After a moment of sweetness, spiciness and sourness come at once. The assertiveness is modest, so it may be suitable as a food sake. I noticed after drinking 4 kinds of sake that I may not like the unique flavor common to all the sake breweries here.

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

The 3rd Bishu Competition 2025 Kansai 5) The booth of Technikan, a company that manufactures a device for making frozen raw sake. We were told that we could compare different types of sake in different states, so we tried some! It was great that the sake we tasted was Shugetsu 😁. Tasted 4 kinds of sake: fast, rapid, slow, and refrigerated. The chilled one was the most delicious 😅. I was told that men usually say so 🙄. Mr. Umaisan said Shunsoku is delicious. I thought Shunsoku was also very good when I drank it again 😇.

It was on sale today and I went to buy it since I was there at the brewery. Last year's was delicious, so I decided to get this year's as well. This year's is almost clear in color and tastes dry. It smells like cemedine. I think last year's sake was better than this year's. I think I need to warm it up to lukewarm (they recommend warming it up or keeping it at room temperature). I've been sober for a week, so it's sinking in.

Purchased at a tasting I had a hard time deciding which one to buy, so I decided to go with the Aruzoe Tsuki no Hyokuro. It seemed the sweetest to me. When I tasted it, I thought it was quite sweet, but I was more impressed by its citrusiness and acidity than its sweetness. I personally prefer it at near room temperature. It seems that Shugetsu Asoe is a special honjozo.

June's Ikoma Tasting was at Shudzuki! I'll skip the ones I bought and the ones I drank in the past, but here's what I picked up! As the name suggests, it is rich and has a gentle sweetness. I think it becomes a little more refreshing when warmed up to lukewarm. Personally, I enjoyed it at room temperature. For some reason, this sake matched well with the Pakistani beans that came with the entrée 🤣.

Three year old aged sake liquor. Newly released while the 10 year old one is also available. It has a slightly higher alcohol content of 18. It has a firm, dry mouthfeel. It is not refreshing, has little sweetness, and is slightly sour. You can also detect a little of the heavy aroma often found in old sake, making it a good value.

First Shugetsu served warm. It has a refreshing mouthfeel. Soft and light with a sweet umami flavor and good sharpness. I left the sake to the waiter, so I wondered if he had matched it with the grilled chicken thigh (4th photo).
