I left the sake to the waiter, so I wondered if he had matched it with the grilled chicken thigh (4th photo).
This is a limited edition sake with a hanging mouth made without filtration.
It has a very fruity taste with a clean aftertaste, and although it is unfiltered, it disappears easily.
The mouthfeel is filled with the sweet aroma of sake lees. It is delicious!
Last fall, on the way back from a roadside station in Kyoto for ayu fish catching & barbecue, I stopped by a kiln in Tanba Sasayama. There is a sake brewery near there, and a cold fresh straw! Fresh and spicy impression!

Located in the suburbs, the best time to sample sake in the city is when it is exhibited at events in the city.
It feels similar to Souzake.
It has a slightly candy-red color and a slight aroma of kijo sake.

This one was served cold.
The top aroma is a unique rice aroma like koji mold.
According to Iikoma-san, who came to the sake meeting, it has a brewer's peculiar aroma.
It is not such a strange aroma.
When you put it in your mouth, it has a mild rice flavor with a moderate sweetness.
It is not dry, so it is easy to drink.

Next is Shugetsu's Morning First Shibori from Tanba Sasayama.
It does not have a specific name, so I wonder if this is also a regular sake.
First, it was served cold.
The first aroma is sweet with a hint of acidity.
It has the freshness of new sake in the mouth.
The sweetness is moderate and refreshing.
Next, warmed sake.
The top aroma is the sweet aroma of heated sake.
If you like heated sake, you'll agree with me 😂.
The sweetness expands in the mouth and it warms up beautifully.

I've been looking for this sake on the net but only find it on the hometown tax 🤔.
The Junmai specs are all Special Junmai, so I think this one is Special Honjozo since it has the rice polishing ratio listed 🤔 Asa Shibori should have been around 2000 yen for 4 gos of sake.
Today I had the idea to drive out and buy a bottle of local sake, Shugetsu's Special Junmai. I saw on the shelf at the store that it had won some kind of award for lukewarm sake, so I bought it without hesitation.
I immediately warmed it up to lukewarm. The taste is dry but clean and beautiful.

Purchased at a New Year's Eve tasting at Icoma Sake Shop.
It is slightly fruity and sweet, but the acidity is impressive. I felt I could taste the flavor better when it was closer to room temperature than when it was cold.
The fourth one is a cracker made by the Full Moon Pon company that I purchased at Dairy and Yeast. They sold fennel and rosemary, so I chose the fennel.
The fennel is kneaded into the dough of the full moon pon.
The taste is like unbaked bread, making the most of the ingredients.
I think the fennel aroma is so strong that some drinks will defeat the taste 🤔.
I think it would go well with darker and more flavorful drinks.
I mean, only Kansai people know what "mangetsu pon" means😅.
