Comparing Yamama and Oroku is fateful✨Both are delicious sakes with an exquisite bitterness characterized by minerality. Yamama has a more subtle sweet aroma and flavor, and the bitterness gives it a nice kick 😋.

I was attracted to it by the advertising of "juicy, umakuchi Yamama, which is not like Niigata sake".

It was a delicious sake and I was browsing the brewery's website and it caught my eye, Oni Yamama 👹.
And there are red, blue and yellow 😮.

When I visited a famous liquor store, I happened to see the brand introduced in a video and bought it without a second thought. I was in Joetsu, Niigata, and the name is Yamama.
But that aside, here we go! It has a very pleasant aroma, almost rose-like in its gorgeousness. After the smooth and unctuous brewing water, the sake has a refreshing acidity, which is typical of unfiltered, unpasteurized sake, and a lot of umami, making it a calm sake. The end result is an easy-drinking sake with a sharpness that is typical of Echigo-Tsumari. My mother, who drank it with me, also highly praised Yamama, so please give it a try. This nigorizake is made by pumping out the fermenting unrefined sake and bottling it immediately after rough straining.
It has a rich, creamy flavor with a freshness that makes an impact.
This is the first time I drink Yamama at home.
Since it was so special, I had it in a glass for ginjo.
It has a gorgeous sweet aroma, but when you put it in your mouth, the sweetness is more subdued and elegant than you might expect.
The mild sweetness is accompanied by a slight bitterness, and the wine has a good sharpness, making it a perfect match for meals.
I would like to pair it with Japanese food that makes the most of the flavors of the ingredients, which is a special feature of this time of year.

I had been curious about this sake for a long time, but could not find it, so I finally had a chance to try it.
This sake is made by Niigata Daiichi Sake Brewery, and is called Yamama (山間) to compete with Kubota (久保田), a major sake brewer in Niigata. It makes sense that in addition to Yamama, there is also Yamabo and Maabo.
Ori-Ori Rock is an active nigori sake, also known as an explosive type, among the Yamama brands. Although not shown in the photo, there was a warning on the colored necklace that said to be careful when opening the bottle and to use an ice pick to vent the bottle before opening it.
I opened the bottle normally over a bowl while it was cooled to below zero, just to be sure, because if I punctured the stopper, I would have to drink it all. Although gas blew out, the bottle did not overflow and I was able to open it safely.
The top clearings tasted bitter and grapefruit-like. When cloudy, the graininess of the rice is strongly felt and it is just like drinking rice juice. The taste was clean and crisp with a strong sense of gas, and I couldn't help but drink more than half of the bottle because it was so easy to drink without feeling the 17% alcohol content.
