ゆーへーOne of the breweries I regularly visit is the Karibaichi Sake Brewery in Sasayama, Tanba.
I stopped by again on my way home from a stay in Tamba Sasayama🚗.
I wish I had gone a little earlier in the new sake season, as it was already in cold storage in June 💡.
It's been about half a year since the new sake, so you can taste a little bit of a thirstiness, and the sweetness of the apricot-like maturity spreads.
Personally, I like apricot flavors, so I took my time with the grilled meat ✨.
720 mL ¥ 1,760 ゆーへーIt has a light texture and goes in easily without much habit.
It is like water, and I think it is a little unsatisfying.
On my way back from a trip to Tanba in October, I stopped by the brewery in Sasayama.
I was able to buy a Junmai Daiginjo for a little less than ¥2,600 because they were offering a ¥-300 discount on all purchases at the kuramoto ✨.
The blue bottle with sparkling 🌙 on the label gives it a luxurious feel and makes you feel like you're drinking something expensive.
Personally, I prefer the Tokujun, which has a more robust rice flavor 💡.

I can still get there from Osaka by train 🚈(I think I'll go by car though lol).
And they make fun cards for you, so you have to go there regularly👍. ゆーへーThe slightly apricot-like aroma and aromatic sweetness is gooey and flows smoothly with a slight bitterness.
The flavor is complex when opened, so as you drink it little by little, the sweetness comes forward and you can enjoy the change in flavor.
Bouken recommended it to me, so I stopped by the brewery on my way back from a visit to Tamba and bought some ✨.
Tamba Sasayama is surprisingly close and I made a fun card so I will go back 💡.

I thought it might swing towards savory, but it's sweeter and more drinkable 💡.
Yes, it feels like a stamp card from a neighborhood independent store and it's so wholesome ✨. boukenThe last of a set of six Shugetsu bottles. Slightly citrusy. Among the 6 bottles, this one is the easiest to drink without any peculiar taste.
After drinking 6 bottles, my impression is that it is not to my taste and the taste is generally subtle.... I would have been happier buying 3 bottles of my favorite quadruple. boukenIt is sweeter than the other Shugetsu wines I've had. It is refreshing and fruity, but a little peculiar. The rice is probably Yamadanishiki.
It is fruity and on the sweet side, but not fruity.
This costs over 1000 yen for 300ml.... boukenAfter a moment of sweetness, spiciness and sourness come at once. The assertiveness is modest, so it may be suitable as a food sake.
I noticed after drinking 4 kinds of sake that I may not like the unique flavor common to all the sake breweries here. boukenThere is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu.
It's definitely better than the first unfiltered draft I opened. boukenQuite a rough type. Cloudy white like makgeolli. When you drink it, the alcohol taste is more pronounced than the sweetness. It is an active nigori, but the sense of liveliness is moderate. The acidity comes towards the end. It has an old-fashioned taste, but it is delicious in its own way.
It may sound negative, but it is really delicious. Too much gusto at first 🤣 but the citrusy aftertaste is also nice.
The fourth one, I thought it was very elaborate, even the original wrapping paper was prepared. I wonder if there is a demand for gifts? boukenAll of them are too high in alcohol content 😱. boukenSpeaking of which, what's up with Mr. Manachy? tkmtsgood morning, bouken!

I was curious about this brewery because I was allowed to have a private drink at a liquor store before.
I bought a set of six 300 ml bottles directly from the brewery. I can go there to buy it, but it is quite expensive for a 4-pack....
I'm guessing it's a high strength sake, so I'm guessing it's a raw sake. Distinctive and unique flavor and fresh taste. It seemed a little more classic in flavor. It has a sweetness, but the overall peculiarity of the taste is bothersome.
It has a strong alkali taste, which is a concern. To be honest, it is subtle.
