I had to pick a similar sake, it would be "Abe". It's delicious...I mean, I like it.
From the second day, it gives the impression of being a more solidly structured sake, but it also has the lightness of a 13% sake, which is a wonderful quality.
It was tighter than the last time I drank it, but I felt it had more character than the last time. It is as delicious as ever!
When I went to buy a certain sake that I had requested to reserve, I found a tasting event at Choshu Shuzo, which is famous for Amami. Normally, I tend to skip tastings, and Tenbi is not one of my favorite sakes, but something about it made me think and I was drawn to try it. He had never had a Hakuten before...only Momoten and Aoten. I tasted this one and was surprised at how good it tasted. Yes, I bought it!
Sake lees? Koji? It has a wonderful amazake-like aroma. I remember a few years ago, Ona's first squeezed sake had this kind of nuance... I hope they bring that back lol.
It has a gentle and beautiful sake quality with little miscellaneous taste and low acidity. It is a good sake to serve as a food sake. It has a fruity overtone and a sweet umami flavor of rice, like the honey of a delicious flower. It is a good match for light foods such as fish and vegetables. It would go well with meat as long as the seasoning is not too strong.
I have to admit that I had been avoiding Matsumoto Sake Brewery, famous for Sawaya Matsumoto, because of the resignation of its master brewer. But the brewery overcame that and continues to make sake that is as good as ever. I was very impressed!

I knew the name Kamo Kanehide, knew they had an interesting product, and knew that various famous liquor stores carried it, but I never had a chance to drink or buy it. This time I happened to see a rumor about it on Youtube and thought I would like to try it, so I bought it as soon as I saw it!
It has an interesting aroma of muscat and banana, which is refreshing but with a hint of alcohol.
There is a slight fizzy feeling when you drink it. Is this fire-infused? LOL It has a freshness to it! But it also has a calmness...amazing!
The fresh aroma and light mouthfeel are typical of 13%. The sweetness, umami, and acidity are very well balanced. Not only is it light, but it also has a good amount of bitterness, so it has depth. However, the bitterness is not so much that it bothers me, so it is basically smooth.
It has the quality of a standard hi-iru sake, but it has a certain amount of roundness without the harshness of a raw sake. It is fruity, but it is not just a sweet sake.
The price is moderate, so if you are in need of a good sake, just drink this one.

A new sake from an elegant crop. It has a gorgeous impression and a full-bodied sweet taste, but thanks to the fruity acidity, the sweetness is not very assertive. It is a little short of the new Saku wines of recent years. However, the flavor often takes over after the bottle is opened, so we look forward to more to come!
