It pulls away with a rummy aroma and a banana-like sweetness. I think the fact that they use 901 yeast gives it a good fruitiness👍. This is one of the bottles in the March Sumi no Sake Shop hanpukai. Originally released in early fall as a draft, they had it specially unfiltered and released early. It was rated the best new sake of 5BY by the National Taxation Bureau's appraiser, so they decided to keep it ✨. It was delicious with the fruity flavor of Yamadanishiki from Yoshikawa in the Special A district, but with a tight finish 🍶. 720 mL ¥ 1,870

Ultra slightly carbonated, slightly classical aroma and sweet like Wasanbon, flowing with a subtle bitterness. Maybe a little bit of nuance similar to 6-row yeast 💡. On the second day, the carbonation settled down and the sweetness increased: ⤴️ I want to drink Banshu Issen regularly🍶. The spring sake was definitely one to gulp down ✨. 720 mL ¥ 1,650

We are finally in April🌸. The first one is raw golden chun chun 🐤. This year I was lucky enough to find a sale at a mystery cheese shop and was able to purchase👍 It flows with a melon-like aroma and sweetness, with a slight lactic acidity. Tastes more fruity and clearer than the others, no wonder it's the most popular ✨. 720 mL

Sannomiya Elevated Popular Izakaya InoueReport 3️⃣ Lastly, I chose Tosatsuru, another first for me. It is junmai (pure rice), so you can feel the umami of rice in your mouth, but it has a smooth aftertaste and is easy to drink 💨. Sannomiya elevated public liquor store Inoue report 2️⃣ The next sake I chose from a selection of about 30 different cups was Kozutsuru's Yamahai. It is often seen in Hyogo Prefecture, but this is the first time to drink it👍. As it is labeled as a natural lactobacillus fermented sake, it was a little astringent and hard at first, but later the umami and sweetness spread out. I am also interested in the pink label Junmai Ginjo 💡.

Sannomiya elevated public liquor store Inoue report 1️⃣ We revisited Inoue under the elevated JR Sannomiya station, which we visited last November and has a large selection of one-cup drinks from all over Japan. Except for the one-cups, they had Yonekaku (rice cranes), so I ordered one cup first 🍶. It's labeled as "super spicy" but the umami flavor spreads on the tongue and goes right through ✨. I drank it in one gulp and went to the next one right away💨.

It smells like lemon and lactic acid, and flows smoothly 🍋. Mild on the palate, no bitterness. More sweetness on the second day. A bottle from the February hanpukai at Sumino Sake Shop. I have seen sakes made with Princess Michiko, but this is the first time I have purchased it🌹. I don't often buy sake in a box myself, so this month's hanpukai was a great opportunity👍. I personally like the gentle (natural) sweetness of hana-yeast sake in general, so I would like to try other brands when I have a chance 💡 (although they are expensive and I can't afford to buy them...) 720 mL ¥ 3,740

It has a grape-like aroma, a thick, caramel-like astringency, and a firm umami taste. This is one of the bottles in Sumino Sake Shop's February hanpukai. It was selected in a hurry after the earthquake in January. It is a limited-edition, unaged Yamahai Junmai sake called "Shiro-tengu". I could certainly taste the freshness and nuance of white wine ✨. We enjoyed it slowly and gratefully. 720 mL ¥ 2,420

Muscat-like aroma and sweetness. A touch of bitterness at the end, but it becomes less noticeable after drinking all the way through. Machida brewery, which I never bought because it is always in the mysterious cheese shop. I bought it because of the power words "nao kumi", "nigori", and "Miyamanishiki". As expected, the taste was to my liking, and I drank it in gulps and immediately opened a bottle 🍾. I was so grateful for this quality at this price 🤲! 720 mL ¥ 1,540

The flavor is also gooey and pulls away with bitterness. When the temperature rises, the bitterness may be strong. After the Sake-no-Wa Kansai New Year's party, bouken-san and I stopped by our usual liquor store, and before we knew it, we had a bottle of this 👍. Tamakashiwa was a brand new to me and I didn't know it was Gifu sake💦. It tasted better when served cold with a quick drink ✨. 720 mL ¥ 1,680

It is super slightly carbonated, smells like muscat and flows smoothly, then banana and aroma 🍌. I know Eikofuji is delicious, but I always refrained from buying it because of too much information on the label, but this time I popped it along with Sanzu🔘. The entry is cleaner than expected, with a sweetness and light bitterness later on. I had a delicious image of it from Asano-san's guest sake last year, so I decided to drink it at home this year 💡. While in the mouth, the pineapple aroma spreads and once you drink it, it leaves a bit of bitterness 🍍. The aroma is quite high, so it would be better to drink it quickly💡. With the sashimi, the bitterness disappears and the pineapple flavor increases 🐟. One of the bottles in Sumino Sake Shop's September distribution 🍶. I've been saving this bottle because I couldn't open it for a while, but I had a big job waiting for me this week, so I decided to open it to get myself in the mood 🍾. Dairy and Yeast March Corner Report: 4️⃣ My brothers and I decided to drink it last because they said it was "a very rich tasting noble brew" 🍶. If this bottle was suddenly served to me, I would have mistaken it for wine 🌾🌾. They also serve sparkling sake in the summer 💡. The aroma of apple and sweetness is very strong 🍎. I thought this tasted absolutely delicious to drink with meat dishes 🍖. After 4 drinks, we called it a night. I left Nemuchi-san and went home quietly, except for bouken-san and a liquor store in Motomachi 🚈.

Dairy and Yeast March Corner Report: 3️⃣ I've been through the pure blue brand because it's always on the shelf, but I decided to take the opportunity to try it 💡. Expectations are high as they use Aizan from Kasai city ⤴️ The sweetness is felt in the mouth at first, but it soon recedes with a hint of sourness. The bitterness peculiar to Aizan is not felt too much, but it is not too sweet, and it can be drunk without peculiarity. After that, my brothers were drinking Junqing too👍.

Dairy and Yeast March Corner Report: 2️⃣ Next, I decided to have the sake that my brothers and I chose. Nemuchi opened the bottle and we had it fresh ✨. This was the first time I learned that Morinori is a Kakogawa sake 💡. Although it says it is dry, it is a bit schwarzy and also has a sweetness and acidity like a white wine. There are still many brands in Hyogo that I haven't tried 💦.

Dairy and Yeast March Corner Report: 1️⃣ This is a review of the meeting with my brothers (bouken and Nemuchi) at the mysterious cheese shop👍 Nemuchi went there to buy WHITE and they decided to let us drink it for the store 👀. It flows smoothly with a mild acidity and the sweetness of white malted rice. This soft mouthfeel with a hint of white koji sweetness is what makes it so quintessential ✨.

When you take a sip, you can feel the light sweetness, but at the end of the sip, the umami and bitterness of the rice come all at once. When I visited Sumiyoshi at Hakata Station at the end of the year, I happened to see it on the shelf, so I bought it without hesitation👍. It seems to be readily available in Fukuoka, I envy you ❗️ It has a more natural rice flavor than Yamadanishiki and is very drinkable ✨. I'm not sure which one I like better, but I'd probably go for the Hozasu if I'm going to hit the meaty side 💡. 720 mL ¥ 3,390
