Gorgeous ginjo aroma. It has a clean, light and beautiful sweetness. Although it is jungin, the taste is so beautiful that you would think it is daiginjo. This sake is limited to two liquor stores, one in Sakai and the other in Kishiwada. This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔. I wonder if it would be sweeter to drink the alcohol by itself?

OSAKA-JO SAKE SQUARE 2023 It is a very crisp, dry, deep-flavored Ajiginjo. The aroma is subtle. The mellowness is more apparent in junmai sake. This is also a good sake. I drank 8 glasses this time and they were all good! There are so many good sake that I can't keep up with them all! It's a happy scream!

@sakebar Fukuzo This sake is from the same Kobayashi Shuzo Honten as the "Hakata no Mori" I posted a while ago. Mandai must be more famous locally 🤔. It will be pressed on the morning of Risshun 🍶. The aroma on the nose is fruity🍍 and sweet. When you take it into your mouth, it has a deep, mild sweetness and umami that is typical for a draft sake, and it finishes with a slight astringent taste. It was delicious 🍶✨.

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Special Junmai Nigori Nama-zake🍶Kami-no-ho🌾 from Mie Prefecture. Seme smell, fresh✨, a little schwag. Sour and spicy. Mustardy 🙄 according to my wife. When paired with the koji-marinated squid (🦑), it takes the edge off and cozies up to you. The power of koji is amazing 😆. Looks like a new brand to be born in spring 2023. It's a tag-team sake from Kadoden Brewery, which is also known as a metamorphosis of rice, and Hagino Brewery, which is known as one of the best sweet and sour brewers in Miyagi Prefecture. While the heady aroma is modest, the tangy gassiness gives the sake a strong umami presence. The sweetness and acidity typical of Hagino Brewery are also present. It is covered with lees and is very satisfying to drink! It is a dangerous sake with a sharpness that makes it easy to drink. Please don't abuse it. Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.
